White Beans and Kale image

Simmer kale and cannellini with lemon zest and serve with fresh herbs.

Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 8

2 tablespoons extra-virgin olive oil
1 bunch Tuscan kale, tough stems discarded, thinly sliced (about 8 cups)
One 15-ounce can cannellini beans, undrained
2 strips lemon zest, removed with a vegetable peeler
Kosher salt and freshly ground black pepper
1/4 cup roughly chopped fresh parsley
2 tablespoons chopped fresh chives
Lemon wedges, for serving

Steps:

PAN-FRIED CORONA BEANS & KALE

PAN-FRIED CORONA BEANS & KALE image

Categories     Bean

Yield 2-4 servings

Number Of Ingredients 10

1/2 bunch / 6 oz / 170 g dino kale or lacinato kale, remove stems
2 tablespoons extra virgin olive oil
2 - 3 big handfuls of cooked large white beans (see head notes)
1/4 teaspoon fine grain sea salt
1/3 cup / 1 1/2 oz / 45 g walnuts, lightly toasted
1 clove garlic, minced
1/8 teaspoon freshly grated nutmeg
scant 1 tablespoon fresh lemon juice
zest of 1 lemon
1/3 cup / 1/2 oz / 15 g freshly grated Parmesan cheese

Steps:

  • Finely chop the kale, wash it, and shake off as much water as you can. Set aside. Heat the olive oil over medium-high heat in the widest skillet you own. Add the beans in a single layer. Stir to coat the beans, then let them sit long enough to brown on one side, about 3 or 4 minutes, before turning to brown the other side, also about 3 or 4 minutes. The beans should be golden and a bit crunchy on the outside. Add the kale and salt to the pan and cook for less than a minute, just long enough for the kale to lose a bit of its structure. Stir in the walnuts and garlic, wait 10 seconds, then stir in the nutmeg. Wait ten seconds and stir in the lemon juice and zest. Remove from heat and serve dusted with Parmesan cheese.

PAN-ROASTED HALIBUT WITH HERBED CORONA BEANS

Pan-Roasted Halibut with Herbed Corona Beans image

The halibut is brined briefly in salt water, which seasons it all the way through.

Provided by Miles Thompson

Categories     Bon Appétit     Healdsburg

Yield 6 Servings

Number Of Ingredients 15

1 1/2 cups dried corona or gigante beans, soaked overnight
1 shallot, halved
2 bay leaves, torn in half
1 1/2 tablespoons plus 1/4 cup kosher salt, plus more
2 anchovy fillets packed in oil, drained, finely chopped
1 garlic clove, finely grated
3/4 cup finely chopped fresh parsley
1 tablespoon drained capers, finely chopped
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice
1/2 cup plus 1 tablespoon olive oil
Freshly ground black pepper
6 5-6 ounce skinless halibut fillets
1 tablespoon unsalted butter
1 lemon, cut into wedges

Steps:

  • Drain beans and transfer to a large pot. Cover with water by at least 2" and add shallot, bay leaves, and 1 1/2 tablespoons salt. Bring to a boil, then reduce heat and simmer gently, adding water to keep beans submerged, until very soft but not split, 1 1/2 - 2 hours. Let beans cool in liquid.
  • Mix anchovies, garlic, parsley, capers, lemon zest, lemon juice, and 1/2 cup oil in a medium bowl; season with salt and pepper. Drain beans and discard shallot and bay leaves. Add to parsley mixture, tossing to coat (save bean cooking liquid to make soup or add to your next batch of beans; it freezes well). Season beans with salt and more lemon juice, if desired.
  • Whisk remaining 1/4 cup salt with 4 cups water in a shallow baking dish until salt is dissolved; add halibut (it should be submerged) and let sit 30 minutes (don't let it sit any longer or fish will be too salty).
  • Remove halibut and pat dry. Heat remaining 1 tablespoon oil in a large skillet over medium-high and cook halibut (do not season) until a golden brown crust has formed, about 4 minutes. Flip and cook another minute or so, just to finish cooking through and sear the second side. Turn off heat and add butter to skillet. Tilt skillet and spoon foaming butter over fillets for another minute. Serve halibut with beans and lemon wedges for squeezing over.

PAN-FRIED POLENTA WITH CORN, KALE AND GOAT CHEESE

Pan-fried Polenta with Corn, Kale and Goat Cheese image

This is a gourmet polenta recipe as it uses kale and goat cheese.

Provided by Candice

Categories     Side Dish     Grain Side Dish Recipes     Polenta Recipes

Time 2h20m

Yield 2

Number Of Ingredients 12

1 tablespoon butter
2 cloves garlic, minced
4 ⅓ cups water
1 cup stone ground cornmeal
½ teaspoon salt
1 ⅓ cups fresh corn kernels
freshly ground black pepper
2 tablespoons grated Parmesan cheese
½ bunch kale
1 tablespoon olive oil
1 tomato, sliced
3 ounces goat cheese

Steps:

  • In a medium saucepan, heat the butter over medium heat. Add the garlic and stir constantly for 1 minute; don't let the garlic brown. Add 3 cups of the water, and bring it to a boil.
  • While the water heats, whisk together in a bowl the cornmeal, salt, and 1 cup water to make a smooth mixture.
  • When the water in the saucepan comes to a boil, pour the mixture into it. Whisk constantly for 3 minutes to prevent lumps from forming. Turn the heat to low. Cook for 40 minutes, stirring with a wooden spoon every 10 minutes. Stir in the corn kernels and cook the polenta 5 minutes more. Stir in the pepper and Parmesan cheese. Pour the polenta into a lightly oiled 8x8 inch pan and smooth the top with a spatula. Chill the polenta in a refrigerator for 1 hour.
  • While the polenta is cooling, cut away the stems and center stalks of the kale. Cut the leaves into 3-inch pieces.
  • Cut the chilled polenta into 4 large triangles. Heat the olive oil in a large non-stick skillet over medium-high heat. When the oil begins to smoke, carefully add the polenta triangles. Fry the polenta until it is golden brown on the underside, then turn the polenta over and cook it until it is golden brown on the other side. Arrange the polenta on a baking sheet.
  • Preheat the broiler on your oven.
  • Place the kale and 1/3 cup water into the skillet that was just used to fry the polenta. Cover the skillet and cook the kale over a medium-high heat for 4 minutes.
  • Place the tomato slices on top of the polenta triangles. Sprinkle the goat cheese on top of the tomato slices. Broil the polenta until the cheese melts and the tomatoes begin to cook.
  • Arrange the kale on a serving platter. Place the hot polenta triangles on top of the kale and serve immediately.

KALE WITH BEANS AND POTATOES

Kale With Beans and Potatoes image

This recipe was inspired by a kale side dish recipe I got from a friend. It is a very colorful and flavorful dish. I modified it to be more in keeping with a Nutritarian eating style and added beans and sunflower seeds to make it into a main course. You can reduce prep time by using pre-chopped or frozen kale, frozen onion and carrots and jarred garlic.

Provided by Anne Sainz

Categories     One Dish Meal

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 13

12 ounces kale, de-stemmed and chopped
1 large onion, chopped
1 large red pepper, chopped
2 cups carrots, chopped or 5 medium carrots
6 garlic cloves, minced
2 cups red potatoes, diced or 10 ounces red potatoes
1/2 cup water
1 (14 1/2 ounce) diced tomatoes
1 (16 ounce) can low-sodium black beans, drained and rinsed
1 (16 ounce) can low-sodium chickpeas, drained and rinsed
1 tablespoon red wine vinegar
1 teaspoon rosemary
1/3 cup raw sunflower seeds

Steps:

  • Remove the center stem from the kale and discard. Wash and chop kale leaves and set aside. If you don't know how to remove the stems from kale, Google: remove kale stems.
  • Prepare onion, pepper, carrots, garlic and potatoes. Combine with water and set aside.
  • Combine tomatoes, beans, vinegar, rosemary and sunflower seeds and set aside.
  • Coat large covered non-stick frying pan or Dutch oven (at least 5 quarts) with oil. Add onion, pepper, carrots, garlic, potatoes, tomatoes and water. Bring to a boil, stirring frequently to prevent sticking or burning.
  • Reduce heat and simmer 10-15 min or until vegetables are tender.
  • Add kale, cover and cook until kale is wilted.
  • Add beans, vinegar, rosemary and sunflower seeds. Stir until heated through.
