PEPPARKAKOR I
A traditional Swedish Christmas recipe, they are crispy, brown, and delicious plain or decorated. Different from your everyday gingersnap!

Steps:
- Place butter in a large, heatproof bowl. In a medium saucepan, heat brown sugar, molasses and spices just to boiling point. Add baking soda and stir in. Pour this mixture over the butter and stir until it melts.
- Beat egg and mix in; add flour, a cup at a time, and blend thoroughly. Turn out onto a lightly floured board and knead 1-2 minutes. Wrap in waxed paper and chill until firm (about an hour).
- Preheat oven to 325 degrees F (170 degrees C).
- Roll out to approximately 1/8 inch thickness on a lightly floured board and cut into desired shapes. Place on greased baking sheets and bake for 8 - 10 minutes.
- Remove from sheets and cool on racks; may be decorated with piped icing or whatever else you like!

TRADITIONAL SWEDISH PEPPARKAKOR
These thin, crispy spice cookies are a Christmas tradition in Sweden. They're usually cut into heart, flower or star shapes. Dusting your cookie cutters with flour will make it easier to cut the dough.

Steps:
- Sift the flour together with the baking soda, cinnamon, cloves, ginger, and cardamom in a mixing bowl.
- Beat the butter together with the white and brown sugars in a mixing bowl until light and fluffy. Mix in the egg and corn syrup until smooth. Gradually stir in the flour mixture until evenly blended. Divide the dough into 4 equal portions and wrap tightly each with plastic wrap. Refrigerate at least 1 hour, or overnight.
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
- Using 1 portion at a time, work on a floured surface and roll out dough to 1/8 inch thick. Cut into shapes with cookie cutter, and place 1 inch apart on prepared baking sheets.
- Bake in preheated oven until set, about 5 minutes. Cool completely. Store in tightly covered tins.

PEPPARKAKOR (NORDIC GINGER COOKIES)
These spicy, buttery, crispy & thin gingery cookies are a family tradition Norway. They are delightfully old fashioned and are often used as window decorations for the holiday season. You will find pepparkakors at every social gathering throughout the month of December. More importantly, they're the best complement to a warm mug of glögg!

Steps:
- Heat molasses in small saucepan to boiling point, let boil about 1 minute.
- Add sugar and butter and stir until butter is melted, let cool. Beat in egg.
- Sift together flour, salt, soda and RawSpiceBar's Gingerbread spices.
- Add to first mixture and mix thoroughly.
- Roll out a portion of the dough at a time on lightly floured pastry cloth and roll into thin layers.
- Cut into desired shapes.
- Bake in a moderate oven (350F) 6-8 minutes.

- Layer half of the pasta in a lightly greased 13"x9" baking pan; sprinkle with salt and pepper. Layer with half of the cheese and half of the tomatoes. Repeat layers; cover with aluminum foil. Bake at 350 degrees for about 45 minutes, stirring halfway through. Serves 6 to 8.
NONNY'S PEPPARKAKORS
This is my Swedish great-grandmother's recipe for Pepparkakors. She used to make hundreds of these every year for Christmas.

Steps:
- Cream butter, sugar, egg, and molasses together.
- Mix together flour, baking soda, cinnamon, clove, ginger.
- Add flour mixture to butter/sugar mixture and mix well.
- Refrigerate dough for several hours.
- Divide into fourths and roll into logs. wrap each log in waxed paper and aluminum foil.
- Freeze dough overnight.
- Remove 1/2 log from freezer at a time. Slice very thin(1/8 inch) and place on greased cookie sheet.
- Bake 10-15 minutes in preheated 300F oven.
- Cool for a few minutes and remove to wire rack.

- In a medium bowl, whisk the flour with the baking soda and salt. In a medium saucepan, melt the butter over moderate heat. Remove the saucepan from the heat. Whisk in the brown sugar, corn syrup, ginger, cinnamon, cloves, black pepper and cayenne. Stir in the egg until well combined. Add the dry ingredients and stir until no streaks of white remain.
- Scrape the dough onto a work surface and pat into a 7-inch square. (It will be soft and little sticky.) Wrap in plastic and refrigerate until firm, at least 3 hours or overnight.
- Preheat the oven to 375°. Line 3 rimmed baking sheets with parchment. On a lightly floured surface, roll out the dough 1/4 inch thick. Using 3- to 4-inch cookie cutters, stamp out shapes and transfer to the prepared baking sheets. Reroll the scraps and stamp out more shapes. (You should have about 36 cookies.) Freeze the cutout dough until chilled, about 10 minutes.
- Sprinkle the dough with turbinado sugar and bake for 12 minutes for chewy cookies or 14 minutes, for crisper cookies. Transfer to a wire rack and let cool completely.
