HAMBURGER CASSEROLE RECIPE (100-YEAR-OLD)
Steps:
- Using a cast-iron skillet (or a non-stick skillet), cook the meat, onions, and bell peppers until meat is brown and veggies are cooked through. Add salt and pepper to taste
- Add diced potatoes and cook with the lid on, for about 15 minutes on low-med heat stirring occasionally
- If you are using a cast-iron skillet, add the milk and the cornstarch to the pan and stir. If you are using a casserole dish, transfer meat and potatoes to the dish and add a mixture of milk and cornstarch. Place the Provolone cheese rounds on top of the meat and bake in a 350F oven for 15 to 20 mins or until cheese is melted and bubbly.
GWEN'S OLD-FASHIONED POTATO-BEEF CASSEROLE
Steps:
- Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
- In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
- Preheat the oven to 350 degrees F.
- Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.
- Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.
GRANDMA'S GROUND BEEF CASSEROLE
As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
- Mix sour cream, cream cheese, and onion in a bowl.
- Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
- Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

Steps:
- Preheat the oven to 350°F.
- Add the ground beef to a skillet over medium heat. Cook until nicely browned. Approximately 3-4 minutes.
- Add onions to the skillet along with salt and pepper and red pepper flakes, if using. Allow onions to soften. Approximately 1-2 minutes.
- Add potatoes to the skillet and stir well. Allow to cook so the potatoes begin to soften. Approximately 3-4 minutes.
- Add peppers and drained tomatoes to skillet and stir well.
- Stir cornstarch into liquid and add liquid to skillet, stir well, and then turn off the heat. If your skillet is not oven-proof, transfer the contents of the skillet to an oven-proof baking dish. (See video.)
- Top the casserole with cheese and place the skillet (or oven-proof baking dish) on the middle rack of the oven.
- Bake for approximately 15-20 minutes until the cheese is bubbly and a golden brown.
- Remove the skillet (or oven-proof baking dish) to a heat-proof surface and allow to cool for about 5 minutes before serving.
- Well wrapped, the hamburger casserole will stay fresh in the fridge for 3-4 days. To reheat, cover with aluminum foil and place in a 350°F oven for approximately 15 minutes or until heated through.
- Well wrapped, a hamburger casserole can be frozen for up to 4 months. To reheat, defrost in the refrigerator, cover with aluminum foil, and place in a 350°F oven for approximately 15 minutes or until heated through.
