Steps:
- 1. Grate the zest and squeeze the juice from the lemon. Stir the stock, tomatoes, lemon juice and lemon zest in a small bowl.
- 2. Season the chicken with the salt and black pepper.
- 3. Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until well browned on both sides. Remove the chicken from the skillet.
- 4. Reduce the heat to medium. Heat the remaining oil in the skillet. Add the shallots and garlic and cook and stir for 1 minute.
- 5. Add the stock mixture to the skillet and heat to a boil. Reduce the heat to low. Cook for 4 minutes, stirring occasionally. Return the chicken to the skillet. Cover and cook for 5 minutes or until the chicken is cooked through. Sprinkle with the olives, capers, basil and cheese. Serve with the couscous.
CHICKEN WITH HERB-ROASTED TOMATOES AND PAN SAUCE

- Preheat oven to 450°F. Combine tomatoes, 2 tablespoons oil, and herbes de Provence in a large bowl. Season with salt and pepper; toss to coat. Heat 1 tablespoon oil in a large heavy ovenproof skillet until oil shimmers. Carefully add tomatoes to pan (oil may spatter). Transfer skillet to oven and roast, turning once, until tomatoes burst and give up some of their juices, about 15 minutes. Transfer to a medium bowl and drizzle with Worcestershire sauce.
- Meanwhile, season chicken all over with 1 teaspoon salt and pepper. Heat 2 tablespoons oil in a large ovenproof skillet over medium-high heat. Sear chicken on both sides until golden brown, 6-8 minutes. Transfer pan to oven and roast chicken until cooked through, 8-10 minutes. Transfer chicken to a cutting board and let rest for at least 5 minutes.
- Add remaining 1 tablespoon oil to same skillet; heat over medium heat. Add shallot and cook, stirring often, until fragrant, about 1 minute. Deglaze pan with vinegar, scraping up browned bits from bottom of pan; add tomatoes and their juices and simmer until sauce is just beginning to thicken, about 1 minute. Season sauce to taste with salt and pepper.
- Slice chicken; divide among plates. Spoon tomatoes and sauce over; garnish with herbs.

- Preheat oven to 425 degrees F. Line two 15x10x1-inch baking pans with foil; set aside. Combine parsley, oregano, basil, rosemary, salt and ground pepper in a small bowl. Place chicken on one of the prepared pans. Sprinkle with half of the herb mixture. Combine mushrooms, onion, bell pepper and garlic in a large bowl. Drizzle with oil; toss to coat. Place mushroom mixture on the other prepared baking pan.
- Roast chicken and vegetables 30 minutes, stirring vegetable mixture once. If chicken is tender and no longer pink (180 degrees F), remove from oven and cover to keep warm; if not, continue roasting until done. Add asparagus, beans, tomatoes, olives, balsamic vinegar and the remaining herb mixture to the vegetables in pan; stir to combine. Continue to roast about 15 minutes or until asparagus is crisp-tender.
- To serve, cut chicken into bite-size pieces; combine with roasted vegetables.

- Heat the oil in a large pan, add the onions, garlic, bacon and mushrooms and cook until softened-about 10 minutes.
- Remove to a plate and add the chicken pieces to the pan. Brown well on all sides.
- Remove from the pan and add the tomato paste to the pan. Cook, stirring for a couple of minutes, then add the wine, tomatoes water, brown sugar, stock powder and fresh and dry herbs and spices and bring to the boil stirring.
- Return the chicken and bacon vegetable mix to the sauce, cover and simmer for about 1 hour, or until chicken is tender.
- About 15 minutes before serving, remove the lid and stir the olives through.
- With the lid off, increase the heat and allow to thicken to a nice sauce consitency.
- Just before serving, stir the fresh parsley through.
- We ate this over penne pasta, with feta cheese crumbled on top.

PAN ROASTED MEDITERRANEAN CHICKEN WITH BACON & VINE TOMATOES
This is another possibly for ZWT3. It is not my recipe and I don't know who gave it to me but I made this quite awhile ago and will keep this on hand. It's is delish and was easy for me to make. I used the "I can't believe it's not butter" Mediterrean style margarine for (2nd ingred) listed and I used bacon instead of pancetta and served it with a tossed green salad.

- Preheat the oven to 350 degrees.
- Toss the chicken breasts in 1/4 cup olive oil to coat well.
- Loosen the skin carefully from the breast, and stuff 1 tablespoon of Olive Grove rub under each breast.
- Roll the white meat over any excess rub.
- Place an oven-proof frying pan over high heat and add remaining 1/4 cup of olive oil and the diced pancetta or bacon.
- Fry until crisp and browned, then put to one side on kitchen towel to drain the oil.
- Return the pan to a high heat and add the butter. When the butter begins to brown, add the breasts skin-side down.
- When nicely golden, turn and brown the other side. This will take approximately one minute per side.
- Remove from heat.
- Deglaze the pan with the white wine and add back the pancetta or bacon.
- Arrange the tomatoes around the chicken breasts. Sprinkle sugar over the tomatoes and toss gently to coat in pan juices. Season with salt and pepper and bake in the oven for around 10 minutes or until chicken is cooked through.

PAN SEARED CHICKEN WITH ROASTED TOMATO SAUCE
Steps:
- Preheat the oven to broil. Adjust the top rack to about 6 inches from the heat.
- Cut the tomatoes in half and put them onto a baking sheet, cut-side up. Drizzle over 1 tablespoon canola oil and season with salt and pepper. Place under the broiler and cook until the tomatoes are soft and beginning to brown around the edges, 6 to 8 minutes. Reserve 4 halves for the Round 2 Recipe French Stew.
- While the tomatoes are cooking, remove the breast meat from the bone. Slice each piece across horizontally to get 4 large, thin pieces.
- In a large skillet over medium-high heat, add the remaining 1 tablespoon oil. Sprinkle the chicken pieces with salt and pepper. When the oil is hot, add the chicken and cook until lightly browned, 3 to 4 minutes. Turn them over and brown the other side, 2 to 3 minutes. Remove the chicken from the skillet, cover and keep warm.
- Put the same skillet over medium heat, add the chicken broth and, using a wooden spoon, scrape the brown bits from the bottom of the pan. Stir in the mustard and oregano and bring to a simmer. Add the tomatoes and their juices from the baking sheet. Break apart the tomatoes with a wooden spoon or potato masher. Add the butter and let cook until the butter is melted, about 2 minutes. Taste and season with salt and pepper. Return the chicken pieces to the pan along with any accumulated juices. Cook for another 2 minutes to heat the chicken through and blend the flavors.
- In a medium skillet over medium-high heat, add the oil. When it is hot, add the sausage pieces and cook until lightly browned, about 5 minutes. Turn the heat to medium and add the reserved tomatoes, reserved beans and chicken broth. Cook until everything is hot and bubbling, 3 to 5 minutes.
- Meanwhile, in a small skillet over medium heat, melt the butter. Add the breadcrumbs and cook, stirring frequently, until they are browned, about 5 minutes.
- To serve, divide the sausage and beans into 2 bowls and spoon the breadcrumbs on top.
- Cook the bacon in a large skillet, working in batches, until it is crisp. Drain on a plate lined with a brown paper bag or paper towels. Chop into 1/2-inch pieces.
- Remove all except 1 tablespoon of the bacon fat from the skillet and put it over medium heat. Add the onions and cook until they are soft, about 5 minutes. Add the garlic and cook for about 1 minute, being careful not to let the garlic burn. Add the tomatoes and beans and cook until the beans are heated through, about 2 minutes. Stir in the bacon and parsley. Reserve 1 1/2 cups for the Round 2 Recipe French Bean Stew.
PAN-ROASTED CHICKEN WITH END-OF-SEASON TOMATOES

- In the morning, pour salt into a bowl large enough to fit chicken. Add a cup of tepid water and dissolve salt. Add chicken pieces, then cover with water. Refrigerate 8 to 12 hours, until ready to cook.
- Preheat oven to 375 degrees. Remove chicken from water and pat it dry. Place flour and more salt and pepper in a plastic bag. Add chicken pieces, two at a time, and shake to lightly coat them. Vigorously shake off excess flour and repeat with remaining chicken.
- Place a deep, ovenproof sauté pan over medium-high heat. Add oil and butter. When foam subsides, add chicken pieces, skin side down. Brown well, adjusting heat as needed, then turn and cook for 3 minutes. Add thyme sprigs and transfer pan to oven. Roast chicken, basting every few minutes.
- When chicken is cooked (20 to 30 minutes), transfer it to a platter and keep warm. Place pan back on stove, over medium heat. Add shallot and sauté one minute. Pour in sherry and boil, scraping up any pan drippings. Reduce until pan is almost dry, then add tomatoes and increase heat to high. Cook until tomatoes have broken down and juices have condensed, 10 minutes. It should be pulpy, not drippy. Taste and adjust seasoning, sprinkle with vinegar, then spoon sauce over chicken. Serve.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Place potatoes into a microwave-safe bowl, and cook in microwave oven on High setting for 2 minutes; turn potatoes over (watch for steam) and cook 2 more minutes on High. Set potatoes aside.
- Mix together the Alfredo sauce, lemon juice, olive oil, salt, black pepper, and garlic in a bowl. Place the chicken pieces into the prepared baking dish, and generously brush chicken with about 1 cup of the mixture. Arrange the potatoes, tomatoes, and garlic cloves around the chicken. - Preheat the oven to 425 degrees F (220 degrees C). Line a large rimmed baking sheet with aluminum foil.
