PECAN CRUSTED TUNA WITH LEMON BUTTER



Pecan Crusted Tuna with Lemon Butter image

Fish and crust:
2 lbs tuna filet
1tbsp butter
1/4 tsp salt
1/4 tsp white pepper
1 1/4 cup pecans, ground
1 tsp parsley
1/2 cup soft bread crumbs
2 tbsp olive oil
1tbsp lemon juice
Butter mix:
1/4 cup butter
2 tbsp lemon juice
1 tsp parsley

Steps:

  • Melt butter in a small saucepan until slightly browned. Add parsley and lemon juice.
  • Sprinkle fish with salt and pepper. In cast iron skillet, heat 1 tbsp butter until hot. Sear fish 3 minutes on each side--you can cook longer if you like your fish well done. Spoon 1/4 cup of pecan mixture over the top of the fish. Place in oven set on broil 5 1/2" from the heat. Leave oven door partially open. Broil until slightly browned. Transfer to a plate and drizzle with the lemon butter.
  • If you don't have cast iron skillets, use your regular nonstick pan to cook the fish. Use a baking sheet and either coat it with nonstick spray or pour the drippings from the pan on it and then place the fish on that to broil.

250 ml (1 cup) finely ground pecans
15 ml (1 tbsp.) ground ginger
1 ml (¼ tsp.) cayenne pepper
To taste, salt and pepper
4 tuna steaks, about 150 g (5 oz.) each
15 ml (1 tbsp.) olive oil
To taste, lemon wedges

Steps:

  • Lightly beat egg on a plate. On another plate, combine pecans, ginger and cayenne pepper. Salt and pepper to taste. Dip tuna steaks in egg, then in pecan mixture. Heat oil in a skillet over medium heat. Cook tuna for 4 to 5 minutes per side or until fish flakes easily with a fork. Drizzle with lemon juice to taste. Serve with garlic rapini and roasted potatoes.

4 (6 ounce) tuna steaks (room temperature)
1/2 teaspoon salt
1 teaspoon fresh ground pepper
2 tablespoons roasted sesame seeds
2 tablespoons cooking oil
1 teaspoon sesame oil
1 tablespoon green onion, finely chopped
1 clove garlic, minced
2/3 cup balsamic vinegar
1/4 cup soy sauce
1 tablespoon honey

Steps:

  • In a small sauce pan, heat sesame oil.
  • Stir in the green onion and garlic and cook, stirring, for about 1 minute.
  • Add remaining ingredients and heat on medium until reduced by half.
  • Sprinkle the tuna with the pepper, salt, and sesame seeds.
  • Rub into meat to create crust.
  • Heat cooking oil in a large skillet set over medium high.
  • Add the tuna and cook until almost the desired degree of doneness.
  • The tuna will continue to cook slightly after it is removed from the pan.
  • Two or 3 minutes on each side should result in a pink center.
  • Drizzle sauce over the tuna and serve immediately.
