4 center-cut bacon strips
2 celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed
1 cup water
1 bottle (8 ounces) clam juice
3 teaspoons reduced-sodium chicken bouillon granules
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes., In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. Bring to a boil; cook and stir until thickened, 1-2 minutes., Stir in clams and remaining half-and-half; heat through (do not boil). Crumble the cooked bacon; sprinkle over each serving.

Two 10-ounce cans clams
Two 8-ounce bottles clam juice
3 thick slices bacon, chopped
3 cloves garlic, diced
2 ribs celery, diced
1 onion, diced
2 teaspoons chopped fresh thyme
1 bay leaf
Salt and freshly ground pepper
3 tablespoons all-purpose flour
3 medium red potatoes, scrubbed and diced
1 cup half-and-half
1 tablespoon white wine vinegar
Dash of hot sauce
Dash of Worcestershire sauce
Snipped fresh chives, for serving
Heat a large Dutch oven over medium heat.

Steps:

  • Drain the canned clams over a measuring cup and reserve the juice. You will need 3 cups reserved juice in total, so add the 2 bottles of clam juice to make a total of 3 cups.
  • Add the bacon to the Dutch oven and saute long enough for the bacon to begin to render its fat but not begin to brown, about 3 minutes. Turn up the heat and add the garlic, celery, onions, thyme, bay leaf and some salt and pepper. Saute until tender and fragrant, 4 to 5 minutes. Add the flour and cook until pasty and blonde. Stir in the clam juice, and then add the potatoes. Bring to a simmer and cook until the potatoes are just tender, about 8 minutes.
  • Add the half-and-half and clams and cook for an additional 5 minutes. Season with the vinegar, hot sauce, Worcestershire sauce and salt and pepper. Serve with the snipped chives.

1 cup minced onion
1 cup diced celery
2 cups cubed potatoes
1 cup diced carrots
¾ cup butter
¾ cup all-purpose flour
1 quart half-and-half cream
2 tablespoons red wine vinegar
1 ½ teaspoons salt
ground black pepper to taste

Steps:

  • Drain juice from clams into a large skillet over the onions, celery, potatoes and carrots. Add water to cover, and cook over medium heat until tender.
  • Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables and clam juice. Heat through, but do not boil.
  • Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, stir in vinegar, and season with salt and pepper.

2 slices thick-cut bacon, cut into small dice
1 large onion, cut into medium dice
½ teaspoon dried thyme leaves
2 bay leaves
1 ½ cups leftover mashed potatoes
2 (8 ounce) bottles clam juice
4 (6.5 ounce) cans minced clams (clams and juice separated)
1 cup water
9 new potatoes, cut into 1/2 -inch cubes
½ cup heavy cream
2 tablespoons minced fresh parsley
Salt and pepper, to taste

Steps:

  • In a large soup kettle, fry bacon over medium heat until bacon crisps, about 5 minutes. Remove bacon; set aside.
  • Keep 2 tablespoons bacon fat in pan. (If necessary, add oil to yield 2 tablespoons.) Add onion and saute until soft, about 5 minutes. Add thyme and bay leaves; cook until fragrant, 30 seconds or so.
  • Whisk in mashed potatoes, clam juice (bottled and what you've drained from the clams) and 1 cup of water. Add new potatoes and bring to a simmer. Reduce heat; continue to simmer, partially covered, until potatoes are tender, about 10 minutes. Stir in clams, cream and parsley; season with salt and pepper.
  • Heat through and serve, garnishing each bowl with reserved bacon.

6 thick-sliced peppered bacon strips, chopped
3 tablespoons butter
1 medium onion, chopped
1 medium sweet red pepper, chopped
2 cans (4 ounces each) chopped green chiles
4 garlic cloves, minced
3 cans (6-1/2 ounces each) chopped clams, undrained
4 cups diced Yukon Gold potatoes (about 1-1/2 pounds)
1/2 cup chicken stock
2 cups half-and-half cream
1 envelope taco seasoning
2 tablespoons chopped fresh cilantro, divided

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add bacon. Cook until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Add butter to drippings in pressure cooker. Cook and stir onion, red pepper and chiles until tender, 7-9 minutes. Add garlic; cook 1 minute longer. Press cancel., Drain clams; pour juice into pressure cooker. Set clams aside. Stir in potatoes and stock. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 4 minutes. Allow pressure to release naturally for 4 minutes; quick-release any remaining pressure. Select sauté setting and adjust for low heat. Add clams, cream, taco seasoning and 1 tablespoon cilantro; simmer, uncovered, until mixture is heated through, 4-5 minutes, stirring occasionally. Press cancel. 1 lb potato, peeled
1/2 tablespoon butter
3/4 cup finely chopped onion
1 small garlic clove, very finely minced
1 cup half-and-half
1/2 cup whipping cream
4 (8 ounce) cans chopped clams, drained (juice reserved, pass through strainer lined with a bit of cheesecloth to catch any grit)
1/4 teaspoon salt (preferably seasoned)
1 pinch dried thyme
white pepper
4 tablespoons butter
2 tablespoons fresh parsley, minced

Steps:

  • Cook potatoes in salted water until tender, about 25 minutes. Drain. Mash lightly.
  • In a saucepan, melt butter over medium heat and saute onion and garlic until translucent, and starting to go a light gold, 6-8 minutes.
  • Add the half and half and cream, ¾ cup reserved clam juice, salt, thyme and white pepper and heat to scalding.
  • Add potatoes and clams.
  • Bring to simmer, stirring frequently. Thin with some milk if desired.
  • Serve immediately, floating 1 pat of butter per bowl of soup and dusting with parsley.

4 slices bacon, cut into 1/4-inch pieces
1 tablespoon butter
½ cup diced onion
¼ teaspoon kosher salt, or more to taste
1 tablespoon all-purpose flour
1 (6.5 ounce) can whole clams
1 (6.5 ounce) can minced clams
1 (8 ounce) bottle clam juice
1 (8 ounce) package shell pasta
½ cup peeled, diced Yukon Gold potatoes
⅓ cup diced celery
1 sprig fresh tarragon
1 pinch cayenne pepper, or to taste
½ cup heavy cream
1 tablespoon finely chopped Italian parsley, or more to taste
2 tablespoons freshly grated Parmigiano-Reggiano cheese, or more to taste

Steps:

  • Place bacon in a large skillet and cook over medium heat, turning occasionally, until crisp, about 10 to 12 minutes. Pour bacon and grease into a strainer set over a bowl to let the grease drain out. Reserve bacon until needed and discard grease or set aside for another use.
  • Place the skillet back over medium heat and add butter, onion, and ¼ teaspoon salt. Cook and stir until onion starts to soften and turn translucent, about 5 minutes. Add flour and cook and stir for about 1 minute to create a roux.
  • Drain both cans clams and set clams aside for later.
  • Pour clam juice from the cans and the bottle into the skillet; whisk to scrape off any bits from the bottom of the skillet. Raise heat to medium-high and let come to a simmer.
  • While the clam juice is coming to a simmer, bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, 9 to 12 minutes.
  • Add potatoes, celery, tarragon, and cayenne to the simmering clam juice mixture. Let simmer for 5 minutes. Reduce heat to medium-low and add the reserved clams, cream, and all but 1 tablespoon of the reserved bacon. Simmer gently for another 10 minutes, then remove and discard tarragon sprig.
  • Drain pasta well and add to the clam sauce; mix until well combined. Turn off the heat and let sit for 1 minute.
  • Stir in parsley and Parmesan cheese. Taste and adjust salt if necessary.
  • Ladle into warm bowls. Sprinkle with more Parmesan, crumbled bacon, and parsley.

3 cups clam juice
3 pints heavy cream
1/4 teaspoon white pepper
4 cups potatoes, diced (about 3 large potatoes)
10 drops Tabasco sauce
2 teaspoons Worcestershire sauce

Steps:

  • In an 10 quart pot, melt butter and sauté bacon over low heat until cooked, but do not brown.
  • Add diced onion and celery, and sauté until tender and translucent.
  • Add clam broth, white pepper, worcestershire sauce, tabasco sauce, potatoes and herbs.
  • Cook approximately 13 minutes to soften potatoes and incorporate flavors.
  • Add heavy cream and chopped clams. Bring to boil,.
  • Mix cornstarch and water together and add, stirring briskly.

Steps:

  • Boil potatoes in large saucepan of salted water until just tender, about 6 minutes. Drain potatoes well.
  • Melt butter in heavy large pot over medium-high heat. Add celery and onion and sauté until onion is translucent, about 6 minutes. Add flour and stir 2 minutes. Gradually mix in clam juice. Simmer until beginning to thicken, stirring frequently, about 2 minutes. Add clams with juices, parsley, thyme, marjoram, dill, garlic, liquid smoke and potatoes. Simmer 5 minutes to blend flavors. Add cream and milk. Bring to simmer. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before serving.)

  • It is important that you stir constantly while cooking.

1 ½ teaspoons salt
½ teaspoon freshly ground black pepper
1 ½ teaspoons white sugar
2 tablespoons red wine vinegar

Steps:

  • In a large stockpot, saute bacon until almost crisp. Drain fat. Add clam juice, onion, carrots, water, celery, and parsley. Bring to a boil, reduce heat and simmer 20 minutes.
  • Add potatoes and simmer 20 more minutes. At the time you add potatoes start cream sauce.
  • In a Dutch oven melt butter and add flour; blend until smooth. Slowly pour in cream, stirring constantly. DO NOT BOIL! When smooth, transfer to the stockpot.
  • Stir in clams, salt, pepper, sugar and red wine vinegar. Simmer, never let boil, until smooth and slightly thickened, about 30 to 45 minutes.
