- Heat olive oil in a small pot over medium heat. Add onion and garlic; cook and stir until onion is soft, about 5 minutes. Stir in water, tomato paste, sugar, bacon, salt, basil, and red pepper flakes. Simmer until flavors combine, about 30 minutes.

- Heat oven to 375°F. Line cookie sheets with cooking parchment paper; set aside.
- In large bowl, beat 1 cup granulated sugar and butter with electric mixer on low speed or with spoon until light and fluffy. Stir in vanilla, nutmeg and egg. Stir in flour and baking soda. Shape dough by teaspoonfuls into balls. Place 2 inches apart on lined cookie sheets. Flatten slightly with bottom of glass dipped in sugar.
- Bake 9 to 11 minutes or until set. Remove from cookie sheets to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

NONA'S NOT-SO-SWEET SUGAR COOKIES
These have been in my family for as long as I can remember. They're really just known as "Nona's Sugar Cookies", but they're almost like a sweet shortbread - very different from a traditional sugar cookie. If you're into eating cookie dough, this stuff is the best EVER. My mother used to have to hide it from the kids while it chilled. For some reason, you can eat a bunch of it and never feel sick :-) My mother says she likes to put in 1/2 cup of orange juice and add flour to keep the necessary texture. The orange flavor really makes this cookie.

- In small bowl, sift together dry ingredients: flour, baking powder, soda; set aside.
- Grate oranges to remove rind.
- After grating, squeeze juice; set aside.
- Cream together butter and sugar.
- Blend in orange rind and fresh orange juice.
- Add dry ingredients slowly and mix well.
- wrap in plastic wrap and chill for at least 1 hour (I usually chill longer).
- Roll out on well-floured pastry cloth or cutting board. Use flour to keep the dough from sticking to fingers, board, etc.
- Cut cookies with assorted cookie cuttesr.
- Place on an ungreased cookie sheet.
- Sprinkle with sugar, etc. (or whatever) before baking.
- Bake at 400° for 5-7 minutes. Be careful, as these can go from almost done to burnt very quickly.
- Makes approx 6 doz cookies, depending on the size of your cut-outs. I've never timed the prep process, as it's done in 2 stages.

- Beat butter at medium speed with an electric mixer in a medium mixing bowl until creamy. Gradually add SPLENDA® Naturals Sugar & Stevia Sweetener Blend, beating well. Add eggs, one at a time, mixing well after each addition. Stir in vanilla.
- Combine flour, baking powder, and salt in a separate mixing bowl. Gradually add flour mixture to SPLENDA® Naturals Sugar & Stevia Sweetener Blend mixture, beating until blended. Do not over-mix.
- Place dough on a lightly floured work surface. Divide dough in half; pat each half into a circle and wrap with plastic wrap. Chill cookie dough for one hour or until slightly firm.

- Remove dough from refrigerator. Work with one portion of dough at a time. Roll each portion to 1/8-inch thickness on a lightly floured surface. Cut with a cookie cutter, and place on lightly greased cookie sheets. Sprinkle with decorative candies or colored sugars, if desired.
- Bake in preheated oven 8 to 10 minutes or until edges of cookies are lightly browned. Cool slightly on cookie sheets; remove to wire racks to cool completely.

Got a couple of recipes mixed up and ended up making my own! I love peanut butter cookies but find most have too much sugar for my liking. These have a nice peanut flavour and tend to be a little crispy - and of course, they're not too sweet!

- Cream margarine, brown sugar, peanut butter together by hand or with hand mixer until smooth and blended.
- Add milk, vanilla and egg.
- Mix well.

- Sift flour, baking powder, and 1/2 teaspoon salt into a bowl. Beat butter and granulated sugar with a mixer on medium speed until pale and fluffy. Beat in eggs and vanilla. Reduce speed to low. Add flour mixture, and beat until combined. Divide dough in half. Shape each piece into a disk, and wrap each in plastic wrap. Refrigerate until firm, at least 1 hour.
- Preheat oven to 325 degrees. Let dough stand at room temperature until soft enough to roll out, about 10 minutes. Roll out dough to a 1/4-inch thickness on a lightly floured surface. Add more flour if needed to prevent dough from sticking. Cut out animal shapes using cookie cutters, and transfer to parchment-lined baking sheets. Freeze until very firm, about 15 minutes.
- Bake cookies, rotating sheets halfway through, until edges just begin to brown, 15 to 18 minutes. Transfer to wire racks, and let cool completely.
- Transfer royal icing to a pastry bag fitted with a small plain round tip. Pipe desired designs onto cookies, and immediately sprinkle with sanding sugars. Shake off excess, and let stand until set, about 3 hours.
