Categories     dessert

Time 5h10m

Yield 6 servings

Number Of Ingredients 6

1/2 pound granulated sugar
2 cups milk
1/2 lemon, zested
1/2 teaspoon vanilla extract
1 1/2 drops yellow food coloring
4 eggs

Steps:

  • In a large heavy saucepan, combine all but 1/2 cup of the sugar with 2 cups of water and bring to a boil over high heat. Reduce the heat to medium and simmer, without stirring, until thick and amber in color. When caramelized, remove from the heat and divide among 6 individual crème caramel cups or ramekins. Let caramel cool to room temperature.
  • Preheat the oven to 350 degrees F.
  • In a medium bowl, combine the remaining 1/2 cup sugar, milk, lemon zest, vanilla, food coloring, and eggs, and mix very well. Pour this mixture into the cups or ramekins; fill each until nearly full.
  • Place the creme caramel cups into a large baking dish. Make a water bath by adding water to the dish so that it comes about halfway up the sides of the cups. Bake for 45 minutes. Carefully remove from the water bath, let cool to room temperature, and then refrigerate until completely chilled before serving.

Yield Makes 10 servings

Number Of Ingredients 25

Crust:
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed, or one 14- to 16-ounce package all-butter puff pastry (1 to 2 sheets, depending on brand), thawed
Pears:
3 tablespoons unsalted butter
1/2 cup sugar
1 cinnamon stick
1 whole star anise
3 whole cloves
Generous pinch of coarse kosher salt
1/2 vanilla bean, split lengthwise
6 medium firm but ripe Anjou pears, peeled, halved lengthwise, cored
Filling:
1/4 cup (1/2 stick) unsalted butter
1/2 vanilla bean, split lengthwise in half
2 cinnamon sticks, broken in half
2 whole star anise
6 whole cloves
1/4 cup sugar
1 large egg
Generous pinch of coarse kosher salt
1 1/2 tablespoons all purpose flour
1 egg white, beaten to blend
Ingredient Info: All-butter puff pastry is available frozen at Whole Foods markets. One 14- to 16-ounce package contains two 11-inch rounds. Whole star anise is available in the spice section of some supermarkets.
Special Equipment
10-inch-diameter springform pan

Steps:

  • For crust:
  • Roll out pastry to 12-inch square and trim off corners, forming slightly rounded crust. (If using all-butter puff pastry, roll out to 12-inch round.) Transfer pastry to 10-inch-diameter springform pan, pressing pastry firmly onto bottom and 1 to 1 1/2 inches up sides of pan. Freeze crust until firm, 1 to 1 1/2 hours. DO AHEAD: Can be made 1 day ahead. Cover and keep frozen.
  • For pears:
  • Melt butter in heavy large skillet over low heat. Add sugar and next 4 ingredients. Scrape in seeds from vanilla bean; add bean. Increase heat to medium-high and cook, stirring until sugar melts and turns brown (color of peanut butter), about 3 minutes. Reduce heat to medium; add pears, rounded side down. Cook until pears are almost tender, turning and moving skillet around occasionally to ensure even cooking, 10 to 15 minutes, depending on ripeness of pears. Carefully turn pears over; continue to cook until pears are very tender, about 10 minutes longer. Remove skillet from heat; cool pears in skillet with spices (pears will release juice while cooling).
  • For filling:
  • Melt butter in small saucepan over low heat. Scrape in seeds from vanilla bean; add bean. Add cinnamon, star anise, and cloves. Increase heat to medium; cook until butter is golden (watch to avoid burning), 3 to 4 minutes. Remove vanilla bean and spices from butter; discard. Whisk sugar, egg, and coarse salt in medium bowl. Whisk in flour. Gradually whisk browned butter into egg mixture. DO AHEAD: Pears and filling can be made 6 hours ahead. Cover separately; let stand at room temperature. Whisk filling before using.
  • Position rack in center of oven; preheat to 400°F. Brush frozen crust with beaten egg white. Pour filling into crust; spread evenly over bottom of crust (filling will be very thin). Using slotted spatula, remove pears from skillet, allowing excess syrup to drain back into skillet; reserve syrup. Arrange pears, rounded side up, atop filling (about 9 around edge and 3 in center of pan).
  • Bake tart until crust is deep golden and filling is set and brown at edges, about 1 hour. Run small knife around sides of pan to loosen tart. Release pan sides. Transfer tart to platter. Let stand, uncovered, at room temperature to cool slightly until just warm.
  • Just before serving, boil syrup in skillet until reduced to generous 1/3 cup, 1 to 2 minutes. Discard spices. Drizzle syrup over pears. Serve tart slightly warm.

DIVINE CARAMEL PEAR CRISP

Divine Caramel Pear Crisp image

Provided by Mel

Categories     Desserts

Time 1h15m

Number Of Ingredients 17

1/2 cup salted butter
1 1/2 cups packed light brown sugar
1/4 teaspoon salt
1 cup heavy whipping cream
1 tablespoon vanilla
4 pounds about 8 medium ripe pears, peeled, cored and diced (see note)
3 tablespoons fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon cinnamon
1 cup packed light brown sugar
1 cup all-purpose flour
1 cup old-fashioned rolled oats
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
3/4 cup salted butter (cut into pieces)
Vanilla Ice Cream
Caramel Sauce

Steps:

  • For the caramel sauce, in a medium heavy-bottomed saucepan, combine the butter, sugar, salt and cream. Melt over low heat. Once all ingredients are melted and combined, increase the heat to medium and bring the mixture to a boil. Boil for 10 minutes. There's no need to stir but watch the heat - if it seems as though the mixture might be burning on the bottom (which can often happen if you are using a pan that isn't heavy-bottomed), reduce the heat. Remove from the heat and stir in the vanilla. Set aside to cool slightly (the caramel sauce can be made up to a week in advance - if using it in the recipe, warm slightly before adding to the pears).
  • Preheat the oven to 350 degrees F. Lightly grease a 8 1/2-inch by 12-inch pan with cooking spray (I know that's a random size that I happen to have - if you don't have that size, use something close like a 9X13-inch pan).
  • Toss the pears in a large bowl with the lemon juice, flour and cinnamon. Pour 1 cup of the caramel sauce over the pears and stir to combine well. Pour the mixture into the prepared pan.
  • For the topping, in a medium bowl, whisk together the brown sugar, flour, oats, cinnamon, and salt. Toss the pieces of butter in with the ingredients and use a pastry blender, two knives, your fingers, or anything else to cut the butter in until the mixture is crumbly. Spread the topping evenly over the pears.
  • Bake the crisp until the edges are bubbling and the top has deepened in color, 45-50 minutes. Remove from the oven and let cool for about 30 minutes. The crisp can be served warm or at room temperature.
  • Serve with vanilla ice cream and remaining caramel sauce.

CHOCOLATE PEAR CRISP

Chocolate Pear Crisp image

These individual pear crisps are from the BBC Good Food website, by Mary Cadogan. It's not a crumble type crisp, but a nice change if you've been eating oaty fruit crumbles all winter. As the topping has no butter it is a lighter option, and it also doesn't have any wheat flour, so is good for anyone avoiding that. When I made this, my 3 pears were past their best so ended up with only 3 instead of 4 portions. When cooking the pears, I omitted the sugar, used orange juice (ran out of lemons), whiskey and spiced it with some ginger. As it is practically fat-free I had no qualms about serving it with a dollop of cream...

Time 55m

Yield 4 desserts, 4 serving(s)

Number Of Ingredients 8

3 pears
1/2 lemon, juice of
1 tablespoon light muscovado sugar
4 teaspoons poire william pear liqueur (optional)
1 egg white
50 g icing sugar
1 tablespoon cocoa powder
25 g ground almonds

Steps:

  • If you're going to cook this immediately, preheat the oven to 160C/ gas 3 while you cook the pears on the hob. Otherwise you can leave the preheating until you're ready to cook the topping.(e.g. I made my pear filling ahead of time, so heated the oven while I made the topping).
  • Peel (if desired), core and chop pears into small chunks.
  • Place in a saucepan with lemon juice and sugar. Bring to the boil, then cover and cook for 10 minutes. Uncover and cook for a further 8-10 minutes to allow the liquids to thicken up.
  • Divide between 4 ramekins, and if using, top with the liqueur.
  • Sift the icing sugar and cocoa together, then stir in the ground almonds.
  • Whisk the egg white until stiff, then fold into the dry ingredients. (It also works the other way round -- so don't worry).
  • When the cocoa sugar almond mixture is combined with the egg white, it should be a stiff dropping consistency. Top the pear filled ramekins with it, it will spread and puff during cooking so it doesn't have to reach the edges or be enormously neat.
  • Bake in the oven at 160 C/gas 3 until the topping is firm to the touch - 20-25 minutes. Serve hot or cold.
