PARMESAN HERB LOAF
This moist loaf is one of my very best quick bread recipes. I like to serve slices accompanied by individual ramekins filled with extra virgin olive oil infused with herbs for dipping. -Dianne Culley, Nesbit, Mississippi

Steps:
- In a small bowl, combine the flour, 3 tablespoons Parmesan cheese, sugar, onion, 1 teaspoon Italian seasoning, baking powder, baking soda and salt. In another bowl, whisk the sour cream, milk and butter. Stir into dry ingredients just until moistened., Turn onto a floured surface; knead for 1 minute. Shape into a round loaf; place on a baking sheet coated with cooking spray. With kitchen scissors, cut a 1/4-in.-deep cross in top of loaf. Brush with egg white. Sprinkle with remaining cheese and Italian seasoning., Bake at 350° for 30-35 minutes or until golden brown. Serve warm.

Steps:
- Preheat oven to 350 degrees F; line jelly roll pan with foil; coat with cooking spray.
- In bowl, mix beef, eggs, 1/2 cup pizza sauce, onion, breadcrumbs, Parmesan and parsley.
- Place mixture on pan; shape into 8x4 inch loaf.
- Bake until meat thermometer inserted into center registers 160 degrees F, about 55 minutes.
- Spread remaining pizza sauce over meatloaf; sprinkle with mozzarella.
- Bake until cheese is melted, about 5 minutes.
- Let stand 10 minutes before serving.
- If desired, serve with pasta and garnish with parsley sprigs.

Steps:
- Preheat an oven to 400 degrees F (200 degrees C). Grease a loaf pan.
- Stir together flour, baking powder, salt, and cheese in a large bowl. Mix in milk and melted butter. Stir to form a soft dough. Spoon dough into prepared pan.
- Bake in preheated oven, until a toothpick inserted in the center of the loaf comes out clean, about 34 to 40 minutes. Remove from pan to cool.

This is a recipe I came up with myself. It is great with most Italian dishes. It can be doubled as needed.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
- Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
- Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

Steps:
- Preheat the oven to 400 degrees.
- Split the loaf lengthwise in half. Brush each half with one tablespoon of oil.
- Sprinkle each half with an equal amount of parsley and garlic. Sprinkle with cheese. Place on a baking sheet and place in the oven. Bake 10 minutes.

BROILED PARMESAN TOMATOES
Tomatoes make a lovely side for almost any protein. This easy recipe will work for Roma or Campari tomatoes. A little seasoning and grated Parmesan will complete this quick and easy dish that is on the table in minutes!

- Preheat a broiler according to manufacturer's recommendations. Line a baking sheet or small sheet pan with aluminum foil.
- Slice tomatoes in half crossways. Slice thin slices off of the round part of the tomato halves so they will sit straight on the pan.
- Place tomato halves on the prepared pan and sprinkle with salt, pepper, and Italian seasoning to taste.
- Place seasoned tomatoes under the broiler and broil about 4 minutes. Be sure to watch carefully, so they won't burn.
- Sprinkle 1 tablespoon grated Parmesan cheese on each tomato half, and return to the broiler.
- Broil until Parmesan cheese is melted and bubbly, 45 seconds to 1 minute.
- Transfer broiled tomatoes on a plate or serving platter and garnish with fresh parsley, if desired. Serve warm.

QUICK PARMESAN LOAF
This is so incredibly easy to make, it should be sinful. I make this for friends that need some "comfort" food....well, actually those that have just had babies and they aren't counting calories yet! I use a non-stick loaf pan to bake them in.

Steps:
- Seperate each biscuit piece into 2 round pieces.
- Dip each piece in melted butter and sprinkle /dredge it in parmesan cheese.
- Stand each piece of biscuit on it's side in a greased 8 1/4 by 4 1/2 by 3 inch loaf pan -- making 2 rows (put one piece in loaf pan leaning towards the right side, next piece goes inches This piece is in front of previous piece and this 2nd piece is leaning towards the left side of the pan, etc -- Do this until all pieces have been dipped in butter, dredged in parmesan cheese and placed in the loaf pan.
- Sprinkle entire loaf with sesame seeds.
- Bake at 350 degrees for 20 to 25 minutes or until golden brown. Makes a 8 1/2 inch loaf.
