2 tablespoons butter or margarine
1 cup uncooked regular long-grain rice
1/2 cup sliced green onions (5 medium)
1/2 cup pine nuts
2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
1 teaspoon grated lemon peel
1/4 teaspoon salt
1/4 cup sliced green onion tops

Steps:

  • Melt butter in 3-quart saucepan over medium-high heat.
  • Cook rice, 1/2 cup onions and the nuts in butter about 5 minutes, stirring occasionally, until nuts are light brown.
  • Stir in broth, lemon peel and salt. Heat to boiling, stirring once or twice; reduce heat. Cover and simmer 14 minutes; remove from heat. Fluff rice lightly with fork.
  • Cover and let stand 5 minutes. Sprinkle with onion tops.

2 cups low-sodium chicken broth
1 cup quinoa, rinsed
1/4 cup pine nuts
1 tablespoon olive oil
1/2 large onion, chopped
1/3 cup chopped fresh parsley leaves
Salt and pepper

Steps:

  • Put the broth and quinoa in a medium sized saucepan and bring to a boil. Reduce heat to a simmer, cover and cook for 15 to 20 minutes, until liquid is absorbed and grain is tender.
  • Meanwhile, toast the nuts in a large dry skillet over medium-high heat until golden brown and fragrant, about 2 minutes, stirring frequently. Remove nuts from pan and set aside. Heat the oil in the same skillet over a medium-high heat. Add the onions and cook stirring occasionally, until the onions soften and begin to brown, about 6 minutes.
  • When the quinoa is done, fluff with a fork and transfer to a large serving bowl. Stir in the pine nuts, onions, and parsley. Season with salt and pepper and serve.

2 teaspoons minced fresh chives

Steps:

  • In a small heavy saucepan cook onion in oil over moderate heat, stirring, until softened.
  • Stir in broth, bell pepper, and bulgur and bring liquid to a boil. Cook mixture, covered, over low heat 12 minutes, or until liquid is absorbed.
  • Remove pan from heat and let stand, covered, 5 minutes. Stir in pine nuts, chives, and salt and pepper to taste.

Season with salt and pepper. Transfer to bowl and sprinkle with toasted pine nuts.

3 tablespoons butter
1 cup rice (can use brown rice, but will have to cook 15-20 minutes longer)
1 cup vegetable broth (originally said chicken or beef broth)
1 cup water
1/2 cup pine nuts, lightly roasted
1/4 cup sesame seeds, lightly roasted
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon fenugreek leaves

Steps:

  • Melt butter in a large sauté pan and sauté the onion until it softens and starts to color, about 10 minutes, then add the fenugreek and the roasted seeds and nuts and mix well.
  • Cook over medium until the onions have wilted completely, about 10 more minutes.
  • Add salt and pepper to the onions along with the stock and water and bring the mixture to a boil.
  • When the water is hot, add the rice and return to a boil. Then lower heat and cook covered 15-20 minutes or until the rice is done(if using brown rice, cook another 15-20 minutes).
