When our class visited an apple farm this fall, we realized that we all shared a common love apples dipped in caramel. We created this really easy dessert that the whole family can enjoy.

5 large Granny Smith apples - peeled, cored, and thinly sliced
½ cup white sugar
1 tablespoon all-purpose flour
½ teaspoon ground cinnamon
1 tablespoon lemon juice
¼ cup water
1 ½ cups all-purpose flour
1 cup brown sugar
1 cup quick cooking oats
1 cup butter, softened
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 F (175 degree C).
  • In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
  • In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
  • Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).

1/2 teaspoon ground cinnamon
6 large baking apples (about 2 3/4 lb), peeled, cut into 1/2-inch slices (about 6 cups)
2/3 cup Gold Medal™ all-purpose flour
1/2 cup packed brown sugar
1/2 cup cold butter or margarine, cut into small pieces
2/3 cup quick-cooking oats

Steps:

  • Heat oven to 375°F.
  • In large bowl, stir together caramel topping and the cinnamon until blended. Add apples; toss until evenly coated. Spread in ungreased 8-inch square (2-quart) glass baking dish.
  • In same bowl, mix 2/3 cup flour and the brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until mixture looks like coarse crumbs. Stir in oats. Crumble mixture over apples in baking dish.
  • Bake 45 to 50 minutes or until apples are tender and topping is golden brown. If desired, serve with whipped cream and additional caramel topping.

For the topping:
1 cup all-purpose flour
6 tablespoons sugar
3/4 stick (6 tablespoons) cold unsalted butter, cut into small pieces
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
1/8 teaspoon pure almond extract (optional)
1/2 cup sliced almonds
For the filling:
2/3 cup sugar
1/4 cup unsweetened apple juice
3 tablespoons cold unsalted butter, cut into small pieces
Pinch of salt
4 pounds baking apples such as Golden Delicious, Gala, or Crispin (about 7 large), peeled, cored, and cut into 1-inch-thick slices
Special Equipment
2- to 2 1/2-quart shallow baking dish

Steps:

  • Preheat oven to 375°F with rack in middle. Butter baking dish
  • For the topping:
  • Pulse together flour, sugar, butter, salt, and extracts in a food processor until some large clumps form.
  • Set aside 1/4 cup for filling and transfer remaining topping to a bowl. Stir in almonds.
  • For the filling:
  • Cook sugar in a dry 2-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a wooden spoon, until sugar is melted into a deep-golden caramel.
  • Remove from heat and carefully add apple juice, butter, and salt (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved.
  • Put apples in a large bowl and toss with reserved topping mixture and caramel, then spread in baking dish. (Dish will be very full.)
  • Scatter clumps of topping over apples, squeezing small handfuls of topping into clumps when necessary.
  • Bake until apples are tender and top is golden and crisp, about 1 hour. Cool to warm or room temperature.

  • Preheat oven to 375°F. Stir sugar and butter in large skillet over medium heat until smooth sauce forms. Add lemon juice and cook, stirring, until caramel is deep brown, about 5 minutes. Mix in salt, then apples. Toss until apples are evenly coated, about 1 minute. Scrape apples and caramel into 13x9x2-inch glass baking dish; spread evenly. Sprinkle topping evenly over.
  • Bake crisp until apples are tender, sauce is bubbling thickly, and topping is golden, about 50 minutes. Let crisp cool 15 minutes. Serve warm with whipped cream.

  • Preheat the oven to 350°F and grease a 1-cup (8oz) ramekin or oven-safe dish with cooking spray.
  • Combine apple, whole wheat flour, brown sugar replacement and cinnamon in a large bowl and toss. Transfer to ramekin or baking dish.
  • In another bowl, combine oats, almond flour, chopped pecans and cinnamon.
  • And butter cubes and use fingers or a fork to work mixture to form heavy crumbs.
  • Evenly sprinkle topping on top of apple.
  • Transfer mix into ramekin/dish. Sprinkle with chocolate chips if desired.
  • Bake for 25-30 minutes until apples are soft and crumble is browning.
  • To make caramel: Stir together peanut butter, maple syrup and vanilla in a small bowl.
  • Let cool a few minutes, top with ice cream, drizzle on peanut butter caramel and dig in!

1 cup butter, softened
2 cups packed brown sugar
1 (14 ounce) can sweetened condensed milk
1 cup light corn syrup
1 teaspoon vanilla extract
½ cup chopped roasted peanuts
10 Gala apples - peeled, cored and sliced
½ cup butter
¾ cup packed brown sugar
¼ cup white sugar
2 tablespoons flour
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
¼ cup chopped peanuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place 1 cup butter, 2 cups brown sugar, condensed milk, corn syrup, and vanilla extract in a pan over medium-high heat. Stirring constantly, bring mixture to a boil. Lower heat to medium, and continue to stir while mixture simmers for about 12 minutes. Remove from heat, and stir in 1/2 cup peanuts.
  • Place apples in a mixing bowl. Pour in the caramel sauce, and toss gently to coat apples. Pour into the prepared pan.
  • To make the crumb topping, use a pastry blender or two forks to mix 1/2 cup butter with 3/4 cup brown sugar, white sugar, flour, cinnamon, and nutmeg in a mixing bowl until crumbly. Stir in 1/4 cup peanuts. Sprinkle over the top of the apples. Place baking dish on a cookie sheet to prevent spills while baking.
  • Bake in preheated oven until top is crisped and apples can be pierced with a fork, about 45 minutes.

I remember always getting candy and caramel apples at the fair or down the shore when I was a kid. This recipe is a little different with the addition of peanut butter, but just as good or better! If you remember having these as a kid, make them and be a kid again :) Or make them for your kids or grandkids for a treat!

Number Of Ingredients 6

8 -10 small apples, at room temperature
1 cup chopped peanuts
1 (14 ounce) package caramels, unwrapped
1/2 cup creamy peanut butter
2 tablespoons water
wooden craft stick (popsicle sticks)

Steps:

  • Wash and dry apples.
  • Insert stick into stem end of each apple and set aside.
  • Place peanuts in a shallow bowl or pie pan and set aside.
  • In a heavy saucepan, cook caramels, peanut butter and water over low heat until melted and blended, stirring frequently.
  • Remove from heat (you may have to return to heat if mixture starts to set up).
  • Dip and turn each apple in caramel mixture, coating most of the way up.
  • Allow excess to drip into pan.
  • Dip apples in peanuts and place on a waxed paper lined baking sheet or into paper cupcake liners.
  • Store in a cool place or refrigerate.
  • Remove from refrigerator 20 minutes before serving.
