My mom helped me post this recipe. These candies are like Reese's Peanut Butter Cups and are fun for kids to make because you don't have to cook them. My mom and I made these together.

1 1/2 cups sifted powdered sugar
1/2 cup creamy peanut butter
3 tablespoons butter or 3 tablespoons margarine, softened
1 lb dipping chocolate or 1 lb confectioner's coating

Steps:

  • Stir together powdered sugar, peanut butter and butter until well mixed.
  • Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet covered with waxed paper.
  • Let balls stand for 20 minutes until dry.
  • Melt the dipping chocolate or confectioners' coating.
  • Drop balls one at a time in melted chocolate.
  • Using a fork, remove from the chocolate, letting excess chocolate drip off.
  • Place back on the waxed paper.
  • Let stand until dry.
  • Store tightly covered in a cool dry place.

½ cup melted butter, melted
1 ½ cups peanut butter
2 ½ cups powdered sugar
1 cup chocolate chips, enough for dipping

Steps:

  • Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
  • Make 1 inch balls and freeze for about 20 minutes or until firm.
  • Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
  • Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.

  • Combine the peanut butter, protein powder, sweetener, and vanilla in a powerful blender or food processor. Process until uniform, scraping down the sides as necessary. The mixture should be very dense, but able to be pressed together. If it's too thin, you can add more protein powder and/or sweetener to taste.
  • Freeze the dough for about 20 minutes to make the mixture firmer and less sticky.

150g dates (I used "mabroom")
100ml plant milk
100g peanut flour
2 tbsp (12-14g) coconut flour
20g chocolate
100ml plant milk
10-15g carob (or cocoa) powder

Steps:

  • First, soak 150g of hot water dates for about 10-15 minutes. Dry them, and then blend them together with 100 milliliters of plant milk. You should get a thick caramel-like mix.
  • Then, pour it in a bowl, and add 100g of peanut flour. Start mixing, and feel free to use your hands, as it will be much easier.
  • The dough will be quite sticky, so add two spoons of coconut flour, and continue mixing.
  • Once everything is well combined, begin to take a bit of the mixture, and start forming balls. Continue until you use all of the dough. You should end up with about 10 pieces. Put them in the freezer for a bit, and start making the chocolate sauce.
  • You will need 100 ml of plant milk and half a spoon of carob or cocoa powder. Then, add 20 gr of dark chocolate. After it melts, add a teaspoon of the cocoa powder (or carob) and mix. Once it cools down, you will have a perfect consistency.
  • Take out the peanut balls from the freezer, and start decorating them. You can use coconut, cacao powder, or as in my case, chocolate.
  • Once you're done, place them in the freezer for a couple of hours. Take them out 10-15 minutes before you want to eat them, as at first, they will be quite frozen.

Steps:

  • Place peanut butter, protein powder, rolled oats, chia seeds, honey, and mini chocolate chips into a medium bowl.
  • Use a wooden spoon or your hands to mix the dough together. At this point, begin to add water by the teaspoon.
  • Depending on how drippy your peanut butter is, you'll need to add more or less water. The water not only helps moisten things so your balls hold shape, but they actually help your balls become less chalky.
  • Use a 1 tablespoon cookie scoop to scoop dough into your palms. Roll into balls until all dough is gone. You should get somewhere between 14-16 balls.
  • Store in the refrigerator for up to a week or in the freezer for up to 3 months.
