Pasta Salad Recipe With Walnuts & Fruit image

8 oz. Shells (Penne (or your favorite pasta shape), uncooked*)
1 11 oz. can juice-packed mandarin oranges, drained
1 cup seedless red grapes (cut into halves)
1 cup seedless green grapes (cut into halves)
1 apple (cored and chopped)
1/2 cup sliced celery
1/2 cup walnut halves
1 cup low fat (plain yogurt)
1 tbsp. honey
1/4 cup frozen orange juice concentrate (thawed)

Steps:

  • Prepare pasta according to package directions; drain and set aside.
  • In a large bowl, combine next six ingredients (oranges through walnuts). Add pasta and stir to mix.
  • Meanwhile, in a small bowl, mix yogurt, honey and orange juice concentrate. Add yogurt mixture to pasta; toss to coat. Cover and chill thoroughly.

8 ounces uncooked elbow macaroni
3/4 cup fat-free plain yogurt
3/4 cup reduced-fat mayonnaise
4 teaspoons snipped fresh dill
1/4 teaspoon salt
Dash hot pepper sauce
2 medium tart green apples, chopped
2 medium red apples, chopped
1-1/2 cups seedless grapes
2 celery ribs, thinly sliced
1 can (15 ounces) mandarin oranges, drained
2 medium firm bananas, cut into 1/4-inch slices
1/2 cup chopped walnuts

Steps:

  • Cook pasta according to package directions. Rinse with cold water and drain. In a bowl, combine the yogurt, mayonnaise, dill, salt and hot pepper sauce. , In a large serving bowl, combine the pasta, apples, grapes, celery and mandarin oranges. Gently stir in 1 cup yogurt mixture. , Cover and refrigerate salad and remaining yogurt mixture for 2-3 hours. Just before serving, stir in bananas, walnuts and remaining yogurt mixture.

Steps:

  • In a large salad bowl, combine the apples, bananas, oranges, grapes, lettuce and lemon juice. In a small bowl, combine mayonnaise and honey. Pour over salad and toss to coat. Sprinkle with walnuts. Serve immediately.

1 (8 ounce) can water chestnuts, drained and sliced
1 cup chopped cashews
1 sprig fresh mint leaves, chopped, or to taste
1 pinch cinnamon, or to taste
2 (8 ounce) containers mandarin orange-flavored whipped yogurt
1 cup mayonnaise
1 tablespoon chicken bouillon granules

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain.
  • Combine cooked pasta, chicken, grapes, celery, oranges, water chestnuts, cashews, mint leaves, and cinnamon in a large bowl.

1 cup strawberry, sliced
