Potato Salad image

The secret to Ina Garden's zesty Potato Salad recipe from Barefoot Contessa on Food Network? Buttermilk and two mustards: Dijon and whole grain.

3 pounds small white potatoes
Kosher salt
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion

Steps:

  • Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.
  • Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.
  • When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

3 eggs
1 cup chopped celery
½ cup chopped onion
½ cup sweet pickle relish
¼ teaspoon garlic salt
¼ teaspoon celery salt
1 tablespoon prepared mustard
ground black pepper to taste
¼ cup mayonnaise

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.

Less potatoes are used but this hearty, filling potato salad adds firm tofu to make a complete meal.

1 pound red-skinned potatoes, unpeeled, cut into 1/2-inch pieces
4 ounces green beans, trimmed and sliced into 1-inch pieces
2 tablespoons whole-grain mustard
2 tablespoons red-wine vinegar
3 tablespoons extra-virgin olive oil
1/2 teaspoon natural cane sugar
Fine-grain sea salt
1 leek, white and tender green parts, trimmed and chopped
1/4 cup finely chopped fresh dill
6 small stalks celery, trimmed and diced
1 cucumber, peeled, seeded, and diced
6 ounces extra-firm tofu, diced
1 tablespoon minced chives

Steps:

  • Bring a medium pot of well-salted water to a boil. Add potatoes and cook until tender but not falling apart, about 10 minutes. Just before potatoes are done, add green beans to the pot for 30 seconds. Drain and set aside.
  • Whisk mustard, vinegar, 2 teaspoons oil, sugar, and 1/4 teaspoon salt in a bowl.
  • Heat remaining oil in a large skillet over medium-high heat. Add leek and dill, and saute, stirring occasionally, until golden and slightly crispy, 4 to 5 minutes.
  • Gently toss potatoes and green beans, celery, cucumber, tofu, chives, and half the leeks with the mustard dressing in a bowl. Adjust salt, if necessary. Top with remaining leeks. Serve chilled or at room temperature.

Rachael Ray's Not Potato Salad image

Saw this on Rachael Ray's 4th of July show this year and had to try it. We were very pleased, this is a potato salad made with gnocchi. According to Rachael, this is a really good way to avoid the mess of peeling potatoes and hot boiling water for a long time in the July heat because gnocchi boils in just a couple minutes. Also, if you're making it for a BBQ you don't have to worry about it sitting out for a period of time because the dressing is oil based instead of mayo based like most potato salads. Enjoy!

2 lbs gnocchi
3 tablespoons Dijon mustard
2 tablespoons white wine vinegar
1/3 cup extra virgin olive oil
salt
pepper
4 celery ribs, diced
1/2 red onion, finely chopped
2 roasted red peppers, chopped
1 (4 ounce) jar marinated mushrooms, drained
1/2 cup flat leaf parsley, chopped

Steps:

  • Place a large pot of water over high heat to boil the gnocchi.
  • Once the water is boiling, drop the gnocchi into the pot and cook them for 3 minutes, or until they float.
  • While the gnocchi are cooking, grab a large mixing bowl and whisk together the Dijon mustard and white wine vinegar.
  • Stream the olive oil into the bowl while whisking, then season the dressing with salt and freshly ground black pepper.
  • Add your veggies and parsley to the mixing bowl.
  • Drain the gnocchi and toss them, still hot, into the mixing bowl.
  • You can serve the salad now or let it chill in the refrigerator for a couple of hours to develop more of the flavors.
  • Freshen it up with an extra drizzle of olive oil when you are ready to serve.
  • Enjoy!

I'm not a huge potato salad fan, but I do enjoy it prepared this way. It's like a fully loaded baked potato in salad form. Cooking time included chilling time. I hope you will enjoy this tasty salad.

1 lb potato, yukon gold, peeled and cut into chunks
1/4 teaspoon salt
1/8 cup Miracle Whip (you may use mayonnaise if preferred)
1/2 cup sour cream, thick
1/2 tablespoon Dijon mustard
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper (optional)
3 slices bacon, cooked and crumbled, maple
1/4 cup red pepper, sweet, finely chopped
1/4 cup orange pepper, sweet, finely chopped
1/8 cup green onion, finely chopped
1/8 cup gouda cheese, shredded
1/8 cup garlic chives (you could use 1/8 cup green onions if preferred)
2 tablespoons gouda cheese, shrredded
1/4 teaspoon chili powder

Steps:

  • Place potatoes in large pot of cold salted water and bring to a boil.
  • Cook potatoes until they are tender, drain and cool.
  • In a large bowl combine the miracle whip, sour cream, mustard, chili powder and cayenne pepper, stir to blend then add the cooled potatoes and toss gently.
  • Next you will add the bacon, red and yellow peppers, green onions and cheese, toss gently, cover and put in refrigerator to chill for about 1 hour.
  • When ready to serve garnish your potato salad with the chives, cheese and chili powder.

  • Meanwhile, in large (4-quart) microwavable bowl, place frozen cauliflower and frozen peas and carrots; cover with microwavable waxed paper. Microwave on High 20 to 25 minutes, stirring once halfway through microwaving. Drain vegetables in colander; rinse with cold water to cool. Place colander over same large bowl; refrigerate at least 30 minutes or until cooled.
  • In small bowl, mix mayonnaise, sugar, salt, pepper, 1/8 teaspoon of the paprika, the vinegar and mustard; set aside.
  • Remove vegetables from refrigerator; discard any liquid in bowl. Pat drained vegetables dry with paper towels; chop any large cauliflower pieces into 3/4-inch chunks to resemble chopped potatoes. Place cauliflower, peas and carrots in same bowl. Add celery, onion and chopped eggs.
