APPLESAUCE CINNAMON OAT MUFFINS

Applesauce Cinnamon Oat Muffins image

My grandmother passed this oatmeal muffin recipe down to me, and I'm eager to share it with my children. These down-home oatmeal muffins are tender on the inside and have a crispy topping of oats, brown sugar and cinnamon. I've even added raisins and cranberries to the batter for a different taste. -Hannah Barringer, Loudon, Tennessee

APPLESAUCE MUFFINS

Applesauce Muffins image

Soft and moist homemade applesauce muffins that can be oil free and are great for a healthy breakfast.

Provided by Chocolate Covered Katie

Categories     Breakfast

Time 20m

Number Of Ingredients 11

1 cup applesauce
3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. OATMEAL APPLESAUCE MUFFINS

Oatmeal Applesauce Muffins image

I originally found this recipe on SparkRecipes, but I've made a few adjustments. The milk, sugar, and flour can all be substituted for cow's milk or soy milk, splenda, and whole wheat or regular all purpose. I love the fact that there is no oil or butter needed with this recipe. These make an excellent snack or breakfast. Enjoy!

1 cup pumpkin puree (canned is best)
1/2 cup unsweetened applesauce
2/3 cup brown sugar
2 eggs
1 tsp vanilla extract
1/4 cup vegetable oil
1 1/2 cup all purpose flour
1/2 cup rolled oats (plus a few tablespoons for sprinkling)

Steps:

  • Preheat your oven to 350 degrees Fahrenheit. Prepare a 12-cup muffin tin with paper liners.

  • Bake the muffins for 17-19 minutes at 350 degrees Fahrenheit or until the tops lose their shine and they bounce back to the touch.
  • Let the muffins cool in the tin for 5-10 minutes before removing them from the tin onto a wire rack to cool completely before enjoying!

  • In a food processor*, pulse the oats for 40-60 seconds, until they are ground into a grainy, flour-like consistency. Add the oats to the liquid ingredients, along with the whole wheat flour, baking powder, baking soda, and salt. Fold the ingredients together until combined.
  • Grease a muffin pan, or line a muffin pan with muffin liners. Scoop the muffin batter into the muffin pan (I use an ice cream scooper). Bake for 20-22 minutes, until the muffins are cooked through. When the muffins are done baking, they won't feel squishy when the tops are touched, rather the tops should feel "springy" and firm. I know, that's a bit of a crazy description. Allow the muffins to cool for about 5-10 minutes before serving. Leftover muffins freeze very well for a quick and easy breakfast (learn more).
