PEARL'S BEANS



Pearl's Beans image

This was an old family recipe, but hasn't been made in a long time, so I don't really remember the taste very well. I wrote the recipe just as I have it, but it could probably use some spicing up (Ex.- salt, pepper, onion, garlic). Feel free to improvise. Cook time is a guesstimate, as the recipe says "till hot".

1/4 teaspoon mustard
2 ounces catsup
6 ounces barbecue sauce
molasses, enough to sweeten (optional)

  • Brown meat.
  • Add other ingredients.
  • Heat in 350 degree oven until hot.

10 ounces white pearl onions, peeled
3/4 lb green beans (fresh, frozen or canned)
1/2 tablespoon summer savory
1 fluid ounce olive oil
crumbled cooked bacon (optional) or diced ham (optional)

Steps:

  • If you are using fresh green beans, boil them 5 to 8 minutes or until they are tender.
  • Sauté the pearl onions in the olive oil until they are translucent.
  • Add the green beans (with ends removed) and summer savory and cook over low heat until heated through.
  • Season to taste with salt and pepper, add some unsalted butter if desired and serve hot.
  • Make it even yummier and heartier by throwing in some crumbled bacon or small diced ham.
  • For a Vegan/Vegetarian version omit the optional bacon and ham or use Vegetarian bacon or Vegetarian ham.

1/2 pound (8 ounces) fresh green beans, trimmed and cut into 1/2- to 3/4-inch pieces
1 1/2 cups (8 ounces) frozen peas
1 tablespoon unsalted butter, cut into pieces
1 teaspoon grated lemon zest
Salt
Freshly ground black pepper

Steps:

  • Add green beans to a 3- to 4-quart pot of very well salted boiling water, and cook, uncovered, until barely tender, 4 to 5 minutes.
  • Stir in peas and cook, uncovered, until beans and peas are tender, 2 to 3 minutes.
  • Meanwhile, put butter and zest in a large bowl.
  • Drain vegetables in a sieve and add to bowl. Toss until well coated with butter and zest.
  • Season with salt and pepper.
