OLD FASHIONED COCA COLA CAKE RECIPE
This classic Old fashioned Coca Cola cake pays homage to Southern tradition. Rich, moist, and decadent with a fudgy frosting to match. This chocolate cake is surely what chocolate dreams are made of!!

Steps:
- Preheat oven to 350 degrees
- Line a 9 x 13 cake pan with parchment paper, set aside
- Sift flour and granulated sugar together, stir in marshmallows and set aside
- In a medium saucepan over medium heat, bring to a boil: butter, cocoa, and cola, stirring occasionally
- Remove from heat and let cool for 5 minutes. Pour over dry mixture, whisk until combined
- Whisk in buttermilk, baking soda, beaten eggs, and vanilla extract
- Pour into 9 x 13 cake pan and bake at 350 degrees for 30 minutes. Or until cake tester comes out clean and cake bounces back when lightly pressed.
- Remove from oven and let cool on wire rack in cake pan for 30 minutes before adding frosting

- Preheat the oven to 350 degrees F. Grease and lightly flour two 9-inch cake pans
- For the cake: Sift together the flour, cocoa, baking soda, baking powder and salt and set aside. With an electric mixer, cream the butter and sugar until fluffy, about 5 minutes. Add the eggs and vanilla and beat on high speed for 3 minutes. Add the flour mixture in stages with 1 1/3 cups water, beginning and ending with the flour.
- Divide the batter evenly between the pans and bake for 30 to 35 minutes. Turn the layers out onto racks that have been sprayed with cooking spray.
- For the caramel icing: Mix 3 cups of the sugar and the milk in a heavy 3-quart saucepan. Bring slowly to a boil and keep it hot. Caramelize the remaining cup of sugar in an iron skillet. Do this by cooking over medium-high heat and stirring and scraping the pan with a flat-edged spatula as the sugar melts. Continue to cook until the syrup turns to medium or dark brown in color. This occurs at about 320 degrees F to 350 degrees F on a candy thermometer. Do not scorch the syrup. Stream the syrup into the boiling sugar and milk mixture and cook to the soft ball stage, about 238 degrees F. Add the butter, vanilla extract and baking soda.
- Pour the hot mixture into the bowl of an electric mixer and beat as it cools until the icing is creamy, 15 to 20 minutes. Watch the icing because it will go from runny to too thick very quickly. Spread on the cake layers while the icing is still warm. If it becomes too stiff, add a few drops of hot water.
COLA CAKE
This recipe uses a can of soda instead of the oil, water, and eggs added to packaged cake recipes. Cake comes out surprisingly fluffy and moist with a slight kick to it that people love. Experiment with different flavored sodas for slightly differing tastes.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.

This is from The Cake Mix Doctor by Anne Byrn which I sent to **Mandy** as part of the 2009 Cookbook Swap. This is a great recipe to carry to a potluck. Especially good with a big glass of milk!

- Place a rack in the oven and preheat to 350°F Lightly mist a 13"x9" baking pan with vegetable oil spray. Set pan aside.
- Place the cake mix, cocoa powder, melted butter, cola, buttermilk, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look well blended. Fold in the marshmallows. Pour the batter into the prepared pan, smoothing it out with the rubber spatula. Place the pan into the oven.
- Bake the cake until it springs back when lightly pressed with your finger and just starts to pull away from the sides of the pan, 40 to 42 minutes. Remove the pan from the oven and place it on a wire rack to cool for 15 minutes.
- Meanwhile, prepare the frosting. Place the butter in a medium saucepan over low heat. As the butter melts, stir in the cocoa powder and cola. Let the mixture come just to a boil, stirring constantly, and then remove it from the heat. Stir in the confectioners' sugar until the frosting is thickened and smooth. Fold in the pecans.
- Pour the frosting over the top of the cake, spreading it out with a rubber spatula so that it reaches the edges of the cake. Cool the cake for 20 minutes before serving.
- Store this cake, covered in aluminum foil, at room temperature for up to 1 week. Or freeze it, wrapped in foil, for up to 6 months. Thaw the cake overnight on the counter before serving.

- put rack in center of oven and preheat to 350*F. Lightly spray a 9x13 pan with vegetable oil. Set aside.
- Place first 7 cake ingredients in your mixer bowl and mix till batter looks well combined. Stir in mini marshmallows. Pour into prepared pan and smooth top with spatula.
- Bake cake till the top springs back when touched and sides are just beginning to pull away from pan. 40-42 minutes. Remove pan to wire rack to cool for 15 min.
- Meanwhile, prepare the frosting. Put butter in a med. saucepan. As the butter melts add cocoa and cola. Allow mixture to come to a boil stirring constantly. Remove from heat. Stir in Sugar until smooth and thick. Fold in pecans.
- Pour the frosting over the top of the cake, spreading with a rubber spatula so it reaches the edges of the cake. Cool 20 minutes before cutting.
