Cornish Hens with Orange Glaze image

When I make these succulent stuffed Cornish hens, my husband's only complaint is that he gets full before he's ready to quit eating!

3 bacon strips, diced
1/2 cup finely shredded carrot
1/4 cup chopped onion
1-1/2 cups unseasoned stuffing cubes
2 tablespoons minced fresh parsley
1/4 teaspoon dried savory
Dash pepper
3/4 teaspoon chicken bouillon granules, divided
2 tablespoons hot water
2 Cornish game hens (20 to 24 ounces each)
1 tablespoon canola oil
1/4 cup white wine or apple juice
2 tablespoons plus 2/3 cup orange juice, divided
1 tablespoon butter
1 tablespoon brown sugar
1-1/2 teaspoons cornstarch

Steps:

  • In a small skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels. In the drippings, saute carrot and onion until tender; transfer to a large bowl. Stir in stuffing cubes, parsley, savory, pepper and bacon., Dissolve 1/4 teaspoon bouillon in hot water; pour over stuffing mixture and gently toss to moisten. Spoon into hens. Tuck wings under hens; tie legs together. , Place on a greased rack in a roasting pan. Lightly brush hens with oil; loosely cover with foil. Bake at 375° for 30 minutes. , Meanwhile, in a saucepan, bring the wine, 2 tablespoons orange juice and butter to a boil. Remove from the heat; set aside 1/4 cup for sauce and keep warm. , Brush remaining mixture over hens. Bake 40-50 minutes longer or until meat juices run clear and a thermometer inserted in stuffing reads 165°, brushing every 15 minutes with glaze., For sauce, in a small saucepan, combine the brown sugar, cornstarch, and remaining bouillon and orange juice until smooth. Stir in reserved glaze. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with hens.

  • Roast hens in the preheated oven for 35 minutes.

1/4 cup butter, melted
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup orange juice
1/2 cup packed brown sugar
1/2 cup Madeira wine, sherry or chicken broth
2 tablespoons lemon juice
1 teaspoon ground mustard
1/4 teaspoon ground allspice

Steps:

  • Preheat oven to at 350°. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Brush with butter; sprinkle with salt and pepper. Bake, uncovered, for 1 hour., Meanwhile, in a saucepan, combine the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15 minutes. Spoon over hens. Poussins or Cornish Hens With Rosemary, Orange And Shallots image

4 pounds veal bones
2 pounds chicken necks and wings
1 large onion
3 cloves garlic
3 carrots, sliced
2 leeks, sliced, including green part
3/4 bottle dry white wine
2 cups chopped plum tomatoes, with their juice
1 tablespoon tomato paste
1 teaspoon whole black peppercorns
6 sprigs fresh thyme
8 sprigs parsley
8 quarts water
1 orange
8 poussins or Cornish hens, air-dried overnight in refrigerator
2 bunches fresh rosemary
4 tablespoons olive oil
Coarse salt and freshly ground pepper to taste
16 large shallots
2 tablespoons unsalted butter

Steps:

  • The day before, start the stock. Roast the veal bones, chicken necks and bones, onion, garlic and carrots in the oven until well browned. Place in a stock pot with leeks, wine, tomatoes, tomato paste, peppercorns, thyme, parsley and water. Simmer uncovered, for four hours, adding water if necessary (cook for a half-hour after adding extra water). Strain the stock and refrigerate.
  • Preheat oven to 375 degrees. Cut the orange in half and cut one half in four slices. Place half a slice inside each poussin; squeeze the juice from the remaining orange half over each poussin. Place some rosemary leaves inside, leaving plenty for the garnish. Sprinkle with oil, season with salt and pepper and truss.
  • Place the poussins on their side in a roasting pan with the shallots. Roast for 15 minutes, turn on the other side and roast a further 15 minutes. Finish breast-up, place in a serving dish and keep warm.
  • Meanwhile, remove stock from refrigerator and take off the fat, which will be solid. Put the stock in a saucepan and reduce to one-and-a-half cups. Remove the shallots from the roasting pan and keep warm. Degrease the cooking juices from the poussins and add to the stock. Reduce to one-and-a-half cups and correct seasoning. Just before serving, swirl in the butter. Place in a heated sauce boat and keep warm.
  • Place the poussins on a serving dish and then arrange shallots around them and garnish liberally with sprigs of rosemary. Pass the sauce separately.

2 Cornish hens
1/3 cup salt
2 tablespoons butter
salt and pepper
basil
1/2 cup peach preserves (can use Apricot)
1/2 cup butter

Steps:

  • Cut the hens down the backbone (split).
  • Brine the hens: dissolve the salt in water,put hens& salted water into large bowl.
  • (I usually put them into a large plactic bag) refrigerate 2 to 3 hours.
  • Remove hens, Rinse thoroughly, pat dry, prick the skin allover the breast and legs with point of paring knife.
  • Melt the butter in small pan& mix with preserves.
  • Add salt, pepper& basil.
  • Preheat oven to 400 degrees.
  • Place hens in shallow pan (I usually line pan with foil for easy clean-up).
  • Rub hens with butter.
  • Spoon butter& preserve mixture over hens.
  • Bake 35 to 45 minutes.

4 Cornish hens, thawed, rinsed and patted dry
4 oranges
salt
pepper
parsley
cornstarch

Steps:

  • Preheat oven to 500°F.
  • Prepare hens by rubbing mixture of salt and pepper into skin liberally.
  • Place on cookie sheet, breast side up.
  • Roast for 15 minutes at 500°F.
  • Remove from oven and turn breast down; pour 1 1/2 cups water over hens.
  • Turn oven down to 425°F and continue to cook for 1/2 hour.
  • Meanwhile, use a zester to obtain orange peel without cutting into pith of fruit.
  • Slice oranges in half and squeeze juice.
  • Place juice in saucepan with zest and heat thoroughly (do not boil).
  • Remove hens from oven and turn breast-side up and continue cooking for additional 1/2 hour (total cooking time is 1 hour 15 minutes).
  • Blend cornstarch with orange juice/zest mixture and heat to thicken, stirring constantly.
  • To serve: Place hen on plate and pour sauce over. Sprinkle with additional orange zest and parsley.

1 1/4 cups dry red wine
1/2 cup honey

4 1 1/2-pound Cornish game hens, giblets removed
3 small onions, quartered
12 garlic cloves, crushed
1 bunch watercress

Steps:

  • Preheat oven to 400°F. Whisk first 6 ingredients in medium bowl. Pour 2 cups sauce into medium saucepan. Reserve remaining 1 cup sauce.
  • Rinse hens inside and out. Pat hens dry with paper towels. Cut and scrape off any visible fat from hens. Sprinkle inside and out with salt and pepper. Place 3 onion quarters and 3 garlic cloves in cavity of each hen. Arrange hens on rack on large rimmed baking sheet.
  • Roast hens 10 minutes. Baste with reserved 1 cup sauce. Continue roasting until hens are golden and juices run clear when thickest part of thigh is pierced, basting often with pan juices and reserved 1 cup sauce, about 45 minutes longer.
  • Transfer hens to cutting board; tent with foil to keep warm. Transfer pan juices to 4-cup glass measuring cup. Spoon fat off top of pan juices. Pour pan juices into 2 cups sauce in saucepan. Boil until sauce is reduced to 1 1/2 cups, about 12 minutes.
  • Discard onions and garlic from hen cavities. Using poultry shears, cut hens in half lengthwise. Remove backbones. Spoon some sauce onto plates. Place hens atop sauce. Garnish with watercress. Serve with remaining sauce.

  • Preheat oven to 450 degrees F (230 degrees C).

  • Remove hens from marinade and transfer to a roasting pan, discarding leftover marinade.
