Skillet Corn Bread image

A simple, slightly sweet corn bread made in the versatile cast-iron skillet. Tastes great and is a good base recipe to experiment with. Cast-iron skillets take a little bit of time to warm up. Pre-warming the skillet allows the corn bread to cook evenly.

1 ¼ cups milk
1 cup cornmeal
1 cup all-purpose flour
4 teaspoons baking powder
¾ teaspoon kosher salt
2 eggs, beaten
¼ cup unsalted butter, melted
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place 9-inch cast-iron skillet in oven to warm it.
  • Mix milk and cornmeal together in small bowl and let soak for 10 minutes.
  • Sift flour, baking powder, and salt together in a mixing bowl. Beat cornmeal mixture, eggs, and butter into the flour mixture until you have a smooth batter, about 1 minute.
  • Remove skillet from oven. Swish vegetable oil in the skillet to coat; pour off excess.
  • Pour batter into the skillet.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 23 minutes. Cut into wedges to serve.

2 tablespoons bacon fat (or fat of your choice)
1 large egg
1/2 teaspoon black pepper (coarsely ground)
1 1/2 teaspoons sugar
3/4 cup milk (2% okay)
1/2 cup green onion (finely minced or snipped with scissors - 4 onions)
1/2 cup asiago cheese (freshly grated, then packed into 1/2 cup measure, OR cheese of your choice!)
1 1/2 cups self-rising buttermilk cornmeal mix (White Lily preferred)

Steps:

  • Preheat oven to 450°F.
  • Place bacon fat in 7-8 inch iron skillet and heat in preheated oven for 5-7 minutes.
  • While skillet is heating, combine egg, pepper, sugar, milk, green onion, cheese, and cornmeal mix until well mixed.
  • Remove skillet from oven and pour hot fat into cornbread mixture, and quickly combine.
  • Pour cornbread batter into HOT skillet.
  • Bake for 20 minutes at 450°F.
  • Remove pan from oven ~ run table knife around edge of pan and lift baked cornbread up onto the blade of the knife to cool for 10-15 minutes before slicing! This will keep bottom of cornbread crisp!
  • OR ~ Turn baked cornbread onto a wire rack to cool for 10-15 minutes before slicing!

This is a great way to serve cornbread as a side dish. I use whole sage leaves from my herb garden and it looks so pretty when you turn the cornbread out onto the plate.( I use buttermilk self rising cornmeal.)

1/2 cup melted butter, divided
1 1/4 cups self-rising cornmeal
1 1/4 cups milk
1 cup frozen mixed vegetables (onions, green and red pepper)
1 1/2 teaspoons rubbed sage
2 large eggs, beaten
1 small onion, sliced
8 fresh sage leaves

Steps:

  • Preheat oven to 400, place cast iron skillet in hot oven for 10 minutes.
  • Add 1/4 cup butter to skillet and heat 5 more minutes.
  • Combine 1/4 cup butter, cornmeal mix, and next four ingredients stirring well with wire whisk.
  • Let stand two minutes.
  • Arrange onion and sage in the bottom of hot skillet; Pour batter slowly over onions and sage.
  • Bake at 350 for 40-45 minutes or until toothpick comes out clean.
  • Invert skillet over a serving platter to remove cornbread. Cut into wedges and serve.

This is a Rick Bayless recipe. I made this for a Mexican themed dinner party and thought I'd died and gone to heaven when I took a bite! Oh soooo good!! Be sure to use Mexican chocolate, as it is different from all others. This cake is best when slightly warm and would go great with vanilla, caramel or cinnamon ice cream, but is also wonderful all by itself.

18 -19 ounces mexican chocolate, roughly chopped, divided
1 egg yolk
1/2 teaspoon salt
7 tablespoons unsalted butter, at room temperature
1 cup all-purpose flour (4 1/2 oz)
1 3/4 cups all-purpose flour (8 oz)
1 1/4 teaspoons baking powder
8 ounces cream cheese, at room temperature (low fat works)
1 cup unsalted butter, at room temperature
2/3 cup sugar
4 eggs, at room temperature
powdered sugar (for garnish)

Steps:

  • Preheat oven to 350°F Butter and flour a 13x9-inch pan. Set aside.
  • Pulse half of the chocolate in a food processor until it is like coarse crumbs. Set aside.
  • Streusel topping: Add the other half of the chocolate to the processor and pulse until coarse crumbs. Mix the egg yolk with the salt and stir to dissolve the salt. Add to the processor along with the 7 Tbsp butter and 1 cup flour. Pulse until thoroughly combined and crumbly, but not a paste. Set aside.
  • Cake: Sift together the 1 3/4 cups flour and baking powder. With an electric mixer, on medium speed, combine cream cheese, 1 cup butter and sugar. Beat until light and fluffy, 2-3 minutes. Add eggs one at a time, thoroughly mixing between each one. Add the flour mixture and beat for 1 minute, until just mixed. Gently stir in the reserved chopped chocolate, making sure not to overmix.
  • Scrape the batter into the prepared pan and crumble the streusel evenly over top, breaking up any large lumps.
  • Bake 35-40 minutes or until a toothpick in the center comes out clean. Cool on a wire rack. Dust with powdered sugar before serving.

1 cup cornmeal
2 eggs
3 tablespoons sugar
2 teaspoons salt
4 teaspoons baking powder
2 cups milk
1 medium onion
1/4 cup butter

Steps:

  • Chop the onion and sautee it in the skillet with the butter.
  • (It's more butter than you need for the onion, but it will all go into the mix.) In a bowl, fully mix the dry ingredients.
  • Separately, beat the eggs with the milk.
  • Combine the egg and milk mixture and the sauteed onions and butter with the dry ingredients.
  • Pour the mix into the skillet.
  • Place the skillet in a 400 degree oven and bake for about 20 minutes.
  • Enjoy it with honey.
