Steps:
- Boil water and soak wood ears and golden needles separately for about 15 minutes.
- Break off hard pieces from wood ears and hard stems from golden needles, if any.
- Cut golden needles in halves and snap the large pieces of wood ears into smaller pieces.
- Wash and drain.
- Mix the corn starch with 1/2 cup cold water.
- Stir until smooth.
- Mix vinegar and pepper.
- Mix vegetable broth and water.
- Add salt and soy sauce.
- Bring to a boil and add wood ears and golden needles.
- Boil 1 minute.
- Add tofu.
- As soup boils, stir in the well-stirred corn starch mixture until it thickens.
- Serve in bowl with vinegar and pepper.
- Garnish with scallions.
- Serve hot.

Steps:
- Bring chicken broth to a simmer in a 2-quart saucepan. Add mushrooms, chicken, soy sauce, chile paste, and garlic. Simmer for 5 minutes. Add tofu, bamboo shoots, vinegar, and white pepper. Simmer for 5 minutes more.
- Combine water and cornstarch in a cup; stir until smooth. Add mixture to the soup and stir well. Let simmer until soup thickens, about 5 minutes more.
- Beat egg in a cup and slowly pour, in a fine stream, into the soup. Stir well and heat through for 30 seconds. Mix in green onions and sesame oil. Remove from heat; serve hot.

We've tried several recipes for this hot and sour soup and couldn't find one that resembled the one we liked at a restaurant. - In a Dutch oven, brown pork in oil until no longer pink; remove meat and keep warm. Add mushrooms; saute until tender. Set aside and keep warm. , Add the broth, soy sauce, chili garlic sauce and pepper to the pan. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Return the meat and mushrooms to the pan. Stir in the tofu, bamboo shoots, water chestnuts and vinegar. Simmer, uncovered, for 10 minutes., In a small bowl, combine cornstarch and water until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in sesame oil. Garnish servings with onions.

P.F. CHANG'S HOT AND SOUR SOUP
This recipe in no way should be credited to me. I found it off the internet years ago, and noticed this exact recipe wasn't on RecipeZaar yet... so here it is. =) This is the closest tasting recipe I've found to the Hot and Sour Soup that is served at P.F. Chang's. If you love that restaurant as much as I do, give this a shot. You won't be disappointed! (This approximately yields the "bowl" size from the restaurant.)

Steps:
- Cook chicken strips till done. Set aside.
- Bring stock to boil. Add soy sauce, white pepper, bamboo, mushrooms and chicken. Stir. Let cook for 3 minutes.
- While cooking, in separate bowl combine cornstarch and water to make slurry. Add slurry a little at a time and stir until thick (all slurry may not be necessary, so add as much as necessary for desired thickness - I used about 3/4 of slurry).
- Add eggs while stirring and cook for 30 seconds or until eggs are done.
- Turn off heat. Add vinegar and tofu, give it a quick stir. Spoon into bowls and enjoy!
