PASSION FRUIT MOUSSE
Passion fruit mousse is one of the most popular Brazilian desserts! Creamy, sweet and slightly tangy, it is easy to make and can be made with fresh or frozen passion fruit pulp.

Steps:
- Mix the gelatin and water in a small bowl, until the gelatin is hydrated. Microwave for 30 seconds (or heat on a double boiler) for the gelatin to melt. Cool slightly before using.
- Combine the heavy cream, sweetened condensed milk, passion fruit pulp and melted gelatin in the blender. Blend for 5 minutes.
- Transfer the mousse to a large serving bowl or to 4 individual glasses. Refrigerate for at least 3 hours to set.
- Top with the passion fruit sauce and serve!
- Combine the fresh passion fruit pulp and the sugar in a saucepan. Cook, over medium low heat, until the sugar dissolves and the mixture starts boiling. Lower the heat and continue cooking for another minute or two, or until it thickens slightly.
- Let the sauce cool to room temperature before using or refrigerating to use later.

PASSION FRUIT MOUSSE WITH MACADAMIA NUT TOFFEE
This recipe was emailed to me by the Executive Chef Aaron Wright of the Canlis Restaurant in Seattle, Washington. After having this in the restaurant I just had to know how to re-create it for myself--so decadent and wonderful! This will take a little bit of time, but mostly because you need time for the mousse to chill, and for the toffee to cool.

Steps:
- First prepare the mousse, as you will need to chill it for at least an hour before serving.
- For the mousse:.
- In a saucepan combine passionfruit puree, orange juice and gelatin.
- Heat through until gelatin has been dissolved.
- Remove from the heat and place in a bowl over and ice bath stirring constantly until the mixture starts to thicken.
- While the mixture is cooling whip the heavy cream and sugar until stiff peaks form.
- When the passionfruit has thickened add it to the whipped cream and mix throughly to combine.
- Chill for at least an hour before serving.
- For the mac nut toffee:.
- In a heavy sauce pot combine all ingredients except the nuts.
- Using a candy thermometer cook this mixture to 220 degrees.
- Then add mac nuts and continue cooking until it reaches 300 degrees and immediately remove from the heat.
- Pour on to a silpat lined half sheet pan. spread out evenly and allow to cool. When cool rough chop the toffee into small pieces.
- The toffee can be stored in an airtight container for 4-5 days.
- Before serving, lightly fold pieces of the macadamia toffee into the passionfruit mousse.
- For an added touch, serve topped with whipped cream!

- Hydrate the gelatin according to the instructions on the package. (In my case, I just sprinkled the powdered gelatin over 1/4 cup of water. I waited two minutes and microwaved it for 25 seconds, until the gelatin was completely dissolved.) Reserve.
- In a blender add the passion fruit pulp and approx. 1/4 cup of water (to make it easier to blend), and mix it for a few seconds, just to brake the fibers that bind everything together, separating the seeds from the pulp. Then strain it with a sieve to remove the seeds. Reserve the juice.
- In the same blender (just give it a quick rinse), place the sweetened condensed milk, media crema or heavy cream, and passion fruit juice. Mix for about 30 seconds and slowly add the dissolved gelatin. Blend for 2 more minutes.
- Transfer the mousse to small bowls, glass cups or one small/medium dish of choice, and refrigerate for approximately 3 hours, or until firm.

- Put the passion fruit pulp and condensed milk in a food processor or blender. If using fresh passion fruit, just pulse a few times so that the mixture is well combined but you don't break up the seeds too much. If you are using seedless pulp, you can mix a bit longer. If the mixture has seeds, strain it through a fine strainer to remove seeds.
- In a separate bowl, whip the cream to a semi-firm peak consistency. Fold in the passion fruit mixture so it is well distributed but try not to lose the air from the cream.
- Divide the mixture into 3 serving glasses (or more, if you prefer smaller servings) and chill at least 1-2 hours. Top each with some fresh passion fruit pulp before serving.
