10 eggs
300g golden caster sugar
300g plain flour
2 tsp baking powder
2 tbsp blueberry or strawberry jam
1l double cream
1 tsp vanilla extract
1 tbsp icing sugar
100ml milk
3 x packs of blueberry

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease and line a 20cm x 30cm baking tin - the lining paper should come up at least 2.5cm above the edge of the tin. In your biggest bowl, whisk the eggs and sugar for 8-10 mins until the mixture is pale and thickened.
  • Sift the flour and baking powder onto the egg mixture, then use a metal spoon to gently fold in. Pour this into the baking tin and bake for 35 mins until a skewer inserted into the centre comes out clean - the cake should be golden and spring back when touched. Remove from the oven and allow to stand for 5 mins before turning out onto a wire rack to cool.
  • Once cool, take a sharp knife and divide into 3. Mix the jam with 1 tbsp warm water and whip the cream with the vanilla essence and icing sugar until it holds its shape. Transfer one layer to a serving plate then drizzle with ¹/³ of the milk. Spread with a thin layer of jam, then cream, then scatter over 1 pack of blueberries. Cover with the second layer of sponge and then repeat with ¹/³ of the milk, a layer of jam, the cream and 2nd pack of blueberries. Put the third layer of sponge on top, drizzle over the remaining milk, then cover with cream and dot the remaining pack of blueberries on top.

3 -10 vanilla wafer cookies, crushed into crumbs
1 3/4 cups flour
1 teaspoon baking soda
1 cup sugar
1/2 cup unsalted butter, softened
3 eggs
2 teaspoons ground cardamom
1/2 teaspoon ground cinnamon
2/3 cup sour cream
confectioners' sugar, for dusting

Steps:

  • Pre-heat oven to 350 degrees.
  • Grease a 9-inch bundt pan with butter; dust with cookie crumbs. Set aside.
  • Combine flour and baking soda in small bowl; set aside.
  • Place sugar and butter in bowl of electric mixer; beat until light and fluffy, 3 minutes. Add eggs, one at a time, beating after each addition, about 5 minutes total.
  • Beat in cardamom and cinnamon.
  • Add flour mixture; beat until just combined. Add sour cream; beat until smooth, about 1 minute.
  • Pour batter into pan.
  • Bake until toothpick inserted in center of cake comes out clean, about 50 minutes.
  • Let stand 5 minutes; turn out on a wire rack. Cool completely.
  • Dust with confectioners' sugar.

1/3 cup butter, softened
2/3 cup sugar
1 egg, beaten
1/3 cup sour cream (not commercial sour cream, but cream or heavy cream that has gone sour or bad)
1 teaspoon vanilla
1 2/3 cups sifted flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
Cinnamon Sugar: Combine a few tablespoons of sugar and about 1-2 teaspoons ground cinnamon

Steps:

  • Mix together your wet ingredients (butter, sugar, egg, sour cream and vanilla) until smooth. Add the flour, baking powder, baking soda and salt. Drop rounded spoonfuls onto an ungreased cookie sheet. Dip the bottom of a small glass into your bowl of cookie dough or smear a little dough on the glass. Dip the glass into cinnamon sugar. With the glass coated in sugar, lightly tap down each ball of dough on the sheet leaving a dusting of cinnamon sugar on the cookie. Continue with remaining dough. I sometimes use a spoon and sprinkle just a little more cinnamon sugar on each one as well. Bake for 10 minutes in a 400 degree fahrenheit oven.

This recipe has been passed down in my family and has its roots in Norway. My grandma would always make this pie for Thanksgiving, and now my dad has taken over that role. Based on the ingredients, it is an interesting pie but the flavor is both unique and delicious. Enjoy!

1 cup white sugar

1 teaspoon baking powder
1 pinch salt
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ground cloves
3 tablespoons white vinegar
1 cup raisins
1 unbaked 9 inch pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together sour cream and sugar until smooth and creamy. Stir in eggs, baking powder, salt, cinnamon, nutmeg, cloves, vinegar, and raisins; mix until well blended. Pour mixture into pie crust.
  • Bake in a preheated oven 40 to 50 minutes. Cool in refrigerator before serving.
