Steps:
- 1. Place the chocolate chips in a medium bowl. Heat the milk on the stove or microwave until just boiling. 45 seconds - 1 minute in the microwave works for me. Keep an eye on it. 2. Pour the hot milk over the chocolate and stir slowly until all the chocolate is melted and you have a smooth even mixture. 3. In small sauce pan, combine the cream, butter and sugar. Bring it to a boil while whisking so it doesn't burn. 4. Add the ganache into the sauce pan and stir on low heat until smooth. 5. Transfer the sauce to your storage or serving container.

PEANUT BUTTER BANANA FRITTERS DRIZZLED WITH CHOCOLATE SAUCE
Steps:
- To make the fritters: Combine the flour, sugar, and baking powder in a bowl and mix. Add the bananas, peanut butter, milk, and egg and whisk until the consistency is such that it can be balled up in a spoon. In a medium sauce pan, heat the peanut oil to 375 degrees F. Using a teaspoon, delicately spoon the peanut-butter-banana batter into the oil, a few balls at a time and deep fry until they fluff up and become crispy and golden brown, about 5 minutes. Strain on wire rack.
- To make the chocolate sauce: In a pot, bring a cup of water to a simmer. Add a large metal bowl over top of the pot. In the metal bowl, add the chocolate chunks and whipping cream, then whisk until it melts together.
- Generously drizzle the chocolate sauce over the fritters and serve.

CHOCOLATE-PEANUT BUTTER MILKSHAKES (AKA PEANUTTY FREEZE)
My husband and I, while we were still dating, used to meet at our local Red Robin after work for our midweek dates. His favorite drink during the sumemr was the Peanutty Freeze. It's basically just a chocolate and peanut butter milkshake. My husband was really disappointed when Red Robin changed their menu many years ago, eliminating the Peanutty Freeze altogether. My husband has missed this milkshake ever since. So I went on a search for the recipe so he would be able to have his favorite milkshake now and then at home. After much begging, I eventually came upon this recipe for the Red Robin Peanutty Freeze (chocolate peanut butter milkshake).

PEANUTTY CHOCOLATE FUDGE
I work for Nestle in Canada and a couple of weeks ago we hand wrapped and delivered 1200 samples of this to the people in our building. It is really, really yummy. (Trust me, I ate enough while wrapping to get a good idea!)

Steps:
- Line 12-x9-inch (3 L) baking dish with waxed paper; lightly butter paper. Set aside.
- In large saucepan, stir together sugar, evaporated milk and butter over medium heat until at full boil; boil for 5 minutes, stirring constantly.
- Remove from heat. Stir in marshmallows, chocolate chips, nuts and vanilla until melted and blended.
- Turn in to prepared pan.
- Scatter small dollops of peanut butter over top. Using the tip of sharp knife, swirl peanut butter into fudge.
- Chill until set. Cut into 1 1/2 inch (4 cm) squares.
- Fudge can be frozen in sealed container for up to 1 month.

- Mix together graham cracker crumbs, chopped peanuts, and melted butter or margarine. Press into the bottom of a 9 x 13 inch pan. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes. Cool.
- Mix together cream cheese, peanut butter, and confectioners' sugar until creamy. Fold in half of the nondairy whipped topping.

- Microwave Directions: Combine chips and peanut butter & coconut oil, microwave on high about 1 minute, stir, continue microwaving 30 seconds at a time if not melted yet. Add cinnamon, vanilla, and water or expresso if using and stir!
- We quit using a microwave for health reasons, now we use the double-boiler method, doesn't take that long! Same thing, melt the chips, peanut-butter & coconut oil over boiling water in the top of a double boiler stirring constantly till melted, then add cinnamon, vanilla and water or expresso if using.
- Drizzle over ice cream, fruit, cake brownies, nuts or pretzels. Sooo good!
- A Note about Gluten and Casein Free Ingredients: Since my family began this diet, we have discovered that you always have to read the labels on the foods you buy. This week when shopping I may buy something that is clearly gfcf and next week when I look for the same item I will notice they have changed the ingredient list adding dry milk, or maltodextrin, or some other questionable ingredient. I find that it's best to stick to unprocessed foods whenever possible- make it from scratch. My son is on the autism spectrum, its not the end of the world if he gets a little gluten or casein, while it may ruin his day, it isn't life threatening. I always watch him for symptoms and note the offending food. Please keep this in mind while selecting your ingredients for my GFCF recipes. Happy Careful Shopping! :)
