- Preheat oven to 400 degrees F (200 degrees C). Grease a 10 inch pie pan.
- Combine zucchini, tomato, onion, and Parmesan cheese in prepared pie pan. In a small bowl, combine biscuit mix, milk, eggs, and salt and pepper. Beat until smooth, then pour over vegetable mixture.
- Bake in preheated oven for 30 minutes, or until a knife inserted into the center comes out clean.

Lesley likes to serve it with a nice arugula side salad with cranberries and feta to add a little flavor punch to the plate. This is also a great make-ahead dish for a busy week.

- Heat oven to 400 degrees F. Lightly grease bottom and sides of a 9-inch pie pan.
- Spread zucchini, tomato, onion and cheese evenly around the pie pan.
- In a bowl, whisk together the baking mix, milk, eggs, salt, and pepper until well blended. Pour evenly into pie pan, which will fill almost to the top.
- Bake for 35 minutes or until knife inserted into the center comes out clean.
- Cool for 10 minutes then slice and serve.

- Preheat oven to 400 degrees. Lightly grease bottom of a standard 9" pie dish. Set aside.
- In a small bowl, whisk eggs and egg whites together. Add milk and whisk for another 5-10 seconds.
- In a separate bowl, combine the zucchini, tomato, onion, cheese, salt and pepper and stir well.
- Transfer the vegetable and cheese mixture to the pie dish. Make sure the vegetables are spread evenly in the pan
- Pour the milk and egg mixture over the vegetables.
- - Bake for ~35-40 minutes, or until a knife inserted in the middle comes out clean and the internal temperature reaches 160 degrees. The top will be golden brown.

- Preheat oven to 325 degrees. Heat 1 teaspoon olive oil in a large skillet set over medium heat. Add green zucchini, half the scallions, half the garlic, A teaspoon marjoram, 1/2 teaspoon salt, and 1/4 teaspoon pepper; cook, stirring frequently, until zucchini has softened and is beginning to brown, about 5 minutes. Remove from heat; transfer to a large bowl; set aside.

- Unroll and separate the crescent rolls into a 10-inch glass pie pan, pressing dough into the pie pan, pinching together seams. Set aside.
- Mix together dried parsley, salt, pepper, garlic powder, dried oregano, and dried basil in a small bowl. Set aside.
- Preheat the oven to 375 degrees F (190 degrees C).
- Melt butter in a large skillet over medium heat. Add zucchini and onion and cook until vegetables are tender, stirring occasionally, about 10 minutes. Remove from the heat and stir in dried seasonings. Allow to cool slightly.
- Meanwhile, beat eggs in a bowl and add in shredded Cheddar cheese; mix well.
- Brush the bottom of the crescent roll pie crust with honey mustard and line with mozzarella cheese slices.
- Stir zucchini mixture into egg-cheese mixture, stirring until well combined. Pour mixture into the crust and sprinkle with Parmesan Cheese.
- Bake in the preheated oven until a knife inserted into the center comes out clean, 30 to 40 minutes. There will be some juice on the knife but no egg or cheese. If the pie gets too dark, you can cover the edges of the crust with foil to prevent it from burning during the last 10 minutes of baking.
- Remove from oven and allow to set completely before serving, 10 to 15 minutes.

- In a large mixing bowl, grate zucchini; set aside.
- Combine Bisquick, oil, eggs and mix well.
- Add zucchini, onion, cheeses, parsley, salt and pepper.
- Pour zucchini batter into a greased 9" x 14" baking pan, then place fresh tomato slices on top; sprinkle with more mozzarella before placing in oven.

- Pie crust -- Preheat oven to 450 degrees and unfold your thawed pie crust in a pie plate and pork a few holes in it before baking. Bake 5-8 minutes to blind bake or slightly brown before adding the filling. Just lightly brown. Follow the directions of the pie crust.
- Vegetables -- Pre-cook the zucchini. I like to just bake on a cookie sheet lined with foil or parchment paper for 5-10 minutes. I drizzle with olive oil, salt and pepper and just spread out and bake at 400 degrees, until slightly cooked but not too soft. You just want them to get a head start is all.
- Make the pie -- Put the zucchini slices on the bottom of the pie crust after it comes out of the oven and slightly cooled. Top the zucchini with the thin onion rings, and now top with the heirloom tomatoes, it is fun to alternate the colors if you have them. If not, just layer them slightly overlapping to top the zucchini.
- Cheese mixture -- In a small bowl mix the cheese, mayo, parsley, thyme, salt and pepper.
- Spread the mixture over tomatoes. In a small bowl, melt the tablespoon of butter in the microwave and then add the bread crumbs and mix well. Top the tomato pie with the bread crumbs and bake 15-20 minutes at 425 degrees until golden brown.

- Slice the zucchini into thin slices. Place zucchini on a tea towel or paper towels in a single layer and sprinkle with salt. Place another tea towel or paper towel on top. Let the zucchini "sweat" to remove excess moisture. This will take about 10-15 minutes.
- Preheat the oven to 350 degrees. Heat a large cast iron skillet to medium high heat. Once hot, coat with a bit of oil and add the bacon. Cook until desired crispiness (3-5 minutes per side), remove from pan and set aside. Keep the pan hot but reduce to medium and reserve 1 tbsp bacon grease.
- Toss zucchini into the pan, allowing zucchini to saute until translucent (about 5-6 minutes). Set aside the zucchini.
- Add in an additional tbsp of oil if needed, then toss in the tomatoes and garlic. Cook tomatoes until the skins begin to soften and carmalize (about 10 mins). Remove from the pan from heat.
