Steps:

  • Stir cream cheese, Cheddar, pear, scallion white, salt, and pepper together in a medium bowl.
  • Coat a large piece of plastic wrap with cooking spray. Scoop the cheese mixture onto it. Using the plastic wrap to help you, form the cheese mixture into a ball, then completely wrap in plastic. Refrigerate for at least 1 hour and up to 2 days.
  • Just before serving, combine pecans and the reserved scallion greens in a shallow dish. Roll the cheese ball in the mixture, pressing to adhere.

1/8 teaspoon salt

3/4 cup confectioners' sugar
2 tablespoons milk

Steps:

  • In a large bowl, cream the butter and cream cheese until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 2 hours or until easy to handle. Combine brown sugar and cinnamon; set aside., Divide the dough into fourths. On a floured surface; roll out each portion into a 12-in. circle. Cut into 12 wedges. Place about 1/4 teaspoon cinnamon-sugar at the wide end of each wedge. Top with 1/2 teaspoon each pears and walnuts. , Roll up, beginning at wide end. Place pointed side down 2 in. apart on ungreased baking sheets; curve ends to form a crescent., Bake at 375° for 16-19 minutes or until lightly browned. Immediately remove to wire racks. Let seasonal pears take centre stage in this marvellous walnut and blue cheese tart. It makes an ideal starter, lunch or alternative cheese course

50g walnut halves
150g plain flour
80g cold unsalted butter, chopped
1 egg yolk
1 tbsp butter
1 tbsp olive oil, plus an extra 1-2 tsp
4 shallots, sliced into half-moons
small bunch of sage, finely chopped
200g chard, stalks finely chopped and leaves roughly chopped
2 pears, halved, cored and sliced
3 large eggs
grating of nutmeg
150g crème fraîche
150g gorgonzola dolce or vegetarian alternative, torn into bite-sized pieces
50g walnut halves

Steps:

  • To make the pastry, blitz the walnuts in a food processor until they resemble breadcrumbs. Add the flour and a large pinch of salt. Pulse briefly to combine, then add the butter and pulse until it resembles large crumbs. Add the egg yolk and pulse until the dough comes together (add 1 tbsp cold water if it seems dry). Squash the dough into a disc, then wrap in baking parchment and chill for at least 30 mins.
  • Heat the oven to 180C/160C fan/ gas 5. Heat the butter and 1 tbsp oil in a heavy-based frying pan or skillet over a medium heat, and cook the shallots, sage and chard stalks for 5-8 mins until soft and starting to caramelise. Add the chard leaves and continue to cook until wilted, then remove from the heat.
  • Put the chilled pastry between two sheets of baking parchment and roll out to the thickness of a £1 coin. Use it to line a 20cm tart tin, then chill for 30 mins until firm. Toss the pear slices in 1-2 tsp oil on a baking sheet.
  • Scrunch up a sheet of baking parchment and use it to line the pastry case, then fill with baking beans. Bake for 15 mins, alongside the pears. Remove both from the oven. Remove the parchment and beans from the pastry case, then bake for 8-10 mins more, until the bottom is golden and crisp.
  • Lightly beat the eggs in a bowl, then season with some nutmeg and whisk in the crème fraîche. Stir in the cheese. Pour half the mixture into the tart case, then layer in two-thirds of the chard mixture. Arrange the roasted pear slices and remaining chard mix on top, then pour over the remaining custard. Dot over the walnut halves, then bake for 28-30 mins, or until golden and cooked through. Leave to cool for 20 mins, then slice and serve.

1/2 cup crumbled blue cheese
1/4 cup toasted walnuts, chopped
1 tablespoon snipped fresh chives

Steps:

  • Peel and core pears.
  • Cut into 1/4 inch dice.
  • Combine in a bowl with other ingredients, tossing to mix well.
  • (Many times, I don't even bother with toasting the walnuts and it works out just fine).
  • Serve with crackers or toasted pita wedges for scooping.

1 English camembert or brie-type cheese in a box
drizzle of walnut oil
3 pears , cored and thinly sliced
300g plain flour
200g wholemeal flour , plus a little extra for dusting
1 tsp salt
2 tsp bicarbonate of soda
100g walnuts , roughly chopped
284ml carton buttermilk
50ml olive oil
150ml milk

Steps:

  • Heat oven to 220C/200C fan/gas 7. To make the bread, mix the flours, salt, bicarbonate and the walnuts in a mixing bowl. Then stir in the buttermilk and oil, followed by enough milk to make a very soft, sticky dough.
  • Dust a baking tray with wholemeal flour and shape the dough into a round, flat-ish loaf on it. Dust with a little more flour, slash the top a few times and bake for 30-35 mins until risen, crusty and cooked through - it should sound hollow when you tap the bottom of it.
  • Cool bread to just warm (or leave to cool completely if preparing ahead), then get the cheese ready. Unwrap the cheese and put back into the box. Tie string around the box in case the glue melts in the oven. Drizzle the cheese with walnut oil, season, then put in the oven for 10 mins. Serve with slices of the warm walnut bread and pears.

4 pears, halved and cored
extra virgin olive oil
1/4 bunch fresh thyme
salt & freshly ground black pepper
1/4 cup crumbled good-quality blue cheese
1/4 cup walnut pieces

Steps:

  • Preheat oven to 375 degrees F.
  • Arrange the pears, cut side up, on a baking sheet.
  • Drizzle with olive oil and sprinkle with salt and pepper.
  • Strip the leaves from the thyme branches and sprinkle over the pears.
  • Bake 20 minutes, then remove from oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half.
  • Return to oven and roast until they are tender and cheese is soft, about 10 minutes.
  • Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes; chop.
  • When the pears are cooked, transfer them to a serving plate and sprinkle with toasted walnuts.

4 sweet onions, thinly sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  • Melt the butter and olive oil in a large skillet over medium heat. Stir the onions into the butter, and cook until the onions have softened and caramelized to a deep, golden brown, 30 to 40 minutes. Stir frequently as the onions cook to keep them from burning. Once done, season with salt and pepper, and set aside to cool.

This recipe calls for lahvosh which can be hard to find; just substitute a good quality flour tortilla instead and ignore the instructions for preparing the dried lahvosh.

1 (15 inch) soft cracker bread (lahvosh)
6 cups fresh spinach leaves
1 medium pear
2 tablespoons butter
1/3 cup green onion, minced
1/3 cup walnuts, toasted and finely chopped

1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Run cold water and hold the cracker bread under it until thoroughly wet.
  • Place the bread between wet, clean kitchen towels and let stand about 45 minutes or until soft enough to fold without breaking.
