PAN-SEARED HALIBUT WITH CITRUS SALSA

1 blood orange
1 tangerine
1 cup diced avocado
1/3 cup finely diced red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
Kosher salt and cracked black pepper
1 to 2 tablespoons olive oil
Four 6-ounce halibut fillets

Steps:

  • Using a paring knife, remove the peel and white pith from the orange and tangerine. Working over a large bowl, carefully cut between the membranes to release the citrus segments, allowing them to fall into the bowl along with any juices. Add the avocado, onions, cilantro and lime zest and juice to the bowl with the citrus. Gently toss to mix. Season the salsa with salt and pepper.
  • In a large nonstick skillet, heat the oil over medium-high heat. Sprinkle the halibut liberally with salt and pepper. Add the halibut to the skillet and cook until golden brown and cooked through, 3 to 5 minutes per side. Transfer the halibut to serving plates, top with salsa and serve.

2 teaspoon olive oil
1 lb mild white fish such as tilapia, cod
¼ teaspoon garlic powder
¼ teaspoon coriander
salt and pepper
For the Orange Salsa:
2 cup diced orange (about 3-4 oranges)
½ cup chopped cilantro
⅓ cup finely diced red onion
½ jalapeño (about 2 tablespoons)
2 teaspoons fresh garlic
juice of one lime
pinch of salt and pepper

Steps:

  • In a bowl, mix together all the ingredients for the salsa. Set aside or refrigerate until ready to use.
  • Season fish with the spices. Heat olive oil in a large non stick skillet over medium high heat. Place fish in skillet and cook 2-3 minutes or until flakey.
  • Plate and top with orange salsa. You can also wrap this in a corn tortilla, add shredded cabbage and guacamole and enjoy a fish taco.

Although I ate my first blood orange quite simply, I've since experimented with other preparations. This lovely butter sauce is wonderful over grilled or pan-seared fish--halibut, salmon, striped bass or snapper especially.

10 tablespoons unsalted butter, cut into 10 pieces
1 large shallot, finely chopped (about 1/4 cup)
1 cup blood orange juice
Kosher salt and freshly ground black pepper
Two 6- to 8-ounce wild halibut fillets, each about 1 inch thick
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons pomegranate arils

Steps:

  • For the blood orange butter sauce: Melt 2 pieces of the butter in a heavy-bottomed saucepan over medium heat. Add the shallots and cook, stirring occasionally, until soft and translucent, about 5 minutes.
  • Add the orange juice; stir to combine and simmer on medium-low heat until the liquid is reduced by about half, about 5 to 8 minutes.
  • Add the remaining 8 pieces of butter, one piece at a time, whisking constantly, until each is fully incorporated. Remove from the heat and season with salt and pepper.
  • For the pan-seared halibut: Pat the fillets dry with paper towels. Heat the oil in a stainless-steel or cast-iron skillet over medium-high heat. Place the fish in the skillet, skin-side down, allowing at least 2 inches between the fillets. Cook until the skin is crispy and the fish releases from the pan easily, about 3 minutes. Season the skinless side of the fish with a pinch of salt and pepper, then flip and cook until the fish is just opaque in the center, 5 to 7 minutes.
  • Place a few spoonfuls of the Blood Orange Butter Sauce over the fish. Sprinkle with the pomegranate arils and serve.

This recipe is from the America's Test Kitchen Family Cookbook. It is a delicious light recipe that comes together very quickly. Leave the tuna pink in the center for the best flavor. For an alternative preparation omit the sesame seeds and press 1/2 teaspoon cracked black peppercorns onto each side of the oiled tuna steaks before cooking.

1 large orange, peeled and cut into 1/2 inch pieces
1 avocado, pitted and cut into 1/2 inch cubes
2 tablespoons minced red onions
4 teaspoons fresh lime juice
1 small jalapeno chile, stemmed, seeded, and minced
2 tablespoons minced fresh cilantro
salt
3/4 cup sesame seeds
4 tuna steaks, 1 inch thick (8 oz. each)
2 tablespoons vegetable oil
salt and pepper

Steps:

  • For the salsa:
  • Combine all of the ingredients in a small bowl and season with salt to taste.
  • For the fish:
  • Spread the sesame seeds in a shallow dish.
  • Pat the fish dry with paper towels, then rub thoroughly with 1 tablespoon of the oil.
  • Season the fish with salt and pepper.
  • Press both sides of each steak into the sesame seeds to coat.
  • Heat the remaining 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat until just smoking.
  • Gently lay the tuna in the pan and cook until the seeds are golden brown 1.5 - 2 minutes.
  • Carefully flip the fish and continue to cook until just golden brown on the second side, 1.5 - 3 minutes depending upon your desired doneness.
  • Serve with the salsa.

  • Add all of the ingredients for the orange salsa to a bowl and stir well. Set aside until ready to use.
  • Drizzle the fish with about 1 tablespoon of olive oil and use your hands to smear it over the full surface of the fish. In a small bowl, stir together the seasonings and sea salt. Sprinkle the seasoning mixture over the fish (it's okay if you don't use all of it). If marinating for a long period of time, place fish in a zip lock bag and refrigerate until ready to cook.
  • Add the remaining olive oil (to a cast iron skillet and heat to medium-high. Once the skillet it fully hot, place the fish on it, skin-side up. Cook 3 to 5 minutes, or until golden-brown and crispy. Flip and cook an additional 3 to 5 minutes, or until the fish is cooked through. (If using white fish, you can tell the fish is fully cooked when it's opaque, or the internal temperature reaches 145 degrees F).
  • Heat the tortillas and load them up with desired amount of avocado slices, fish and orange salsa. Top with sliced radishes and fresh cilantro, and serve!
