PEACHES "FOSTER" WITH CANE SYRUP PECAN ICE CREAM

Steps:
- Have ready a large bowl of ice and cold water. Bring a 6-quart pot three-fourths full of water to a boil, then gently drop peaches into water and cook 15 seconds. Transfer with a slotted spoon to ice water and cool completely to stop cooking. Remove skin with a paring knife and cut peaches into 1/2-inch-thick wedges, discarding pits.
- Melt butter in a 10- to 12-inch heavy skillet over moderate heat, then stir in brown sugar, rum, cinnamon, and salt until smooth. Add peaches and simmer, stirring and turning peaches over occasionally, until tender, 3 to 5 minutes. Cool until warm and serve over scoops of ice cream.

- In a large skillet, melt butter over medium heat.
- Add sugar, cinnamon and nutmeg, stir and cook 1 minute.
- Remove pan from heat, pour in rum and schnapps and ignite.
- Place back on burner over medium high heat until flames die out.
- Add peach slices, toss gently and cook 1 minute.
- Remove from heat and let cool 5 minutes.
- In the meantime, scoop ice cream into 4 bowls then spoon peaches and sauce over top.

- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
PEACH BUTTER
This is the recipe that I've been using for years and years. I love peach butter because the flavor is so light and yummy. I buy the seconds at the orchard because I don't care what they look like - they're going to be smushed anyways and they're cheaper. Save the pretty ones for canned peach halves.

Steps:
- Wash peaches, remove seeds and any bad spots- DO NOT PEEL!
- Chop peaches.
- Put peaches in pot with water.
- Cook peaches over medium, simmer until peaches are soft, about 15- 20 minutes depending up on the ripeness of your fruit.
- Run the peaches through a food mill till all that is left in the mill are the peach skins which you can discard now.
- You should have about 2 quarts of peach pulp.
- Mix pulp with sugar and cinnamon.
- Cook over medium heat until thick enough to round up on a spoon about 30 minutes to an hour (this may also be done in a slow- 250 degree oven but it takes longer).
- You will need to stir frequently, making sure that it doesn't stick.
- Place in hot sterilized jars, leaving 1/4" headspace.
- Adjust lid and rings on jars.
- Process in a water bath for 10 minutes.
- Remove to counter and allow to cool.

- Melt the butter in a heavy skillet over medium heat. When butter is mostly melted, add the sugar and cinnamon. Cook, stirring, until sugar is dissolved, 4 minutes.
- Carefully add peach schnapps (it will splatter) and peaches. Turn up the heat so mixture is at a low simmer. Cook until peaches are soft and slightly caramelized, 3-5 minutes. Carefully add the rum. Continue to cook the sauce until the rum is hot. Then ignite the rum with a long match. When flames die down, stir the sauce to ensure that all of the alcohol cooks out.
