Ingredients

3 cups vanilla wafer crumbs or 3 cups shortbread, crumbs
3/4 cup powdered sugar
3/4 cup grated sweetened coconut
1 cup chopped pecans
1 (6 ounce) can orange juice concentrate, thawed
3 -4 tablespoons Cointreau liqueur (I recommend 4 !)
powdered sugar, additional for rolling

Steps:

Mix first six ingredients.
Form into one- to one-and-a-half-inch balls.
Roll in powdered sugar.
Store in covered container.

2 1/4 cups vodka
1 ounce (30 grams) navel orange peel, from 2 navel oranges
2 tablespoons (10 grams) dried bitter orange peel
1 cup water
2 cups sugar

Steps:

Gather the ingredients.
Using a vegetable peeler, remove the peel from two navel oranges.
In a 1-quart jar, add the vodka, fresh orange peel, and dried bitter orange peel. Seal, shake well, and let infuse in a cool, dark place for 2 weeks (or up to 1 month), shaking the jar every day or two.
The day the infusion is complete, make a rich simple syrup: Bring the water to a boil in a medium saucepan over medium heat and stir in the sugar until completely dissolved and the syrup is clear. Reduce to a simmer. After 5 minutes, remove the pan from the heat and let cool completely.
Strain the orange peels from the vodka using a fine-mesh strainer lined with cheesecloth.
Rinse out the infusion jar and use it to blend the orange liqueur by adding 3/4 cup of the simple syrup to the orange-infused vodka. Shake very well for at least 30 seconds. Taste the liqueur and add more syrup to sweeten to taste.
Transfer the orange liqueur to a bottle or jar with a tight-fitting lid and use in your favorite cocktail recipes.

A nice gift for special occasions. I'm guessing at the number of fudge balls it yields; the truth is I'm probably somewhat inconsistent in the exact size I make the fudge balls because sometimes the recipe yields more than at other times. I've never melted the chocolate in the microwave instead of a double boiler but I suppose it's possible.

Ingredients

1 1/2 cups vanilla wafer crumbs
1/4 cup orange liqueur (Curaçao, Grand Marnier, Cointreau or Triple Sec)
1 (6 ounce) package semisweet chocolate morsels
2 tablespoons butter
2 tablespoons light corn syrup
1/3 cup powdered sugar
1 1/2 cups finely chopped pecans or 1 1/2 cups walnuts

Steps:

Mix the crumbs with the liqueur and set aside.
Melt the chocolate with the butter in the top of a double boiler.
Stir chocolate mixture and corn syrup into crumb mixture to blend.
Add the sugar and 1/2 cup of the chopped nuts and stir; the dough will be stiff.
Shape the dough by spoonfuls into balls and roll in the remaining 1 cup of chopped nuts.
Store in the freezer until shortly before giving or using.
