1/2 cup butter (softened)
8 ounces cream cheese (softened)
1/2 cup peanut butter
1 teaspoon Vanilla
1/2 cup Brown sugar
1/2 cup powdered sugar
1/3 cup chocolate chips
1/3 cup peanut butter chips
1/4 cup M&M's candies

Steps:

  • In a medium bowl, beat together the butter and cream cheese until light and fluffy. Add the peanut butter, vanilla, brown sugar, and powdered sugar, and mix until smooth.
  • Gently fold in the chocolate chips, peanut butter chips, and M&M's. Serve with fresh apple slices, graham crackers, pretzels, animal crackers, and/or vanilla wafers. Refrigerate any leftovers

2 cups chickpeas
1/4 cup natural peanut butter
1/4 cup + 2 tablespoons maple syrup or honey
1/2 tablespoon vanilla extract
1/4 cup chocolate chips

Steps:

  • Rinse well and peel your chickpeas. I didn't peel mine and I still thought it was great, but I would recommend taking the time to peel them because it will make it so much smoother. I also like to use peanut butter that has no added ingredients so I added a tiny pinch of sea salt, but you don't need to.
  • Throw your chickpeas, peanut butter, maple syrup or honey and vanilla in the food processor and blend till smooth. Taste, but resist the urge to add more sweetener. Just like regular hummus the flavors take time to come out so leave it overnight
  • Remove it from your food processor and stir in the chocolate chips. Serve with apple slices or carrot sticks or on top of graham crackers. Enjoy!

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.

1/4 c peanut butter, creamy
8 oz cream cheese, low-fat
3/4 c powdered sugar
1 tsp vanilla extract
1/2 c mini semi sweet chocolate chips
8 oz mini reese's peanut butter cups

Steps:

  • 1. In a small saucepan over medium heat, add brown sugar and butter. Whisk until completely combined and butter is melted. Bring to a boil, remove from heat.
  • 2. Whisk in the peanut butter and vanilla extract. Set aside to cool.
  • 3. In a large mixing bowl, beat cream cheese with powdered sugar until creamy (about 3-4 minutes.) On low, add in brown sugar mixture (that has cooled to near room temp). Mix until combined. Fold in mini chocolate chips and mini Reese's cups. Serve immediately or store in refrigerator until ready to serve.

1 cup pitted dates {about 10 whole dates}
1 cup very hot water
1 (15 oz) can chickpeas, washed & drained {about 1.5 cups}
3 TBSP peanut butter
1 TBSP vanilla extract
1/8 tsp almond extract
1/2 tsp salt
1/8 tsp baking powder
1/4 cup oats {regular or quick}
1 TBSP chopped peanuts, optional

Steps:

  • Add the dates to a bowl and cover with very hot water. Let sit for 15 minutes.
  • Remove dates from the water, reserving the date-soaking water. Add the dates and two tablespoons of water to the bowl of a food processor. Blend until very smooth {once you add the other ingredients, it will not get any smoother}.
  • Add the chickpeas, peanut butter, vanilla extract, almond extract, salt, and baking powder. Blend until completely smooth.
  • Add in oats. Blend until smooth {adding an additional teaspoon or two of water if needed to help blend}.
  • Transfer to a bowl and serve immediately or refrigerate for up to 5 days. Sprinkle with a little extra salt and/or chopped peanuts before serving, if desired.
  • Serve with fruit slices {or just eat with a spoon}
