NEAPOLITAN-STYLE PIZZA DOUGH WITH GARLIC AND ITALIAN SEASONINGS
Neapolitan-style pizza dough variation makes 2 12-ounce pizzas. Apply your sauce, cheese, toppings, and a final spread of cheese to tie it all together.

Steps:
- In a large bowl, mix the flour, salt, and yeast until thoroughly combined. Mix in ice water, scraping the bowl as you mix, until all the flour and water have been incorporated into a soft dough. Mix in 2 tablespoons of olive oil. Turn the dough out onto a floured work surface, and knead until the dough is firm but slightly sticky, mixing in more flour if needed. Knead the granulated garlic and Italian seasoning into the dough. (The kneading step can be done in a bread machine set on the Dough setting.)
- Form the dough into a round, and place into an oiled bowl. Brush the top with 1/2 teaspoon of olive oil, cover the bowl with plastic wrap, and allow the dough to rise until double, 1 to 2 hours. Punch down the dough, and cut in half. Form each half into a 12-inch pizza crust, and place on pizza pans.
- Move a rack to the bottom position in oven, and preheat oven to 450 degrees F (230 degrees C).
- Bake the pizza crusts on the bottom rack just until firm, 3 to 7 minutes. Allow the crusts to cool for about 10 minutes before topping with sauce, cheese, or other desired ingredients and returning to oven to bake.

SEMI-HOMEMADE GOURMET PIZZA
I made this for my husband on our recipe night. I was afraid it would be too "gourmet" for his meat & potatoes tastebuds, but he actually really enjoyed it. I loved it too. It's a keeper!

Steps:
- Spread out pillsbury pizza crust & flatten as much as you can. They tend to rise quite a bit.
- Spread both sides with olive oil.
- Sprinkle both sides generously with italian or pizza seasoning.
- Bake at 350 for 12 minutes and remove from oven.
- While baking crust, begin preparing ingredients. Chop and saute sausage until browned.
- Remove from pan & spoon into separate bowl.
- Add onion, basil, mushrooms and tomato slices into saute pan and add dash of olive oil (my husband didn't care for the tomatoes, but they were easily removed after cooking).
- Cook veggies until onions are translucent and remove from heat.
- Flip crust over so that crusty side is facing up and spoon sauce onto crust.
- Sprinkle sausage and veggie mixture over sauce.
- Sprinkle mozzarella cheese evenly onto pizza and top with colby jack cheese.
- Bake pizza at 350 for 15 minutes.
- Cool for a few minutes and slice into 8 pieces.

PAT'S DELICIOUS SEMI-HOMEMADE ITALIAN PIZZA
I'll make you a personal guarantee: If this is not the best pizza you ever ate, you come to my house and I'll show you how to make it correctly because you must have messed something up! (heh... heh... heh.... *.* ). Really, no kidding, this IS very good pizza and incredibly easy to turn out. I make it two times a week when enough people are around to justify my efforts. I also use this pizza all the time as a covered dish/appetizer, (I usually make up 2 or 3 because it goes fast!), doing everything but the final baking (which I do on-site) ahead of time. Just cover the unbaked pizza with aluminum foil and everyone will be glad to give you the use of their ovens when you arrive. And did I mention that this is REALLY cheap to make? One final thing -- this is a great recipe in which you can involve the kids and, before you know it, they'll be handling the entire process on their own! Enjoy, my brothers and sisters!

- Pour the two packets of pizza dough mix into a large mixing bowl. Add the water and mix with a fork until a ball forms. Ignore the package directions and do the following: cover with a damp towel and set in a warm place for 15 minutes, allowing the dough to rise a bit.
- Preheat the oven to 450-degrees F.
- After the dough his risen, spray a 16-inch (or 18-inch) pizza pan with the cooking spray (I use an olive oil spray) and place the dough ball in the center. Wash your hands and rub the 1 teaspoon of olive oil on them -- work the pizza dough out toward the edges. TAKE YOUR TIME! When this is accomplished, place the pizza dough in the preheated oven for 8-9 minutes until there is some VERY SLIGHT BROWNING here and there on the dough. Remove it from the oven and allow it to cool for 3-4 minutes so you can work the sauce on to it without burning your hands.
- Once you have the sauce on the pizza, sprinkle on the sliced olives and any other toppings you wish, (such as cooked sausage, banana peppers, etc., but NOT the pepperoni). Then, cover the pizza evenly with the cheeses. Cover the pizza with the pepperoni slices and sprinkle the basil all over the pizza.
- Return the pizza to the 450-degree F. oven, on the rack just below the center, for about 10 more minutes, until you just get some slight browning on the cheese. Remove from the oven and slice with a pizza cutter. Wait 2 minutes before plating up the pizza.
- NOTE: This makes a super covered dish if you get the pizza ready for the final baking and then do the final baking on-site. Cut it into 2-inch squares for this. I like to take 2 or 3 pizzas along for this as you'll see that it disappears much faster then the entree dish!

- In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit until creamy (about 10 minutes).
- Stir in olive oil, whole wheat flour, salt and 4 cups of white flour into yeast mixture.
- Mix in remaining flour 1/2 cup at a time, stirring well after each addition.
- When dough has pulled together, put onto lightly floured surface and knead until smooth and elastic (about 4 minutes).
- Lightly oil another large mixing bowl, place dough in bowl and turn to coat.
- Cover with damp cloth and put in warm place until dough has doubled in size (about 1 hour).
- Deflate the dough and put onto lightly floured surface. Divide dough into 3 equal parts and form into rounds. Cover rounds and let them rest for about 10 minutes. Preheat oven to 425 degrees F.
- Use a rolling pin to roll the dough into desired shape. Cover dough with your favorite toppings and bake for about 20 minutes or until crust and cheese are golden brown.
SEMI-HOMEMADE ITALIAN SAUSAGES & PEPPERS
Total comfort food that couldn't be easier!!! Whip it together in 5 minutes and simmer for 45 minutes. Italian restaurants usually serve this on a bun/roll, but we prefer it "as is" (without bun and low carb). Make sure you cook a little extra. . .cut up your sausage, mix back in the sauce, place the sauce overtop pasta noodles, cover with cheese and bake. . .what wonderful leftovers! This freezes very well if you are a good think-ahead kind of cook.

- In a large skillet, mix together spaghetti sauce, peppers, onions (if you are using them) and drained tomatoes.
- Set your sausage links in the sauce.
- Cover and simmer on med-low for 45 minutes.
- If sauce is thick enough for you, move on to the next step. Otherwise, if you prefer a thicker sauce, remove the sausages and thicken your marinara sauce by adding 1 tsp of cornstarch mixed with 1 tbsp cold water to your sauce, turn up to med-high heat and bring to a boil, return it to a simmer for 5 more minutes and it should be plenty thick.
- To serve, place one sausage on your plate, cover with 1/2 cup of sauce and sprinkle with the cheeses to your liking (cheese will melt immediately). Note that you can serve these in buns/rolls if you like!

- Pour water into bowl.
- Sprinkle with yeast and leave for five minutes.
- Stir and add sugar, salt, and olive oil. Beat well.
- Stir in half of flour.
- Beat until smooth.
- Add as much of the rest of the flour as needed to make the dough just firm enough to manage.
- Knead for five minutes.
- Roll it into a ball and flatten.
- Sprinkle corn meal over pan and stretch dough over it. Make ridges at the edges.
- Let rise for fifteen minutes.
- Lightly brush or spray the dough with some oil.
- Add your choice of toppings. Heat for 20-30 minutes at 425°F.

REAL ITALIAN PIZZA DOUGH
Pizza dough as it is made in Italy. When I first moved to Italy, I was surprised to see that deciding to eat a pizza for dinner meant whipping up pizza dough with a few common ingredients a couple of hours before. Using fresh, compressed yeast, it rises in an hour. Stretchy, chewy, and so full of flavor, there's no need to order out. This dough works for calzone as well as focaccia, and the recipe doubles perfectly!

- Preheat the oven to the lowest setting possible.
- Combine 4 cups flour and salt in the bowl of a stand mixer fitted with the dough hook attachment; turn mixer on low speed. Crumble yeast into small pieces and add to the flour. Slowly pour in water. Scrape the sides to make sure all flour is incorporated and mix until dough begins to pull away from the sides and form a ball. Drizzle in oil and mix until fully incorporated.
- Knead on low speed for 5 or 6 minutes, adding 1 to 2 tablespoons extra flour if needed. Remove dough from the bowl and use your hands to form a ball. Return dough to the bowl and score the top with an "x." Cover with a damp cloth.
- Turn oven off and place dough in the oven to rise for at least 1 hour, or up to 8 hours.
- Remove dough from the oven and reattach the bowl to the stand mixer. Uncover and punch down dough. Knead on low speed for 5 minutes.
- Meanwhile, place a pizza stone or tray on the bottom oven rack and preheat oven to 450 degrees F (230 degrees C).
- Cut dough into 4 equal pieces and roll each one into ball. Dust with flour if needed. Place balls on a sheet pan and cover with a damp cloth. Roll out each ball into a 9-inch circle and top with desired toppings (no more than 1 cup sauce per pizza).
- Place pizza on the pizza stone in the preheated oven. Immediately lower the temperature to 410 degrees F (210 degrees C) and bake for 10 to 12 minutes; actual length of time will depend on your toppings. Repeat to make remaining pizzas.
