- Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large bowl, combine peaches and preserves. Transfer to crust. In a small bowl, whisk sugar, sour cream, egg yolks, flour and vanilla. Pour over peaches., Bake for 30 minutes. Meanwhile, in a small bowl, combine flour, sugars, pecans and cinnamon. Cut in butter until crumbly; sprinkle over pie. , Bake until a knife inserted in the center comes out clean and topping is golden brown, 15-20 minutes. Cover edge with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. Cool completely on a wire rack for 3 hours before serving. Store in the refrigerator.

- For the fruit: In a bowl, combine the peaches, sugar, flour, lemon juice and salt. Stir and set aside.
- For the all-butter lemon pie crust: Combine the flour, salt and lemon zest in a large bowl. Add the butter and use a pastry cutter to gradually work it into the flour, until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.
- Lightly beat the egg with a fork in a small bowl, then add it to the mixture. Next, add the cold water and vinegar and stir together until just combined.
- Divide the dough into 2 halves, form the halves into dough balls and place each ball into a resealable plastic bag. Using a rolling pin, slightly flatten each ball of dough (to about 1/2 inch thick) to make rolling easier later. Seal the bags and chill for at least 20 minutes (or freeze if not using immediately).
- Preheat the oven to 400 degrees F. Line a 9-by-13-inch baking sheet with parchment, overhanging the parchment 3 inches on opposite sides of the baking sheet to resemble a sling (so you can lift the pie out).
- With a rolling pin on a lightly floured surface, begin rolling each piece of dough into a 9-by-13-inch rectangle. Roll the dough from the center outward. Be gentle and patient; it'll take a little time to get the dough completely rolled out.
- Place one rectangle in the bottom of the prepared baking sheet. Spread out the fruit mixture evenly on top. Place the second crust on top of the fruit. Press and fold the edges together and crimp. Cut several vents in the top of the pastry in a flower pattern.
- Bake until the crust is golden brown, about 1 hour 10 minutes. Cool for about an hour before lifting out and cutting.

- In a medium saucepan, combine the sugar, corn syrup, butter, water, and cornstarch. Bring to a full boil, and remove from heat.

- Place cookie sheet on oven rack. Heat oven to 400°F.
- In large bowl, mix sugar, flour and cinnamon. Stir in peaches and lemon juice. Spoon into frozen crust. While second crust is still in pan and frozen, remove crimp with sharp knife. Remove crust from pan and center frozen crust upside down on top of filled pie. Let thaw 10 minutes; crimp edges together. Cut 2 or 3 slits in top crust. - Refrigerate pie shell until ready to use.
- Preheat the oven to 350°.
- Scatter the peaches over the bottom of the piecrust.
- In a bowl, combine the sugar, sour cream, egg yolks, and flour.
- Using a whisk, stir to mix everything into a thick, rich sauce.
- Pour this evenly over the peaches.
- Place the pin on the center shelf of the oven.
- Bake until the custard is set and the crust is handsomely browned, about 30 minutes.
- Topping-in the bowl of a food processor, combine the butter, sugar, flour, and cinnamon.
- Pulse the machine on and off, until the mixture resembles small peas.
- Stir in the chopped pecans; set aside.

SOUR CREAM PEACH PECAN PIE
If you love peach pie, you must try this! I made it for a friend, and we almost consumed the whole pie between the two us! This is in the latest edition of Taste of Home magazine. Sherrell Dikes of Arkansas won the $2,500 grand prize at the magazine's sponsored "Great American Pie Show." It's very easy, especialy if you cheated like I did and use a ready-made pie crust!

- Line a 9-in pie plate with pastry; trim and flute edges.
- In a large bowl, combine peaches and preserves. Transfer to pastry.
- In a small bowl, whisk the sugar, sour cream, egg yolks, flour and vanilla. Pour over peaches.

- Make the crust. Place pecans in the bowl of a food processor and process until finely ground. Add flour, salt, and sugar, and pulse to combine. Add butter and shortening and pulse until a coarse meal forms. Add brandy and pulse to combine. Add water 1 tablespoon at a time until the dough comes together when pressed and is quite moist. Dump dough onto plastic wrap. Wrap tightly, forming into a disc as you do so. Refrigerate for at least 1 hour and up to 2 days.
- Make the filling. In a large bowl, stir or whisk together maple syrup, peach brandy, eggs, vanilla, salt, butter, sugars, and Golden Syrup until a homogeneous mixture is formed. Stir in pecans.
- Remove crust from refrigerator and roll on a lightly floured surface until it is large enough to fit your pie pan and about 1/8 inch thick. Place in pie pan, being sure to patch any holes. There must not be any holes. Use fingers to flute crust edge as you wish. You should use all of the dough. Place peach slices on top of crust. They should cover the entire bottom. Pour filling over peaches. Refrigerate pie for 30 minutes.
- Preheat oven to 400 degrees F. Place refrigerated pie on foil lined baking sheet. Dab edges of crust with milk or cream using your fingers. Bake for 15 minutes. Reduce oven temperature to 350 degrees F without opening the oven, and bake an additional 1 hour to 1 hour 10 minutes, rotating halfway through if necessary. Cool pie completely before slicing. I actually like to refrigerate it overnight and eat it the next day. It may be stored in the refrigerator for up to 3 days or frozen in quarters wrapped in parchment and foil and placed in a zipper bag for up to 4 months. Thaw at room temperature for a couple hours or in a 350 degree F oven for about 15 minutes.
