FRESH FRUIT COBBLER



Fresh Fruit Cobbler image

Never use more than 1 quart of fruit. Only use fresh fruit for this recipe. Any variation will work! I usually do use sweetened peaches and lightly sugared berries, but this is optional. Serve warm with cream, ice cream, or whipped cream.

1 cup sliced fresh peaches
¾ cup peeled, cored and sliced apple
¾ cup peeled, cored and sliced pear
½ cup blueberries
½ cup pitted and sliced cherries
½ cup pitted and sliced plums
1 egg
¾ cup white sugar
¼ cup milk
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla extract
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Arrange the peaches, apple, pear, blueberries, cherries, and plums in the prepared baking dish. In a medium bowl, beat egg, sugar, and milk. In a separate bowl, sift together flour, baking powder, and salt; stir into the egg mixture. Stir in vanilla and melted butter. Cover the fruit with the batter mixture.
  • Bake 30 minutes in the preheated oven. Cobbler should be bubbly and lightly browned. Serve warm.

A rustic batter is dropped onto fresh pears before being baked for a healthier dessert. Using less sugar than most recipes I've seen, the crisp flavor of the pears is highlighted. My family and I enjoy this at breakfast. I leave 1 or 2 of the pears unpeeled to add a bit of color.

2 tablespoons lemon juice
1 ½ pounds Bosc pears, washed
1 egg
¼ cup milk
1 cup whole wheat flour
¾ teaspoon baking powder
2 tablespoons cane sugar
2 tablespoons brown sugar
3 tablespoons cold butter, cut into cubes
2 tablespoons cornstarch
¼ cup cane sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a round 9x2-inch, 6-cup baking dish.
  • Fill a large bowl halfway with water and add lemon juice. Peel all but 1 of the pears. Core and cut all the pears into eighths. Add pear slices to lemon water to keep them from browning.
  • Combine egg and milk in a bowl and whisk until combined. Set aside.
  • Whisk flour, baking powder, 2 tablespoons cane sugar, and brown sugar together in a separate bowl. Use a fork to cut cold butter into flour mixture until it resemble pebbles.
  • Drain pears and put into a bowl. Sprinkle with corn starch and 1/4 cup cane sugar; toss to coat.
  • Pour milk-egg mixture into the flour mixture. Mix batter until just combined. Add pears to the prepared baking dish. Drop batter by spoonful onto the pears.
  • Bake in the preheated oven until browned on top, about 25 minutes. Allow to cool for 10 minutes before serving.

4 ounces margarine (1 stick)
3/4 cup flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup milk
1 egg

Steps:

  • Mix pears with 1/2 cup sugar and let stand.
  • Put margarine in 2-quart casserole and place in 325° oven until melted.
  • Combine all dry ingredients, including remaining 1/2 cup of sugar.
  • Mix well.
  • Beat egg and add to milk.
  • Slowly combine with dry ingredients to make a batter.
  • Pour over melted margarine.
  • Do not stir.
  • Spoon pears on top of batter.
  • Do not stir.
  • Bake at 325° for 1 hour.
  • Serve hot or cold.
  • Cool Whip or ice cream topping is very good.
  • I haven't tried this recipe, but after two reviews, I'm editing the recipe to cut the sugar in half.

5 tablespoons cold unsalted butter, in pieces
3 to 4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees. Butter a nine-inch round baking dish.
  • Mix brown sugar with cornstarch in a large bowl. Fold in pears and raisins, the melted butter and nutmeg. Spoon mixture into baking dish.
  • Mix the flour, baking powder and salt. Cut in the cold butter until the mixture has a mealy texture. Lightly stir in the milk to form a firm but tender dough.
  • Roll out dough on a floured board and cut it into strips one-inch wide. Criss-cross the strips over the fruit. Sprinkle the top with granulated sugar.

1 tablespoon sugar
1/2 cup light brown sugar, packed
6 tablespoons unsalted butter, cut into 1/2 inch cubes
3/4 cup sliced unpeeled almonds
1/2 teaspoon ground cinnamon
3/4 cup sugar
2 1/2 tablespoons tapioca
6 medium ripe pears (about 3 pounds), sliced
1 cup golden raisins
Crema, for serving (recipe below) (optional)
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • In a large mixing bowl, cut together the topping ingredients with 2 knives until they are well combined and crumbly. Be sure the butter is evenly distributed in the mixture. If desired, freeze for up to 3 months, or use immediately.
  • Preheat the oven to 400 degrees. In another large mixing bowl, combine the sugar and the tapioca and toss until evenly mixed. Add the pears and toss until they are evenly coated with the mixture. Mix in the raisins. Turn the fruit mixture into a 10 x 2 inch deep round baking dish, preferably glass. Sprinkle the crumb mixture evenly over the top and bake the crisp for 15 minutes, then turn the oven down to 375 degrees. Bake for 15 to 20 minutes more, or until the topping is golden. Cool on a rack for 10 minutes, then serve warm accompanied by a dollop of Crema, if desired.
  • Whisk the cream and the buttermilk together in a bowl. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator for as long as a week.

5 to 6 cups frozen sliced peaches, any brand, 1 large sack
1 package complete biscuit mix (recommended: Jiffy brand)
1/2 cup water
1/2 cup granulated sugar, plus 2 tablespoons, divided
2 teaspoons ground cinnamon, divided
1/4 teaspoon ground nutmeg, eyeball it
1/2 teaspoon ground allspice
1/8 teaspoon black pepper, a couple of pinches
Pinch salt
2 (1-ounce) boxes or 1/3 cup golden raisins, a couple of handfuls
1/4 cup, (2-ounce) package, sliced almonds

Steps:

  • Preheat oven to 425 degrees F.
  • Place frozen peaches in an 8 by 8 glass baking dish, defrost in microwave for 3 minutes on high. While the peaches are defrosting, make the cobbler topping. In a bowl, combine the biscuit mix with a 1/2 cup of water, stir until thoroughly combined but do not overwork. In another bowl combine 1/2 cup of the granulated sugar, 1 teaspoon cinnamon, nutmeg, allspice, pepper, a pinch of salt and raisins. Remove peaches from the microwave and combine with the sugar mixture in baking dish. Top the seasoned peaches with biscuit mix, use your fingers to press out until even. Top the biscuit mix with almonds. Mix remaining cinnamon and sugar together and sprinkle over the biscuits. Bake until cobbler top is firm and lightly golden and peaches are bubbly and hot, about 20 to 25 minutes.
  • Serve warm as is or with ice cream and whipped cream if you have some on hand.
