3 ounces Mexican chocolate, coarsely chopped

Steps:

  • Heat the barbecue sauce in a 2 quart saucepan over medium-low heat until warm. Add the Mexican chocolate and stir until the chocolate melts completely. Serve immediately or cool and store in an airtight container in the refrigerator.

1/2 cup brown sugar
1/4 cup cider vinegar
1/2 teaspoon cayenne pepper
1 tablespoon onion powder
1/2 teaspoon celery seed
1 teaspoon salt
2 teaspoons garlic powder
1/2 cup prepared yellow mustard
1 tablespoon chili powder
1 tablespoon ground black pepper
2 teaspoons liquid smoke
3 tablespoons Worcestershire sauce
2 tablespoons canola oil

Steps:

  • Combine all the ingredients except for oil.
  • Bring to a low boil, stirring often.
  • Using a splatter screen, reduce heat and simmer for 25 minutes, stirring occasionally.
  • Remove from heat and whisk in oil until blended.
  • Store in a sealed container in refrigerator.

After you make a batch of this and taste just how incredible it is, I don't think you'll ever buy that stuff from the store again. Sauce may be used right away, but for best results, wrap and refrigerate for a day or two before using to allow the flavors to develop.

6 Plum tomatoes; coarsely
1 tb Honey

Steps:

  • In a medium sauce pan over medium heat, heat the butter and sweat the onion and garlic until translucent. Add the tomatoes and simmer for 15 minutes. Add the remaining ingredients and simmer for 20 minutes. Puree the mixture in a food processor, pour into a bowl, and allow to cool at room temperature. This sauce will keep for 1 week in the refrigerator or several months frozen. Coarse salt and ground pepper
1 1/2 cups ketchup

1/2 teaspoon hot sauce (such as Tabasco)
1/4 teaspoon cayenne pepper

Steps:

  • In a medium saucepan, melt butter over medium heat. Add onion and garlic; season with salt and pepper. Cook until soft, 2 to 3 minutes. Add ketchup, vinegar, sugar, Worcestershire, hot sauce, and cayenne. Bring to a simmer. Cook, stirring occasionally, until slightly thick, about 5 minutes. Set aside.

  • In a medium saucepan, saute onion in butter until tender. Stir in the mustard, salt and cayenne pepper; cook 1 minute longer., Stir in the ketchup, vinegar, sugar, Worcestershire sauce and mustard. Bring to a boil. Reduce heat; simmer, uncovered, until desired consistency, 10-15 minutes. Cool., Store in an airtight container in the refrigerator up to 1 month. Use as a basting sauce for grilled meats.
