Orange No-Bake Cookies image

These are a different cookie for Christmas cookie platters. Everyone who has them asks for the recipe. Cooking time is the set-up in fridge.

1 (15 ounce) box vanilla wafers
1/2 cup butter, softened
2 cups powdered sugar
1 (12 ounce) can frozen orange juice concentrate
1 cup crushed nuts
powdered sugar or crushed nuts, to roll cookies in

Steps:

  • Crush the vanilla wafers into crumbs.
  • Mix softened butter, crumbs, powdered sugar, OJ concentrate and crushed nuts.
  • Refrigerate for 30 minutes or until ready to make cookies.
  • Shape chiled mixture into small balls.
  • Roll in flaked coconut, powdered suagr or crushed nuts.

These are a little different from the usual no bake cookies since they use gingersnap crumbs or graham wafers but they are delicious! I always use the gingersnap crumbs so can't say what they'd be like with graham wafer crumbs. The longest part of making these is forming the balls. My note on my scrapbook said the orignal was clipped from a magazine in 1981.

4 cups gingersnap crumbs or 4 cups graham wafer crumbs
1 cup confectioners' sugar
1/3 cup frozen orange juice concentrate, thawed
1/4 cup light corn syrup
1/4 cup butter or 1/4 cup margarine, melted
1 cup finely chopped nuts

Steps:

  • In a large bowl mix all ingredients until well blended. Shape in 1 inch balls. Makes about 60.

A plain soft cookie with finely grated carrots and a delicious orange icing.

¾ cup white sugar
¾ cup shortening
1 egg
1 cup cooked grated carrots
2 cups sifted all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
½ large orange, juiced
1 tablespoon orange zest
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook the grated carrots in enough water to cover. Boil until just soft and drain. Do not over cook!
  • Cream the shortening and sugar together. Add the egg and mix well. Stir in the cooked carrots while still warm.
  • Add the sifted flour, salt and baking soda and mix to combine.
  • Drop by teaspoonfuls onto parchment paper lined baking sheets and bake at 375 degrees F (190 degrees C) for 12 minutes. Let cool then frost with Orange Icing.
  • To Make Orange Icing: Add enough confectioners' sugar to the orange juice and orange zest to make a spreading consistency. Spread icing over cooled cookies and let dry.

1 cup shortening
1-1/2 cups sugar
1 cup buttermilk
3 large eggs
2/3 cup orange juice
4-1/2 teaspoons grated orange zest
3 to 3-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
ICING:
4-1/4 cups confectioners' sugar
1/4 teaspoon orange extract
1/3 to 1/2 cup orange juice

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in the buttermilk, eggs, orange juice and zest. Combine the dry ingredients; gradually add to the creamed mixture and mix well. , Drop by teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10 minutes or until lightly browned. Remove to wire racks to cool. , For icing, combine the confectioners' sugar, orange extract and enough orange juice to achieve desired consistency. Spread over cooled cookies.
