I created and devoured this guac-bean dip in college because it's very cheap, filling, and healthy. When I am low on fiber, this is the perfect snack or meal. Serve with pita or tortilla chips.

1 avocado - peeled, pitted, and mashed
½ (15 ounce) can black beans, drained and rinsed
1 tablespoon lime juice
1 clove garlic, minced, or more to taste
⅓ cup shredded Cheddar cheese
1 pinch sea salt to taste

Steps:

  • Mix avocado, black beans, lime juice, and garlic together in a microwave-safe bowl. Sprinkle with Cheddar cheese.
  • Microwave dip on high until cheese is melted, about 1 minute. Season with sea salt if desired.

1/4 cup Diced Red Onion
1 Jar Picante (Mild or Medium)
1 Can Black Beans (Drained)
2 Medium Avocados (Diced)
1/4 cup Cilantro
1 Tbls Lime Juice
1/2 tsp Cumin
1/2 tsp Garlic Powder
Kosher Salt & Fresh Ground Black Pepper
2 Tbls Tostitos Brand Creamy Southwestern Ranch Dip
Chili Powder
Chopped Green Onion
Shredded Mexican Cheese Blend
Tortilla Chips

Steps:

  • Cook chorizo and ground turkey together. Drain and let cool. Add diced red onion, picante, black beans, diced avocados, cilantro, lime juice, cumin, garlic powder and salt and pepper to taste and mix thoroughly. Garnish with a couple of dollops of Tostitos Brand Creamy Southwestern Ranch Dip, a little chopped green onion, a sprinkle of chili powder and a little shredded Mexican cheese blend. Serve with Tortilla Chips.

6 radishes, chopped
6 scallions or 6 green onions, chopped
1/4 cup cilantro, chopped
2 jalapeno peppers, chopped (I only used one...)
1/3 cup fresh lime juice (~ 2 limes)
1/4 cup olive oil
1/2 teaspoon salt

Steps:

  • Mix all ingredients together. (I let it sit in the fridge overnight to let the flavours blend and have found it tastes a bit better than eating it right away.).
  • Number Of Servings:makes about 3 cups of dip.
  • Preparation Time:depends on if you have a food processor!

Layer with the meat mixture, cheese, salsa and ripe olives. Cover and bake at 350° for 20-25 minutes or until heated through. , Spread guacamole over the top. I tried to save it by making a bigger batch but then that was way too much for a dip. Logic called for a complete change in direction. This is the result. Not bad, not bad at all.

2 tablespoons olive oil
1 lb chorizo sausage (DiB # 12818 is great.)
2 medium onions, chopped

1/4 lb baby carrots, quartered lengthwise
3 cloves garlic, minced
2 fresh mild chiles, charred,skinned,seeded,chopped (Pablano, New Mexico, Anaheim)
1 -3 jalapeno chile, seeded,devained,finely chopped
2 (16 ounce) cans refried black beans
2 (16 ounce) cans black beans, drained,rinsed,drained
1 (6 ounce) can tomato paste
3/4 teaspoon hot sauce, i like cholula or tapatio
3/4 bunch fresh cilantro leaves, chopped
1/2 lb Cotija cheese, crumbled
1/2 cup sharp cheddar cheese, grated
1/2 cup asadero cheese, grated
1/4 bunch cilantro leaf, chopped
1 cup sour cream
1 cup guacamole
3 -4 hard-boiled eggs, grated

Steps:

  • Preheat oven to 350°F.
  • Heat a dutch oven over medium high heat.
  • Add oil.
  • Add meat, crumble with a"Z" wire potato masher.
  • Stir and cook'til browned.
  • Remove with a slotted spoon, drain on paper towels.
  • Drain all but 2 TBS of the drippings.
  • Add Onions, Celery, Carrots, and Chilies.
  • Saute (stir fry)'til onions are translucent.
  • Add Garlic, saute another minute.
  • Combine all ingredients but the cheeses.
  • Bake 75 minutes, covered.
  • Top with cheeses, bake uncovered for 6-7 minutes"til cheeses are golden brown.
  • Garnish each serving with Sour Cream, Guacamole, Cilantro, and grated eggs.

This chili-like stew relies on spicy, fresh green chorizo for its bright, zesty flavor. It only takes half an hour to make your own green chorizo, but you can substitute any kind of fresh (uncured) store-bought sausage, as long as it's got a kick. Then add some chopped garlic, along with minced parsley and roasted poblano pepper for the green factor. Serve it over rice, or with corn or flour tortillas on the side. 2 tablespoons extra-virgin olive oil
1 large white onion, diced
1/2 batch (12 ounces) homemade green chorizo (see recipe), or use another spicy fresh sausage
1/4 cup chopped cilantro stems, leaves reserved for serving
7 cups cooked black beans (from 4 cans or 1 pound dried beans), drained
1 (28-ounce) can diced plum tomatoes with their juices
2 teaspoons kosher salt, more as needed
Diced avocado, for serving
Sliced scallion, for serving
Lime wedges, for serving

Steps:

  • Heat oil over medium heat in a large Dutch oven or heavy-bottom pot. Add onion and cook until softened, 5 to 10 minutes. Stir in chorizo and cilantro stems and cook 5 minutes over high heat, or until much of the liquid has evaporated.
  • Stir in beans, tomatoes and their liquid, and 1 cup water. Bring mixture to a boil over high heat; reduce to medium.
