Steps:

  • Chill for at least one hour and keep chilled on your party table.

4 ounces mascarpone, room temperature
1 teaspoon kosher salt
1 tablespoon grated lemon zest (2 small lemons)
1 tablespoon extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice (2 small lemons)
One 6.7-ounce jar tuna packed in olive oil, drained and flaked
2 ribs celery with leaves, finely chopped
3 tablespoons finely chopped fennel or 1 teaspoon fennel seed
2 tablespoons finely chopped fennel fronds
2 tablespoons finely chopped sun-dried tomatoes
1 tablespoon capers, drained and rinsed
1 tablespoon chopped fresh parsley
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 tablespoon fresh lemon juice (1 small lemon)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 English muffins, halved, lightly toasted
1/4 cup baby arugula

Steps:

  • For the white bean spread: Combine the cannellini beans, mascarpone, salt and lemon zest in a food processor. Process for 30 seconds, until a paste forms. With the machine running, add the olive oil and lemon juice; continue processing until smooth, another 30 seconds. Transfer the spread to a bowl and set aside while you make the tuna salad.
  • For the tuna salad: In a medium bowl, stir together the tuna, celery, fennel, fennel fronds, sun-dried tomatoes, capers, parsley, olive oil, lemon juice, salt and pepper.
  • To assemble: Spread each English muffin half with 2 tablespoons of the white bean spread. Add 5 or 6 arugula leaves and top with 2 tablespoons of the tuna salad. Finish with a drizzle of olive oil. Serve.

There are so many tuna spread recipes that I thought long and hard about posting this one. This is a very good spread to serve at a party with crisp crackers or as a dip for fresh veggies. It is also great as a sandwich filling.

1 cup fat-free ricotta cheese
2 tablespoons chopped fresh basil or 2 teaspoons dried basil leaves
2 tablespoons lemon juice
2 tablespoons fat free sour cream
1 (9 1/4 ounce) can white tuna in water, drained

Steps:

  • Put all ingredients in a blender or food processor.
  • Cover and blend until smooth.
  • Line a 2-cup metal bowl or mold with plastic wrap and place tuna mixture in bowl.
  • Cover and refrigerate 2 hours.
  • Unmold onto serving plate, carefully removing plastic wrap.

When I really want to dress it up, I chill spread in a fish mold then unmold and decorate with an olive slice for his eye, thinly-sliced radishes for the gills, and a cute green pepper smile! (I prefer using white albacore tuna in water, but any kind of drained canned tuna will do.)

1 (10 ounce) can cream of celery soup
8 ounces cream cheese
1/2 cup water
1/4 ounce unflavored gelatin (1 envelope)
1 cup mayonnaise
12 ounces tuna, drained
1/2 cup celery, chopped
1/2 cup green onion, chopped

Steps:

  • In saucepan, bring soup to boil and add cubed cream cheese.
  • Remove from heat and stir until smooth,.
  • Dilute gelatin with water. Stir into soup mixture.
  • Stir in remaining ingrediemts and pour into mold that has been sprayed with Pam.
  • Chill until set, about 3 hours.
  • Invert mold on serving platter. (If it does not come out right away, run knife around edge of mold to help loosen, or run warm water around bottom of mold a few seconds).
  • Serve with crackers and enjoy. (Leftovers keep for quite awhile if refrigerated.).
