So many amazing flavours in this one: sweet, spicy, sour, sticky - all the things! And I just love the glossy sauce over the salmon - it tastes so complex and yet it's really simple to make.

Number Of Ingredients 11

6 garlic cloves, roughly chopped
3 long red chilli, roughly chopped
500g (1.1 lb) salmon fillets, cut into roughly 3cm cubes
½ cup plain flour (all-purpose flour)
vegetable oil for deep frying, plus 1 tbsp extra for stir-frying
¼ cup tamarind paste/concentrate
60g (2 oz) palm sugar, if using the firm blocks, shave it with a knife
1½ tsp fish sauce
1 tbsp lime juice
3 spring onions (scallions), cut into batons
sea salt

Steps:

  • Step 1.Use a mortar and pestle to pound the garlic, chillies and ½ teaspoon of salt to a rough paste. Transfer to a bowl and set aside for later.
  • Step 2.Fill a saucepan or wok to about 1/3 capacity with vegetable oil. Heat over high heat. The oil is hot (325°F or 165°C) when a wooden spoon dipped into the oil forms small little bubbles.
  • Step 3.Season the salmon with salt and coat in the flour. Then cook in the hot oil for 2-3 minutes or until golden and crispy. Drain on paper towel.
  • Step 4.Heat 1 tablespoon of oil in a clean wok or large non-stick frying pan over medium heat. Add the garlic chilli paste and stir-fry for 10 seconds. Then add the tamarind, sugar, fish sauce and lime juice. Cook, stirring, for 1-2 minutes or until the sugar has dissolved and the sauce has turned translucent and shiny. Now add in the crispy salmon and the spring onion. Toss until well combined. Transfer to a plate and serve.

1-1/2 cups fresh snow peas
2 green onions, cut into 2-inch pieces
4 cod fillets (6 ounces each)
2 teaspoons lemon juice
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
4 teaspoons butter

Steps:

  • Preheat oven to 450°. In a small bowl, combine carrots, snow peas and green onions. Cut parchment paper or heavy-duty foil into four 18x12-in. pieces; place a fish fillet off center on each. Drizzle with lemon juice and top with carrot mixture. Sprinkle with seasonings; dot with butter., Fold parchment paper over fish. Bring edges of paper together on all sides and crimp to seal, forming packets. Place on baking sheets., Bake 10-15 minutes or until fish just begins to flake easily with a fork. Open packets carefully to allow steam to escape.

1 can (15 ounces) great northern beans, rinsed and drained
4 plum tomatoes, chopped
1 small zucchini, chopped
1 medium onion, chopped
1 garlic clove, minced
1/4 cup white wine
3/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 tilapia fillets (6 ounces each)
1 medium lemon, cut into 8 thin slices

Steps:

  • Preheat oven to 400°. In a bowl, combine beans, tomatoes, zucchini, onion, garlic, wine, 1/2 teaspoon salt and 1/8 teaspoons pepper., Rinse fish and pat dry. Place each fillet on an 18x12-inch piece of heavy-duty foil; season with remaining salt and pepper. Spoon bean mixture over fish; top with lemon slices. Fold foil around fish and crimp edges to seal. Transfer packets to a baking sheet., Bake until fish just begins to flake easily with a fork and vegetables are tender, 15-20 minutes. Be careful of escaping steam when opening packets.

2 cups frozen precooked rice (such as InnovAsian®)
24 pitted green olives, roughly chopped
¾ cup low-sodium chicken broth
1 orange, juiced
1 teaspoon finely grated orange zest
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 pound cod, cut into 4 pieces
4 teaspoons extra-virgin olive oil
4 thin slices orange
2 tablespoons chopped toasted almonds
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Cut four 12x15-inch sheets of parchment paper. Fold each in half widthwise and reopen.
  • Mix rice, green olives, chicken broth, orange juice, orange zest, salt, and pepper together in a bowl.
  • Spoon 3/4 cup of the rice mixture onto 1 side of each parchment rectangle, near the crease. Lay 1 piece of cod on top. Drizzle 1 teaspoon olive oil over fish; lay 1 orange slice on top.
  • Fold empty half of parchment over cod and rice mixture; crimp edges together with overlapping folds to seal. Arrange packets close together on a sheet pan.
  • Roast on the center rack of the preheated oven until cod flakes easily with a fork, 15 to 17 minutes. Unfold 1 edge of the parchment, being careful to avoid steam, and look inside to check doneness.
  • Open packets carefully, being careful to avoid steam. Slide cod and rice mixture into bowls. Garnish with almonds and parsley.

1 1/2 cups fresh lemon juice, divided
1 1/2 cups chopped fresh mint leaves, divided
1/2 cup sugar
5 teaspoons fish sauce (such as nam pla or nuoc nam)*
3 teaspoons finely grated lemon peel, divided
1 teaspoon hot chili paste (such as sambal oelek)*
3 tablespoons corn oil
2/3 cup finely chopped lemongrass** (bottom 3 inches of about 6 stalks)
1/2 cup finely chopped shallots
6 banana leaves, each leaf cut into 10-inch-wide, 20-inch-long piece** or six 10-inch-wide, 20-inch-long pieces of parchment paper
6 6-ounce halibut fillets (1 1/4 to 1 1/2 inches thick)
6 tablespoons (3/4 stick) unsalted butter,divided

Steps:

  • Stir 1 cup lemon juice, 1/2 cup mint, sugar, fish sauce, 1 teaspoon lemon peel, and chili paste in small bowl until sugar dissolves. Set Thai lemon-mint sauce aside.
  • Mix remaining 1/2 cup lemon juice, 1 cup mint, and 2 teaspoons lemon peel in small bowl. Set mint topping aside.
  • Heat oil in heavy medium skillet over medium-high heat. Add lemongrass and shallots and sauté until shallots are slightly softened and golden, about 6 minutes. Cool.
  • Place 1 banana leaf or parchment sheet on work surface. Place 2 tablespoons cooled shallot-lemongrass mixture in center of banana leaf. Place 1 fish fillet on lemongrass mixture on banana leaf. Sprinkle fish with salt and pepper. Top with 1 tablespoon butter; spoon 2 tablespoons mint topping over. Fold 1 short side of banana leaf over fish. Fold long sides in. Roll up to completely enclose fish. Repeat with remaining banana leaves, shallot-lemongrass mixture, fish, butter, and mint topping.
  • Preheat oven to 450°F. Place fish packets on rimmed baking sheet and roast until fish is opaque in center, about 10 minutes. Unwrap fish and serve with Thai lemon-mint sauce.

1 (8 ounce) package snow peas
1 (8 ounce) package sliced white mushrooms

Steps:

  • Preheat grill to medium-high or oven to 450 degrees F. Mix teriyaki sauce, honey, rice vinegar, minced ginger, sesame oil and red pepper flakes in a small bowl; set aside.
  • Place a sheet of Reynolds Wrap® Non-Stick Aluminum Foil on counter with non-stick (dull) side facing up. Place a salmon fillet and 1/4 of the vegetables in center of foil. Spoon 1 tablespoon teriyaki mixture over fillet.
  • Bring up sides of foil; fold down two times. Double fold both ends of foil to seal packet, leaving room for heat circulation inside. Repeat to make four packets. Reserve remaining teriyaki mixture to serve with salmon.
  • Place packets on baking pan with 1-inch sides to transport to grill or bake in oven.
  • Slide packets onto grill.
  • Grill 8 to 10 minutes in covered grill - OR - BAKE 15 to 20 minutes or until salmon is desired doneness. If grilling, use tongs or oven mitts to slide hot packets back onto pan and transport. Open packets carefully by cutting along top folds with a sharp knife, allowing steam to escape. Serve with hot cooked rice, drizzled with remaining teriyaki sauce if desired.

1 leek, finely sliced
2 bok choy, finely sliced
4 plaice fillets, skinned and each fillet cut into 2 pieces lengthways
1 tablespoon lime juice
1 mild chili pepper, seeds removed, finely chopped
1 tablespoon light soy sauce
1/4 teaspoon sugar
4 tablespoons coriander, chopped (cilantro)

Steps:

  • Preheat oven to 200 degrees Celsius Heat oil in a small frying pan and stir fry leek and bok choy until just starting to wilt. Cut 4 large squares of kitchen foi. Divide veg between them, and lay 2 pieces of fish on top of each square.
  • In small bowl, mix together fish sauce, lime juice, chilli, soy sauce, and sugar. Pour over fish. Seal foil together and place on baking tray. Place tray in oven and cook 10 minutes.
  • Let packets sit for a couple of minutes before opening to prevent steam burns. Open and scatter fish with coriander (cilantro).
  • Serve with noodles.
