ORANGE RAISIN SCONES
Delicious flavor from the orange juice. I used reconstituted frozen OJ. I forgot to cut mine into triangular pieces before I baked them. It didn't seem to make any difference, they are very easy to cut after being baked.

Steps:
- Sift dry ingredients, cut in butter with pastry cutter or two knives.
- In a small bowl mix egg slightly and then add orange juice.
- Make a well in center of flour mixture and add liquid ingredients.
- Stir lightly, add raisins and mix just until raisins are incorporated .
- This will be quite sticky, turn out onto well floured surface.
- Split in half.
- You can use a cookie sheet now and with well floured hands push each into a circle about 6-8 inches, they should be about 1/2 inch thick.
- Cut into 8 triangular pieces but do not separate.
- Bake at 425°-450° for 10-15 minutes.
- Remove from oven when they are a nice golden color.

ORANGE-CURRANT SCONES
The orange zest and currants in these tender scones are an homage to the chef Judy Rodgers of the Zuni Cafe in San Francisco, who made her storied scones until 1997. The dough and method here, though, are adapted from Heather Bertinetti, the pastry chef at the Four Seasons restaurant in New York. The genius of this particular scone recipe is in the geometry. Slicing a rolled-out slab of dough into squares or rectangles is infinitely simpler than cutting out rounds - and there's less chance of toughening the dough by re-rolling it and adding more flour. You can use any kind of chopped dried fruit in place of the currants.

- Heat oven to 350 degrees. Line a sheet pan with parchment paper or baking mat, or use a nonstick pan.
- Toss dry ingredients and zest together in a large bowl. Using your fingertips or a pastry cutter, rub butter and flour mixture together just until butter pieces are the size of peas and covered with flour. Make a well in the center of the bowl and pour in egg and cream. Mix ingredients together by hand until a shaggy dough is formed.
- Turn out onto a floured surface and gently mix in currants, kneading dough and currants together just until incorporated.
- Pat dough into a 3/4- to 1-inch-thick rectangle. Cut rectangle in half lengthwise, then cut across into 8 or 12 smaller rectangles. Place them on the baking sheet, spaced out.
- Brush tops with egg wash and sprinkle with brown sugar (if using). Bake until light golden brown, about 22 minutes; rotate the pan front to back halfway through. Let scones cool slightly on the baking sheet. Serve warm or at room temperature. Eat within 24 hours.
ORANGE SCONES WITH GOLDEN RAISINS
My daughter's favorite scones. She does not like raisins, but with these scones, she'll eat all of them before the end of the day!

Steps:
- 1. Combine all dry ingredients together in a food processor, then add butter and orange zest once the dry ingredients are well mixed.
- 2. In a small bowl, mix together an egg, buttermilk and orange juice. Then, add to the mixture in the food processor. Add milk,only if dough seems too thick.
- 3. Take out dough and place onto a floured surface. Knead in raisins.
- 4. Divide dough into two halves, and make two 6-inch circles. Then, divide each circle into 8 pieces.
- 5. Bake in a 400 degree preheated oven for 13 to 15 minutes. You may glaze them, if desired. Recipe follows.
- 6. Glaze Recipe: 1/2 cup of confections sugar and 1 tablespoon orange juice. Mix together.
ORANGE SCONES WITH ORANGE GLAZE
Found this recipe online and tweaked it a little to make it "more orangey." It's very easy and so good! The scones come out with a wonderful texture.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and grease with cooking spray.
- Mix flour, 1 tablespoon sugar, baking soda, baking powder, and salt. Cut in butter using a pastry cutter. Mix in orange zest.
- Make a well in the center of the flour mixture. Whisk orange juice, egg, and vinegar together and pour into the flour mixture. Stir until moistened and sticky.
- Transfer dough to a floured surface and knead gently about 10 times. Pat into a 6x8-inch rectangle. Cut rectangle into 4 squares; cut each square diagonally into 8 triangles. Arrange scones on the prepared baking sheet. Brush tops with milk and sprinkle with remaining 1 tablespoon sugar.
- Bake in the preheated oven until golden brown, about 10 minutes.
- Make the orange glaze while the scones are baking. Mix 1/2 cup plus 2 tablespoons confectioners' sugar and orange juice until thick and smooth; glaze should drip slowly off the back of a spoon. Mix in orange zest.
- Dunk warm scones in the glaze to fully coat the tops. Let stand for 5 minutes before serving.

SIMPLE GOLDEN RAISIN SCONES
This is a recipe that I adapted from one that I found in one of my old cookbooks. It's amazingly easy to make and it tastes so good for being decently low fat. My father (who is British) insists on me making them for him whenever I visit.These are fantastic reheated in the microwave for a few seconds with some whipped cream on the side or spread with butter. Steps:
- 1. Preheat oven to 375 degrees.
- 2. Beat buttermilk (or skim/soy/lemon mixture) with the egg in a small bowl.
- 3. In a mixing bowl, mix together the baking soda, baking powder, salt, cinnamon and flour.
- 4. Cut in butter until no large chunks of it remain.
- 5. Mix in sugar.
- 6. Add raisins and mix until they are fully coated with the flour mixture.
- 7. Add milk and egg mixture and mix until dough is moist. (it may appear a bit dry).
- 8. Place dough onto floured surface and knead a few times.
- 9. Split dough into 2 circles and place them onto a cookie sheet, pressing them down until they're about 1-2 inches thick.
- 10. Using a knife, score the tops of the circles to make 4 wedges.
- 11. Sprinkle brown sugar and cinnamon topping onto dough.
- 12. Bake for 15 minutes or until a toothpick inserted into them comes up dry.
