NECTARINE CLAFOUTIS
When it comes to easy desserts, it's hard to beat the French country classic known as clafoutis. Baked until puffed and golden, the custard-like cake works well with almost any seasonal fruit. This version calls for a stone fruit that's often underused in baking: nectarines.

Steps:
- Preheat oven to 375 degrees, with a 10-inch baking dish (1 1/2 to 2 inches deep) on center rack.
- Bring a small pot of water to a boil. With a sharp knife, cut a shallow X into bottom of each nectarine. Add to pot and blanch 30 to 40 seconds. When cool enough to handle, use a paring knife to remove skin and pit; cut into 1/4-inch slices.
- Puree milk, cream, eggs, yolks, vanilla seeds, granulated sugar, flour, and salt in a blender until smooth, about 2 minutes. Strain through a fine-mesh sieve into a liquid-measuring cup.
- Carefully remove preheated baking dish from oven and quickly brush with butter (caution: it will sizzle). Immediately pour in just enough batter to coat bottom of dish. Return to oven and bake until golden brown, about 5 minutes.
- Pour in remaining batter and arrange nectarines in a single layer, covering as much surface area as possible. Return to oven and bake until puffed and browned, 35 to 40 minutes more. Let cool slightly. Dust with confectioner's sugar; serve.
PEACH CLAFOUTI
The egg-rich batter to this French-inspired dessert becomes custard-like when baked, while the peaches become soft and bursting with sweetness once exposed to the heat of the oven.

PEACH CLAFOUTIS INA GARTEN
Peach Clafoutis Ina Garten is one of the most delicious ways to savor summer's most beloved fresh fruit. Isn't it fun to say clafoutis, pronounced (ka-for-tee)? The term is derived from the old Occitan verb Clair, which means "to fill." Filling a greased baking dish with sliced, juicy peaches surrounded by a gently sweet, milk, egg, and flour mixture. It's a pillowy pancake-like dish that's one of the most beloved home-baked sweets in French cuisine.

Steps:
- In a blender, combine the eggs, milk, sugar, vanilla, cinnamon, lemon zest, and salt. To blend, pulse a few times. Pulse in the flour until the mixture is smooth. Place the batter in the refrigerator for at least 30 minutes to rest.
- Meanwhile, cut the peaches in half and slice them 1/4 inch thick. Toss the peach slices with the bourbon or brandy and set aside for up to 30 minutes while the batter settles.
- Preheat the oven to 350 degrees Fahrenheit. Preheat the oven to 350°F and butter a 10-inch round pan, ceramic casserole, or quiche dish.
- Set aside the peaches after removing them from the brandy mixture with a slotted spoon. Swirl the remaining bourbon brandy mixture in the mixer to combine. DO NOT MIX AGAIN.
- Carefully remove the heated pan from the oven. Pour the batter in. Arrange peach slices on top. Alternatively, you might arrange the peaches in the pan first, followed by the batter - either method works. Garnish with coarse sugar
- Return the pans to the oven and bake for 40-45 minutes. Alternatively, bake until the top is golden and puffy and the custard has set. Allow cooling somewhat before sprinkling with powdered sugar and serving. Toppings such as vanilla ice cream or whipped cream are excellent choices.

APRICOT CLAFOUTI
Steps:
- Preheat the oven to 375 degrees F. Butter a 9- to 10-inch shallow pie plate.
- Combine the egg yolks and 1/3 cup of the sugar in a large bowl. Using an electric mixer, beat on medium-high speed until ribbons form when you lift the beater just slightly out of the batter, about 3 minutes. Add the flour, heavy cream and vanilla extract. Reduce the speed to low and beat until thoroughly blended, stopping the mixer occasionally to scrape down the sides of the bowl with a rubber spatula.
- Slide the prepared pie plate into the oven to preheat for 4 to 5 minutes. Meanwhile, whisk together the egg whites and salt in a small bowl for 30 seconds; add to the batter and beat with the mixer on low speed until just incorporated, 1 to 2 minutes. Combine the apricots, lemon zest and the remaining 2 tablespoons sugar in a medium bowl, and gently stir until the apricots are thoroughly coated. Remove the pie plate from the oven, pour in the apricots in a decorative pattern, and top with the batter.
- Bake until set in the middle, 30 to 35 minutes. Serve warm with a small dollop of the whipped cream, if using.
- Add the heavy cream, sugar, vanilla and lemon zest to a stand mixer fitted with the whisk attachment. Whip just until soft peaks form.

PEACH AND NECTARINE CRUMBLE
Peaches and nectarines are so in season right now - any farmer's market will be guaranteed have at least 3 or 4 vendors selling 'em. This recipe uses up those stone fruits in a way that elevates them without being too fussy. It's pretty enough to be a treat for house guests, but still easy enough to make for an indulgent breakfast.
