- Heat the barbecue sauce in a 2 quart saucepan over medium-low heat until warm. Add the Mexican chocolate and stir until the chocolate melts completely. Serve immediately or cool and store in an airtight container in the refrigerator.

- Bring to a low boil, stirring often.
- Using a splatter screen, reduce heat and simmer for 25 minutes, stirring occasionally.
- Remove from heat and whisk in oil until blended.
- Store in a sealed container in refrigerator.

I'm very excited to show you my take on America's most popular style of barbecue sauce--which of course originated in and around Kansas City. After you make a batch of this and taste just how incredible it is, I don't think you'll ever buy that stuff from the store again. Sauce may be used right away, but for best results, wrap and refrigerate for a day or two before using to allow the flavors to develop.

- In a medium sauce pan over medium heat, heat the butter and sweat the onion and garlic until translucent. Add the tomatoes and simmer for 15 minutes. Add the remaining ingredients and simmer for 20 minutes. Puree the mixture in a food processor, pour into a bowl, and allow to cool at room temperature. This sauce will keep for 1 week in the refrigerator or several months frozen.
