ONE-POT ITALIAN BEAN AND SAUSAGE PASTA



One-Pot Italian Bean and Sausage Pasta image

Pasta lovers in search of a different twist on your favorite dish, look no further. This one-pot pairs campanelle pasta with spicy Italian sausage and creamy cannellini beans in a tomato sauce that's guaranteed to warm you up on a cold night.

4 (4 oz each) spicy Italian sausage links
8 oz uncooked campanelle pasta (2 3/4 cups)
2 cups Progresso™ chicken broth (from 32-oz carton)
2 tablespoons Muir Glen™ organic tomato paste (from 6-oz can)
1/2 teaspoon salt
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
1/2 cup grated Parmesan cheese (2 oz)

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Add sausages; cook 4 to 6 minutes, turning occasionally, until sausages are browned on all sides. Add pasta, chicken broth, tomato paste and salt. Heat to boiling; cover, reduce heat and cook 9 to 11 minutes, stirring occasionally, until pasta is al dente and most of liquid is absorbed.
  • Remove skillet from heat. Remove sausages, cut into 1/2-inch slices, and return to skillet with crushed tomatoes and beans. Cook over medium heat 3 to 4 minutes, stirring occasionally, until hot. Stir in Parmesan cheese, and serve.

1 tablespoon olive oil
2 lbs sweet mild Italian sausage
2 cups coarsely chopped onions
6 cloves garlic, roughly chopped
1 head escarole, sliced crosswise into 1 inch strips
1 1/2 cups chicken broth
1 1/2 cups beef broth
2 (15 ounce) cans cannellini beans or 2 (15 ounce) cans red kidney beans, drained
1 lb cellentani pasta or 1 lb fusilli, cooked and drained
1 cup freshly grated romano cheese

Steps:

  • Heat oil in a large skillet, cook sausage over medium heat 10 minutes, remove and slice into 1 inch chunks.
  • Add onions, garlic and escarole to the skillet and cook until the escarole is wilted.
  • Add broths, sausage and cannelini beans and simmer 15 minutes.
  • Stir in cheese and mix with hot pasta.

This pasta with sausage and white beans is a perfect midweek recipe. It's an easy-to-prepare pasta recipe, and you can throw just about anything in it.

1 pound hot Italian sausage (loose)
4 ounces mushrooms (sliced)
2 shallots (peeled and diced)
4 cloves garlic (peeled and minced)
1 golden or green zucchini (trimmed and diced)
1 pint Campari tomatoes (quartered)
1 15- ounce can cannellini beans (drained and rinsed)
1/2 teaspoon crushed red pepper (plus more to taste)
1 cup water or chicken stock
1/2 cup loosely packed parsley (minced)
8 ounces angel hair pasta
Salt and pepper to taste

Steps:

  • Place the sausage in a wide pot and turn the heat to medium. Cook, stirring often for 12-15 minutes until cooked through and beginning to caramelized. Remove from the pot. Drain off all but 1 tablespoon fat from the pot.
  • Add the mushrooms to the pot and cook for 8-10 minutes until browned and crisp around the edges. Season with salt.
  • Add the shallot to the mushrooms and cook for 3-4 minutes until softened. Add the garlic and cook 1 minute until fragrant.
  • Add the zucchini and tomatoes and stir to combine. Cook for 3-4 minutes until the zucchini begins to soften. Add the beans and season with salt, pepper, and crushed red pepper.
  • Turn the heat to high. Once any liquid in the pot (from the tomatoes and zucchini) begins to bubble, pour in the water and bring to a boil. Reduce heat to low and simmer for 20 minutes until the liquid reduces. Taste and season to your preference. After 20 minutes, stir in the parsley and cook for 5 minutes more.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until just barely al dente. Remove 1/2 cup of the cooking water and then drain the pasta.
  • Add the pasta cooking water and angel hair pasta to the sauce and toss to combine. Cook in the sauce for 1 minute until coated. Turn off the heat.
  • Divide the cooked pasta between between shallow bowls. Serve with more fresh parsley if you like. Enjoy!

1 large onion, diced

3/4 pound ground beef (15 percent fat)
3 spicy Italian sausages, casings removed
2 14 1/2-ounce cans diced tomatoes in juice with garlic, oregano, and basil
2 14-ounce cans low-salt chicken broth
1 15-ounce can cannellini (white kidney beans), drained
1 1/2 cups chopped fresh basil, divided
2 teaspoons dried oregano
1/4 teaspoon dried crushed red pepper
1/2 cup small elbow macaroni
1 6-ounce bag baby spinach leaves
1/3 cup grated Romano cheese
Additional grated Romano cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion and garlic and sauté 6 minutes. Add beef and sausage and sauté until brown, breaking up meats with back of fork, about 5 minutes. Add tomatoes with juice, broth, beans, 1 cup basil, oregano, and dried crushed red pepper. Simmer 15 minutes to blend flavors, stirring occasionally. Add pasta and cook until tender but still firm to bite, about 15 more minutes. Add spinach and cook just until wilted, stirring occasionally, about 4 minutes. Mix in 1/3 cup cheese and remaining 1/2 cup basil. Season ragout with salt and pepper; ladle into bowls. Serve, passing additional cheese separately.

1 head of garlic, left whole, plus 2 garlic cloves thinly sliced
2 tablespoons olive oil
1/2 lb fresh sweet Italian sausage, casings discarded
1/2 cup thinly sliced shallot
1/8 teaspoon dried hot red pepper flakes
1 (14-oz) can diced tomatoes in juice, drained, or 2 large fresh plum tomatoes, cut into 1/4-inch dice
1 (15- to 19-oz) can small white beans, drained and rinsed
2 cups chicken stock or broth
1 lb campanelle (bell-shaped pasta), rotini (corkscrew pasta), or medium shells
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh basil
1/2 oz finely grated Pecorino Romano (1/4 cup)

Steps:

  • Preheat oven to 400°F.
  • Cut off and discard top of garlic head to expose cloves, then wrap head in foil and roast in middle of oven until cloves are tender, about 45 minutes. Open foil carefully and cool to warm. Squeeze garlic from skins into a small bowl, then mash to a paste with a fork.
  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook sausage, stirring and breaking up large pieces, until browned, about 4 minutes. Add sliced garlic, shallot, and red pepper flakes and cook, stirring occasionally, until shallot is pale golden, about 2 minutes. Stir in tomatoes, beans, garlic paste, and stock and simmer, uncovered, stirring occasionally, until slightly thickened and reduced by half, 15 to 20 minutes.
  • Meanwhile, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander. Toss pasta with sausage mixture, parsley, basil, cheese, and salt to taste in a large bowl (or in pasta pot) until combined well. Serve with additional cheese, if desired.

1/3 cup olive oil
2 sprigs rosemary
8 ounces spicy Italian sausage, casings removed
1 (15.5-ounce) can chickpeas or cannellini (white kidney) beans, rinsed, patted dry
1/4 cup dry white wine
12 ounces paccheri, rigatoni, or other large tubular pasta
Kosher salt
8 cups (lightly packed) torn escarole, kale, or Swiss chard leaves
3/4 cup finely grated Parmesan, divided
Freshly ground black pepper
2 tablespoons unsalted butter

Steps:

  • Heat oil in a large Dutch oven or other heavy pot over medium-high. Fry rosemary, turning, until crisp, about 2 minutes. Transfer to paper towels to drain.
  • Add sausage to same pot and cook, breaking up with a wooden spoon and stirring occasionally, until browned and cooked through, 8-10 minutes. Transfer with a slotted spoon to a plate.
  • Add chickpeas to pot and cook, tossing occasionally and mashing some chickpeas with spoon, until browned in spots, about 5 minutes. Transfer about half of chickpeas to plate with sausage. Add wine to pot, bring to a boil, and cook until liquid is almost completely evaporated, about 2 minutes.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente, about 3 minutes less than package directions.
  • Using a spider or a slotted spoon, transfer pasta to pot with chickpeas and add escarole and 1 cup pasta cooking liquid. Cook, tossing often, until escarole is wilted, pasta is al dente, and sauce is thickened, about 4 minutes. Add another 1/4 cup pasta cooking liquid, then gradually add 1/2 cup cheese, tossing until melted and dissolved into a luxurious, glossy sauce. Thin with more pasta cooking liquid if needed. Season with pepper, and more salt if needed. Add butter and toss to combine, then mix in reserved sausage and chickpeas.
  • Divide pasta among bowls. Crumble rosemary over top and sprinkle with remaining 1/4 cup cheese.

1 large head of broccoli, about 1 1/2 pounds, cut into small florets
3 garlic cloves, peeled
3/4 lb rigatoni pasta
1 tablespoon olive oil, plus more for pan
1 lb italian-style turkey sausage, with fennel (removed from casing if uncooked or thinly sliced if precooked)
1 (15 ounce) can great northern beans, rinsed and drained (1 can cannellini beans can be used)
2/3 lb skim mozzarella cheese, grated, 1/4 cup reserved
3/4 cup skim milk ricotta cheese
1/2 cup chicken stock
1/2 cup pecorino romano cheese, finely grated, 1/4 cup reserved
1 teaspoon salt
1/2 teaspoon ground pepper
3 tablespoons breadcrumbs
1 tablespoon olive oil

Steps:

  • Preheat oven to 375 degrees. Lightly oil a 9-x-13-inch gratin or baking dish.
  • In a separate pot, bring water to a boil and add 1/2 teaspoon of salt, broccoli and garlic. Simmer the broccoli and garlic for 5 minutes, until softened. With a slotted spoon remove the broccoli and garlic to a large bowl. Bring the water back to the boil, add the pasta, and cook the pasta for about 2 minutes less than the package directions suggest, about 11 minutes. The pasta should be al dente, a little firm.
  • Meanwhile, in a large Dutch oven set over medium-high heat, heat the oil. Add sausage and the garlic cloves from the broccoli bowl, and cook, stirring frequently until meat is fully cooked and no longer pink, about 4 to 5 minutes, if using fresh sausage. (If using fully cooked sausage, cook until surface is golden, about 2 to 3 minutes.) With a slotted spoon, transfer sausage to the broccoli, and drain most of the oil from the pan, leaving about 2 tablespoons. Discard the garlic.
  • Toss drained pasta with sausage mixture. Add beans, stock, 3/4 cup of grated mozzarella cheese and all of the ricotta. Add remaining salt and pepper. Gently toss. Transfer to prepared gratin or baking dish, top with breadcrumbs, remaining 1/4 cup of grated cheese and 1/4 cup mozzarella cheese, and drizzle with olive oil.
  • If making this in advance, allow the mixture to come to room temperature, cover with plastic wrap and place in the refrigerator.
  • Bake for 25 minutes, until heated through and crusty on top.

1 (28 ounce) can plum tomatoes, undrained and chopped
2 tablespoons tomato paste
1/4 teaspoon cayenne pepper (or adjust to heat level, can use crushed chili flakes)
1 (15 ounce) can kidney beans, rinsed and drained
1 teaspoon seasoning salt (or to taste, can use white salt)
1/2 teaspoon ground black pepper (or to taste)
1 lb dry penne pasta (can use more or less if desired)
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley
12 ounces provolone cheese, grated (more if desired)

Steps:

  • Set oven to 400 degrees F.
  • Grease a 13 x 9-inch baking pan.
  • Cook the pasta until just al dente (do not overcook); drain, do not rinse and immediately toss with 1-2 Tbsp oil to prevent sticking; set aside.
  • In a large fry pan, sauté the sausage, ground beef, onion, garlic, dried oregano and thyme, over med-high heat, until the sausage and the ground beef are brown, crumbling with a fork while cooking (about 6-7 minutes).
  • Add in the undrained tomatoes, tomato paste and the cayenne pepper; simmer for 5-6 minutes (breaking up tomatoes with the back of a spoon).
  • Add in the kidney beans, and heat through.
  • Season with salt and pepper.
  • Add in the cooked pasta, Parmesan cheese and parsley; toss to combine.
  • Transfer the mixture to a prepared baking dish.
  • Top with grated cheese.
  • Bake for 25 minutes, or until cheese melts and the mixture is hot and bubbly.
