Healthy, high-protein, gluten-free peanut butter granola with chia seeds and cocao nibs. Perfectly paired with cold almond milk!

1 c gluten-free old fashion oats
1 c gluten-free quick oats
1/4 c sugar-free maple syrup
1/4 c all natural peanut butter
32g protein powder (I used PEScience 30% OFF code PBCHOCO)
2 tbsp. avocado oil or coconut oil, melted
1 tbsp. cocao nibs
1 tbsp. chia seeds
1 tsp. vanilla extract

Steps:

  • Pre-heat oven to 325F and prepare a baking sheet with parchment paper and set a side.
  • In a large bowl, stir together all dry ingredients: oats, protein, cocao nibs and chia seeds and set a side.
  • In a microwave safe bowl, stir together peanut butter, maple syrup, vanilla and oil until smooth. If peanut butter is too tough to stir, microwave first for 5-10 seconds.
  • Stir your peanut butter mixture into your dry ingredients. Stir until all the oats are evenly coated.
  • Use your hands to spread oats on the baking sheet, breaking them up into small, evenly sized clumps.
  • Bake for 22-25 minutes, stopping half way to gently stir the granola. Let the granola cool completely before serving.

½ Cup Uncooked Prewashed Quinoa (Can Sub Oats)
2 Tbs Honey (or Pure Maple Syrup)
Optional: ¼ Cup Unflavored Protein Powder (I used unflavored grass-fed whey) (See Note 4)

Steps:

  • 1. Preheat oven to 325 F. and line a cookie sheet with parchment paper. 2. In a medium bowl, add all ingredients and mix until well combined and peanut butter is coating everything. 3. Transfer to baking sheet and flatten into an even layer. 4. Bake 325 F. for 10-13 minutes until golden and fragrant. 5. Let cool completely to allow granola to firm up and get crunchy. 6. Serve over yogurt, with milk, or eat it plain! Store in an airtight container in the pantry for up to 2 weeks, or in the refrigerator for up to a month.

2 cups rolled oats (gluten free, if needed)
1/2 cup protein powder (* See notes)
1/3 cup peanut butter (** See notes)
1/4 cup maple syrup (or honey)
1 cup mix-ins of choice (*** See notes)

Steps:

  • Preheat the oven to 180C./350F. Line a large baking tray with parchment paper and set aside.
  • In a large mixing bowl, add the oats and protein powder and mix well. In a microwave safe bowl, add the peanut butter and maple syrup and microwave in 20-second spurts, until the peanut butter has melted.
  • Add the wet ingredients into the dry ingredients and mix well, until fully incorporated.
  • Transfer the protein granola mixture onto the lined baking tray and spread out in an even layer. Place the baking tray in the oven and bake for 13-15 minutes, removing the granola halfway through to stir.
  • Remove the granola from the oven and mix once more, before letting it cool completely. Once it reaches room temperature, transfer into a large mixing bowl and add your mix-ins of choice.

½ cup natural, salted peanut butter
¼ cup maple syrup
1 tablespoon flaxseed meal
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
4 cups rolled oats
½ cup shredded coconut, or to taste
¼ cup pumpkin seeds, or to taste
¼ cup raisins, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 1 large or 2 smaller baking sheets with parchment paper.
  • Mix peanut butter, maple syrup, flaxseed meal, vanilla extract, and cinnamon together in a large bowl. Add oats and coconut and mix until completely combined. Transfer mixture to the prepared baking sheets.
