This is my favorite twist on a classic martini! The peach gives the drink the perfect hint of sweetness.

- Fill a cocktail shaker with ice. Add peach vodka, cranberry juice, orange liqueur, and a squeeze of lime juice. Cover and shake vigorously until completely chilled, about 1 minute.
- Strain into a chilled wine glass. Garnish with lemon twist.

- Pour the cranberry juice, vodka, schnapps, and lime juice into a cocktail shaker over ice. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled martini glass to serve.

This drink is from the Signature Lounge in the John Hancock Center in Chicago. The Signature Lounge on the 96th floor, opened in 1993, and from there you can gaze out over the Windy City. The drink to order, in true Sex and the City fashion: the sugary Peach Cosmo.

- In a large bowl, dissolve gelatin in water. In a blender, combine peaches, honey and extract; cover and process until smooth. Stir into gelatin mixture. Cover and refrigerate until syrupy, about 1-1/2 hours. , In a large bowl, beat peach mixture on high speed for about 5 minutes or until doubled in volume. Fold in whipped cream. Spoon into dessert dishes. Refrigerate until firm, about 1 hour. Garnish with mint and additional peaches if desired.
