These oven roasted suya spiced chicken are sinfully delicious and packed with some wonderful west flavors. Marinated in a traditional spice blend of ground roasted peanuts, ginger , garlic, onion and more.

[Suya Spice Mix] 3/4 cup ground peanuts
[Suya Spice Mix] 1 and 1/2 Tbsp onion powder
[Suya Spice Mix] 1 and 1/2 tsp white pepper
[Suya Spice Mix] 1 and 1/2 tsp powdered ginger
[Suya Spice Mix] 1/2 tsp cameroon pepper ((Cayenn eor other hot pepper). More if you need more heat))
[Suya Spice Mix] 2 tsp Garlic powder
[Chicken Suya] 1/2-1 tsp Kosher salt
[Chicken Suya] 1 and 1/2 Tbsp Suya spice blend
[Chicken Suya] 1/2 Tbsp canola oil

Steps:

  • Rinse and dry drumsticks with a paper towel. In a bowl, combine chicken, oil, salt and suya spice mix. Use your hands and thoroughly mix everything, ensuring drumsticks are well coated. Add more of the spice mix if needed ( Bigger drumsticks)
  • Preheat oven to 400 and bake until golden brown and no trace of pink (Especially near the bone). About 45 minutes. Rotate half way through baking to get both sides of the chicken.
  • Serve with pepper sauce , with a sprinkle of Suya spice.

This is the kind of recipe that you just throw together. No need to truss or fuss. Pop it into a very hot oven and it is ready in a hurry.

1 (3 pound) whole chicken
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon paprika
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rinse chicken thoroughly inside and out under cold running water and remove all fat. Pat dry with paper towels.
  • Put chicken into a small baking pan. Rub with olive oil. Mix the salt, pepper, oregano, basil, paprika and cayenne pepper together and sprinkle over chicken.
  • Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 400 degrees F (205 degrees C) and continue roasting to a minimum internal temperature of 165 degrees F (74 degrees C), about 40 minutes more. Let cool 10 to 15 minutes and serve.

1/3 cup light soy sauce
1/4 cup peanut oil
1 tablespoon sesame oil
1 tablespoon Sherry
1 clove garlic, peeled and crushed
1/2 teaspoon salt
1/2 teaspoon finely grated ginger
2 teaspoons 5-spice powder
1 3-pound chicken

Steps:

  • In a shallow dish large enough to hold the chicken, mix the soy sauce, peanut and sesame oils and Sherry. Add the garlic, salt, ginger and 5-spice powder. Mix well. Rub the chicken inside and out with the mixture. Marinate, lightly covered, for at least 2 hours, and up to 24 hours, in the refrigerator, basting and turning frequently.
  • Preheat the oven to 450 degrees. Remove the chicken from the refrigerator and wipe well to remove the marinade. Place the chicken in a roasting pan. Strain the marinade through a sieve; discard the solids and spoon the liquid over the chicken. Place the pan in the oven and roast for 45 to 50 minutes, basting frequently, or until a meat thermometer registers 158 to 160 degrees when inserted in the thigh. Remove from the oven and allow to rest for 3 minutes before serving.
