SWEET BANANA ALMOND OATMEAL



Sweet Banana Almond Oatmeal image

This oatmeal is warm, sweet, and lusciously filling, and it leaves me satisfied for hours! It is also incredibly versatile. Switch out any of the ingredients for whatever you fancy. I find it works well with some vanilla extract instead of almond and topped with crunchy peanut butter and a drizzle of honey! If you like your oatmeal just a bit thicker, use a little less milk or cook for a little longer.

1 small banana
1 cup almond milk
1 tablespoon honey
1 teaspoon almond extract
¼ teaspoon ground cinnamon, or more to taste
1 pinch salt
½ cup rolled oats

Steps:

  • Mash half the banana in a saucepan. Whisk almond milk, honey, almond extract, cinnamon, and salt with the mashed banana until smooth; bring to a boil and stir oats into the mixture. Reduce heat to medium-low and cook at a simmer until the oats are tender and the moisture has been absorbed to your desired consistency, 5 to 7 minutes. Transfer oatmeal to a bowl.
  • Dice remaining banana half. Top oatmeal with banana and more cinnamon, as desired.

1 cup unsweetened almond milk
1/2 cup gluten-free oats
cinnamon
1 banana
1 tbsp almond butter

Steps:

  • In a small pot over high heat, warm the almond milk. KEEP AN EYE ON IT. Once it begins to boil(it goes from boiling to bubbling over the pot in seconds), add in the oats, reduce heat to medium, and stir until oats are combined with almond milk. Sprinkle with cinnamon(I am a fiend when it comes to cinnamon and I cover the entire top of the oats & almond milk with it) and stir until combined. Check back ever couple of minutes and stir occasionally. While the oats are cooking, slice up a banana into a bowl. Measure out a tablespoon of almond butter and place in bowl as well. When the almond milk has significantly reduced(about 5 minutes), lower the heat to simmer. Stir and allow the oats to become your desired consistency(I like them when there is just a tiny amount of almond milk still visible). Remove pot from heat and pour/spoon oats overtop of the banana and almond butter.

⅓ cup unsweetened vanilla-flavored almond milk

1 ½ tablespoons turbinado sugar, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a baking sheet with cooking spray.
  • Mash bananas in a large bowl. Mix in oats, almond milk, almond butter, vanilla extract, pumpkin pie spice, and salt.
