3 eggs, beaten
1 cup raisins
1 teaspoon vanilla extract
1 cup butter
1 cup packed brown sugar
1 cup white sugar
2 ½ cups all-purpose flour
1 teaspoon ground cinnamon
2 teaspoons baking soda
2 cups rolled oats
1 cup chopped pecans

Steps:

  • Combine eggs, vanilla and raisins in a small bowl; cover and let stand for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream the butter, brown sugar, and white sugar together. Sift together the flour, cinnamon, and baking soda; stir into the creamed mixture. Then stir in the raisin mixture, rolled oats, and nuts.
  • Drop by teaspoonfuls onto an unprepared cookie sheet. Bake for 10 minutes, or until lightly browned.

1 1/2 cups raisins
1/2 cup rum
2 sticks (8 ounces) butter, softened
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups rolled oats (not stone ground)

Steps:

  • Put raisins in a small bowl and pour rum over them. Let them soak for an hour or two, then drain the rum (and what you do with the drained rum is entirely up to you!)
  • Preheat oven to 350.
  • Beat the butter together with both sugars until creamy, about 2 minutes. Add eggs and vanilla and beat until combined.
  • Put flour, baking soda and cinnamon in a medium bowl and stir gently with a whisk until well combined.
  • Add flour to butter mixture with mixer on low speed. Add in oats and raisins.
  • Put tablespoons of cookie dough on cookie sheet lined with parchment or a silicone baking mat. Bake 10-12 minutes or until golden brown.
  • Cool for a few minutes on the cookie sheet and then put on rack to finish cooling. Make sure to eat one while they are still warm! Or two.

Level up your regular Oatmeal Raisin Cookies by soaking your raisins in orange-spiced rum! Makes about 2 dozen cookies, depending on size

Number Of Ingredients 12

1 cup raisins
¼ cup dark rum
1/4 teaspoon grated orange zest
1 ½ cups all-purpose flour
1 ½ cups old-fashioned rolled oats
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon salt
12 tablespoons unsalted butter (room temperature)
1 ½ cups light brown sugar (packed)
½ cup white sugar
2 large eggs (room temperature)

Steps:

  • 1. In a small bowl, combine the raisins, rum, and grated orange zest. Allow to soak for 30 minutes until most of the rum is absorbed. You can also do this the night before to give the raisins a good long soak.
  • 2. In a medium bowl, whisk together the flour, rolled oats, ground cinnamon, baking powder, and salt.
  • 3. In a separate large bowl (or the bowl of your stand mixer, fitted with the paddle attachment), cream together butter and sugar until light and airy, about 5 minutes. (Or about 2 to 3 minutes if using the stand mixer.) Add the eggs in one at a time, making sure to scrape down the sides with each addition. Mix until well-combined.
  • 4. Switching to a spatula, add the flour mixture into the wet in two parts. Finally, add the rum-infused raisins, grated orange zest, and any leftover rum. Mix well so the raisins are well-distributed in the dough. Refrigerate at least 1 hour so they don't become too flat when they bake.
  • 5. Preheat your oven to 350°F (180°C) about 20 minutes before ready to bake. Line two baking sheets with non-stick parchment paper. Portion the cookies into 1 Tablespoon-sized mounds (or more if you like it bigger) and place at least an inch apart on your baking sheet.
  • 6. Bake cookies for 13 to 15 minutes or until the edges are lightly golden brown. Let sit on the baking sheet for about 2 minutes before removing to a rack to cool. Store in an airtight container for about a week.

1 cups (150 gr) raisins
good quality bourbon (or spiced rum)
1/2 cup (1 stick, 113 gr) unsalted butter
1/4 cup (50 gr) granulated sugar
3/4 cup (170 gr) dark brown sugar, lightly packed
1 large egg, room temperature
2 tsp vanilla extract
1/2 tsp kosher salt, plus extra for sprinkling
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1 cup + 2 TBSP (135 gr) all-purpose flour
1 1/2 cups (150 gr) old-fashioned rolled oats (not quick cooking or instant)

Steps:

  • SOAK THE RAISINS: The night before you will make cookies or at least 8 hours before, place the raisins in a bowl and pour over enough bourbon (or spiced rum) to just barely cover them. Let soak for up to 12 hours before making the cookies. Drain the raisins completely, before adding to the dough. (I like to reserve the bourbon in the refrigerator to make cocktails with!)
  • BROWN THE BUTTER: Cut the butter into small chunks and place in a saucepan over medium heat. Stir the butter occasionally until melted. Once the butter is melted and starting to bubble, stir continuously until it turns a rich amber color and smells nutty. Be careful not to burn. Set aside to cool slightly for at least 5 minutes. The butter does not need to solidify before using it for this recipe.
  • Preheat the oven to 375 F (190 C). In the bowl of a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer), mix together the butter, granulated sugar, and dark brown sugar until combined.
  • Add in the egg and the vanilla and mix until combined.
  • Add the baking soda, baking powder, kosher salt, and cinnamon into the mixing bowl. Mix on low speed until incorporated. Scrape down bowl making sure to scrape the bottom of the bowl as well. Mix a few more turns.
  • Add the flour and mix until it is just incorporated. This should only take about 10-15 seconds of mixing.
  • Add the rolled oats and the raisins into the mixing bowl and use a rubber spatula to fold them in.
  • Using a large scoop (about 3 TBSP per cookie) scoop rounded mounds of dough onto parchment lined baking sheet. Sprinkle lightly with coarse salt if desired (but definitely recommended!). Bake at 375 F (190 C) for 10-12 minutes until the edges are set and the middle still looks slightly under baked. Allow the cookies to cool on the baking sheets and set for at least 5 minutes, they will be difficult to remove from the sheets right out of the oven.
  • Store cooled cookies in an airtight container at room temperature for up to 5 days.

1 egg
1 3/4 cups all-purpose flour

Steps:

  • Heat raisins, water and rum to boiling in 1-quart saucepan; reduce heat. Simmer uncovered 20 to 30 minutes or until raisins are plump and liquid has evaporated. Cool raisins 30 minutes.
  • Heat oven to 375º. Beat sugar and butter in large bowl with electric mixer on medium speed about 3 minutes or until fluffy, or mix with spoon. Beat in egg. Stir in remaining ingredients. Stir in raisins.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 9 to 11 minutes or until light brown. Remove from cookie sheet to wire rack.

½ cup shortening

Steps:

  • In a small bowl, combine raisins and rum. Use enough rum to completely cover raisins. Let stand for 30 minutes or up to overnight. Drain the raisins and transfer to another bowl. Add the flour and toss, thoroughly coating raisins.
  • Preheat oven to 425 degrees F (220 degree C).
  • In a medium bowl, cream the shortening, and sugar. Add eggs one at a time, mixing well. Add the raisin/flour mixture and stir until well blended.
  • Drop the dough by spoonfuls 2 inches apart onto cookie sheets and bake 4 to 6 minutes, until lightly colored. Let cool on wire racks.

1 cup dark rum (I used coconut rum.)
3/4 cup unsalted butter
1 1/4 cups dark brown sugar, lightly packed
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1 teaspoon cinnamon
1/2 teaspoon ground mace (I left this out.)
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
2 cups rolled oats (not the quick kind)
1/2 cup walnuts (optional)

Steps:

  • Simmer raisins and rum over low heat until raisins are plump (about 20-30 minutes) Drain liquid into measuring cup Add water to make 1/2 cup liquid.
  • Heat oven to 400 degrees (I found 375 worked better for me.).
  • Cream butter and sugar. Stir in eggs, vanilla, and raisin liquid.
  • Mix all the dry ingredients (except nuts and oats).
  • and add to butter mixture.
  • Stir in oats, raisins and nuts.
  • Drop rounded teasspoons of dough on ungreased cookie sheet. Bake for 8-10 minutes.
