4 or 5 ounces Chinese or 6 ounces Italian vermicelli
Salt to taste
1 tablespoon chopped coriander
1/2 teaspoon sesame oil

Steps:

  • Bring 3 quarts of water to boil in covered pot; salt if desired.
  • Pour boiling water over Chinese vermicelli and let sit for 15 minutes or cook Italian vermicelli, uncovered, in boiling water until al dente about 3 minutes. Drain.
  • Chop coriander; sprinkle over noodles with sesame oil.

1/4 cup freshly ground coriander
Fleur de sel, to season
4 (6-ounce) pieces halibut fillet
Canola oil, to cook
1 1/2 tablespoons minced ginger
2 leeks, white part julienned
1 tablespoon fish sauce
6 cups chicken stock
2 limes, juiced
1 tablespoon minced cilantro leaves, save 4 whole sprigs for garnish
1 package (8-ounce) thin rice noodles, soaked in warm water for 20 minutes until soft

Steps:

  • For the Coriander Crusted Halibut With Rice Noodles And Ginger Broth: Preheat an oven to 450 degrees. Place the coriander on a small plate. Season the halibut on both sides with salt and dredge the top only with the coriander. In a hot saute pan coated with oil, sear the top first until brown and fragrant. Flip and place pan in oven for 8 to10 minutes or until the fish in flaky and hot in the middle. Concurrently, in a hot saucepan, coat lightly with oil and saute the ginger and leeks until soft, about 4 minutes. Deglaze with fish sauce and add stock. Bring to a simmer and reduce by 20 percent. Check for seasoning then add lime juice and cilantro. Right before serving, add the soft rice noodles. Bring to temperature then serve.
  • PLATING In large, warm pasta bowls, ladle the broth, leeks and noodles. Make a small pile in the middle with the mixture and top with halibut. Garnish with cilantro sprigs.

Chilli Chicken Noodles With Coriander Pesto image

This recipe is the first time I have used Sambal Oelek and it was delicious. I almost didn't make it because the recipe sounded a bit fiddly, but it did say 15 minutes prep and 15 minutes cooking time, so I gave it a go. Absolutely delicious!! It does suggest using peanuts instead of cashews if desired, though I used cashews. Recipe found in the February 2010 issue of Recipes+.

1 cup coriander, chopped
1/2 cup parmesan cheese, shaved
1/3 cup cashews, raw and toasted
2 garlic cloves, chopped
2/3 cup vegetable oil
1 tablespoon oil, vegetable
550 g chicken breasts, trimmed
2 tablespoons sambal oelek
1 red onion, large and cut into thin wedges
250 g cherry tomatoes
375 g egg noodles, thin
100 g baby spinach leaves
2 tablespoons lemon juice

Steps:

  • Process coriander, parmesan, cashews and garlic until smooth.
  • Cut each chicken breast into half, hoizontally.
  • Heat the 1 tblsp oil in a large frying pan over a moderate heat. Cook chicken for 3 minutes each side or until cooked. Transfer to a heatproof plate. Brush with sambal oelek. Cover with foil; rest for 5 minutes. Slice.
  • Add onion and tomatoes to pan. Cook and stir for 2 - 3 minutes or until onion softens. Remove from heat.
  • Cook noodles in a large saucepan of boiling salted water, stirring occasionally for 3 minutes or until tender. Drain; return to pan. Add chicken, coriander pesto, tomato mixture, spinach leaves and lemon juice. Season with salt. (I only ever use Himalayan Crystal Rock Salt now days - google it to see why). Toss to combine.
  • Spoon into shallow serving bowls. Serve at once.

1/4 cup vegetable oil
1/2 teaspoon dried hot red pepper flakes
2 1/2 teaspoons ground coriander
1 1/2 teaspoons finely grated peeled fresh ginger
1/4 cup soy sauce
1/4 teaspoon salt
1/2 lb zucchini (1 medium), coarsely shredded
1/2 lb carrots (3 medium), coarsely shredded
6 scallions (1 bunch), thinly sliced diagonally
1 tablespoon Asian sesame oil

Steps:

  • Cook spaghetti in a 6- to 8-quart pot of boiling salted water until al dente. Drain in a colander, then rinse well under cold water and transfer to a large bowl.
  • Heat vegetable oil with red pepper flakes in a small saucepan over moderate heat until hot, then whisk in coriander, ginger, soy sauce, and salt (sauce will sizzle). Add sauce to spaghetti along with remaining ingredients and toss until combined well. Serve at room temperature.

6 cups chicken stock
3 cm piece fresh ginger, peeled, sliced
2 whole star anise
2 tablespoons soy sauce
2 teaspoons brown sugar
750 g boneless white fish fillets, skin removed, roughly chopped
1/2 cup fresh coriander leaves, chopped
1 teaspoon finely grated lime rind
1 garlic clove, crushed
250 g dried rice-stick noodles (pad Thai)
100 g snow peas, trimmed, finely sliced
fresh coriander leaves, to serve

Steps:

  • Place stock, ginger, star anise, soy sauce and sugar in a saucepan. Bring to the boil over high heat. Reduce heat to low. Simmer, covered, for 15 minutes or until slightly reduced.
  • Meanwhile, place fish, coriander, lime rind, and garlic in a food processor. Season with salt and pepper. Process until combined. Roll heaped tablespoons of mixture into balls.
  • Place noodles in a heatproof bowl. Cover with boiling water. Stand for 5 to 7 minutes or until tender. Using a fork, separate noodles. Drain.
  • Strain stock mixture into a bowl. Return to pan over medium heat. Add fish balls to stock mixture. Cook, stirring, for 8 to 10 minutes or until cooked through. Add snow peas. Cook for 1 minute or until tender.
  • Divide noodles between bowls. Ladle soup, snow peas and fish balls over noodles. Top with coriander. Serve.

2 tablespoons dark (Asian) sesame oil
1 tablespoon soy sauce
1 tablespoon white-wine vinegar or rice vinegar (not seasoned)
1/4 teaspoon sugar
1/4 teaspoon salt, or to taste
1/8 teaspoon dried hot red pepper flakes
6 ounces capellini
1/2 seedless cucumber, cut lengthwise into thin spears and crosswise into thin slices (about 1 cup)
1 scallion, minced, or 1 tablespoon minced fresh coriander
1 1/2 teaspoons sesame seeds, toasted lightly and cooled

Steps:

  • In a small bowl stir together oil, soy sauce, vinegar, sugar, salt, and red pepper flakes until sugar and salt are dissolved.
  • In a large saucepan of salted boiling water cook capellini until tender and drain in a colander. Rinse noodles under cold water until cool and drain well.
  • In a large bowl toss noodles with sauce, cucumber, and scallion or coriander until combined well and divide between 2 plates. Sprinkle noodles with sesame seeds.

250g pack medium egg noodle
2 tsp sesame oil , plus a little extra for drizzling
1 ½ tbsp sunflower oil
3 carrots , cut into thin batons
2 garlic cloves , finely sliced
½ Chinese cabbage , roughly sliced
5 spring onions , thinly sliced on the diagonal
2 tbsp crunchy peanut butter
2 tbsp light soy sauce
1 tbsp sweet chilli sauce
3 eggs , beaten
handful coriander , roughly chopped, plus a few sprigs to garnish

Steps:

  • Cook the noodles following pack instructions. Drain, reserving 2 tbsp of the cooking water. Toss the noodles in a drizzle of sesame oil and set aside.
  • Meanwhile, heat half the sunflower oil in a wok. Add the carrots and stir-fry until tender. Tip in the garlic, cabbage and half the spring onions, and stir-fry for 1-2 mins until the cabbage begins to wilt. Mix together the peanut butter, soy, sesame oil, chilli sauce and reserved cooking water, then add to the pan. Toss in the noodles and heat until warmed through.
  • Whisk the eggs, chopped coriander and some seasoning in a bowl. Heat the remaining sunflower oil in a non-stick frying pan. Tip in the eggs, stir once, then allow to set on one side. Turn over carefully, using a plate if you need to, and cook the other side until set and golden. Slide out onto a board. Cool for 1 min, then cut into strips. Scatter over the noodles, along with the remaining spring onions and a few coriander sprigs.
