POLLO A LA BRASA (PERUVIAN GRILLED CHICKEN)

Steps:
- Place chicken thighs into a gallon-sized resealable plastic bag. Blend soy sauce, garlic, lime juice, vegetable oil, cumin, paprika, and oregano in a blender until smooth. Pour mixture over chicken, seal the bag, and refrigerate for 8 hours.
- Combine jalapeno peppers, cilantro, mayonnaise, lime juice, olive oil, garlic, salt, and pepper in a blender; pulse until sauce is smooth. Transfer sauce to a covered bowl and refrigerate until ready to serve.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove chicken thighs from the bag and place on the grill. Discard bag with excess marinade. Grill thighs for 7 minutes; flip and grill 7 additional minutes.
- Transfer thighs to a serving dish and drizzle reserved sauce over the chicken.

PARMESAN BREADED CHICKEN [MILANESAS DE POLLO EMPANIZADAS A LA PARMESANA]

- Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
- In shallow dish, mix bread crumbs and Parmesan cheese. In another shallow dish, place egg product. Dip chicken into egg product, then coat with crumb mixture.
- In 12-inch nonstick skillet, heat oil over medium heat. Add chicken; cook about 5 minutes, turning once, until brown on both sides.
- Stir in remaining ingredients. Heat to boiling. Reduce heat; cover and simmer 10 to 12 minutes, stirring occasionally, until juice of chicken is clear when center of thickest part is cut (170°F). Sprinkle with mozzarella cheese.

Another restaurant favorite of mine and my family. I usually double the sauce recipe and freeze for later use. The fried chicken pieces also freeze well for a quick dinner later!

Steps:
- MARINARA SAUCE: cook garlic slowly in 1 tablespoon olive oil.
- About 1 minute.
- Add tomatoes, salt and basil.
- Let simmer for about a hour.
- CHICKEN: Salt chicken very little.
- Mix about 2-3 tablespoons parmesan cheese in the egg.
- Dip each breast into egg then dust with bread crumbs.
- Fry in skillet in enough oil to coat the skillet.
- Be careful not to burn.
- Brown on a low to medium heat on both sides until chicken is done.
- Cook spaghetti according to directions.
- PREHEAT OVEN 375°.
- In casserole dish place chicken flat.
- Ladle 1 or 2 spoonfuls of sauce on top of each breast put desired amount of grated mozzarella on top.
- Bake until cheese is melted.
- Serve over noodles with more sauce.
- Garnish with parmesan cheese.
- **For added ZIP: Squeeze fresh lemon juice over chicken before you put on the sauce and into the oven!

Steps:
- Heat large saucepan of salted water to boiling.
- Heat butter and oil in large heavy skillet over medium heat. When foam subsides, add chicken, scallions, and garlic; cook, stirring occasionally, until chicken begins to brown, about 7 minutes. Stir in cream, mushrooms, tomatoes, peas, salt, and peppper; heat to boiling over high heat. Reduce heat to medium and simmer until sauce is slightly thickened and chicken is cooked through, 3-5 minutes. Stir in basil and remove from heat.
- Meanwhile, cook pasta in boiling water until tender but still firm to the bite. Drain thoroughly and transfer to wide serving bowl.
- Pour sauce over pasta, sprinkle with Parmesan, and toss to combine. Serve hot.
