OVERNIGHT CHEESE AND EGG CASSEROLE
This is a recipe from the wall of our old home. Which means, I have no idea where it came from after 7 years. I'm posting these because they are my favorites if they made it to the wall.

Steps:
- Place sausage in large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble and set aside.
- In a lightly greased 9x13 inch baking dish, arrange the croutons in a single layer. Layer with all cheeses and top with cooked sausage.
- In a large bowl, beat together the eggs, half-and-half, milk, mustard, onion, salt, and pepper. Pour into the dish over the sausage.
- Cover, and refrigerate overnight.
- The next morning, bake in an oven preheated to 350°F for 45 to 60 minutes.
- Let sit for 20 minutes before serving.

OVERNIGHT BREAKFAST CASSEROLE WITH BACON
Delicious Overnight Breakfast Casserole with bacon, green onions, bell peppers, and cheese.

Steps:
- Cube bread and leave out overnight or place in the oven at 300°F for about 10 minutes to dry slightly. (Do not brown or toast it).
- Combine eggs, milk, & seasonings.
- Layer ½ of the cubes in a greased 9×13 pan. Top with ½ of the bacon, green onions, red peppers and cheese. Repeat layers one more time.
- Pour egg mixture over top. Cover and refrigerate overnight (or at least 3 hours).
- Remove from fridge and let sit on the counter while preheating the oven to 350°F. Bake covered with foil 45-55 minutes or until a knife inserted in the center comes out clean. (If you are baking 2 pans increase cooking time to 60-80 minutes).

OVERNIGHT EGG CASSEROLE
This recipe is adapted from a Taste of Home recipe. Loved the use of the shredded hash browns instead of bread in the dish. Makes serving breakfast for a crowd a true delight. The O'brien style potatoes have onions and bell peppers added to them.

Steps:
- Spray an 8-inch square baking dish with non-stick cooking spray.
- Layer the hash browns, ham and cheeses.
- In a large bowl, whisk together the eggs, egg substitute, milk, pepper and Dijon mustard; pour over the casserole, cover and refrigerate overnight.
- Remove the casserole from the refrigerator 30 minutes before baking; preheat oven to 350 degrees.
- Uncover the casserole and bake for 1 hour or until a knife inserted near the center comes out clean.
- Allow to stand for 5 to 10 minutes before cutting into squares; serve with salsa on top.

CHEESY EGG CASSEROLE
I make this for family brunches. Make it the night before and just bake it in the morning. Serve with coffeecake and fresh fruit. I've always received compliments when I serve this.

- Toss Monterey Jack cheese with flour; place in bottom of greased 13 x 9-inch pan.
- Top with Cheddar cheese.
- Place chopped Canadian Bacon evenly over cheeses.
- Beat eggs and milk in bowl and pour over the bacon.
- Cover and chill overnight in refrigerator.
- Remove from frig for 30 minutes before baking.
- Bake, uncovered at 325 degrees for 40-45 minutes or until a knife inserted near center comes out clean.
- Let stand for 5 minutes before cutting.
- (Time does not reflect refrigeration time).

- 1. Place bread cubes in a greased 13x9-in. baking dish. Sprinkle with cheese; set aside. In a skillet, cook sausage over medium heat until no longer pink; drain. Crumble sausage over the cheese and bread. Beat the eggs, milk, mustard, soup and broth; pour over sausage. Cover and refrigerate overnight or at least 2-3 hours before baking.

- Preheat oven to 400°. In a 10-in. cast-iron or other ovenproof skillet, heat butter over medium-high heat. Add potatoes; cook and stir until golden brown and tender.
