A healthy snack that tastes like pizza?! Sign me up! You'll love these fun pepper pizza poppers that are crunchy and delicious with the flavors of sweet peppers, melted cheese, turkey pepperoni, olives, fresh basil and oregano.

1 bag ONE SWEET® SEEDLESS Peppers
1 bag shredded mozzarella cheese
2 tsp. garlic powder
1 tbsp. dried oregano
¼ cup turkey pepperoni (sliced)
⅓ cup pitted Kalamata olives (halved)
3-4 fresh basil leaves (chopped)
Red pepper flakes

Steps:

  • Preheat the oven to 375 degrees F. Remove the stems and cut each pepper down the middle lengthwise.
  • Place on a baking sheet lined with parchment paper and sprinkle each pepper half with mozzarella cheese, garlic powder and oregano. Add about two pieces of turkey pepperoni to each pepper.
  • Bake for approximately 10-12 minutes or until the cheese has melted.
  • Remove from the oven, let cool and top with sliced Kalamata olives, extra red pepper flakes if desired, and fresh basil. Serve immediately and enjoy!

1 (8-oz.) package cream cheese, softened
3 ounces pepperoni, finely chopped (about 2/3 cup)
1/2 cup shredded mozzarella
2 tablespoons chopped fresh basil, divided
3/4 teaspoons kosher salt
12 multicolored baby bell peppers, halved lengthwise, seeds removed

Steps:

  • Preheat oven to 400°. Line a baking sheet with parchment paper.
  • In a medium bowl, stir together cream cheese, pepperoni, mozzarella, 1 tablespoon basil and salt. Fill each of the bell pepper halves with about 1 1/2 tablespoons of the cream cheese mixture.
  • Arrange peppers on prepared baking sheet and bake until cheese is beginning to bubble and brown, 18-20 minutes. Garnish with remaining basil. Let cool slightly before serving.

2 containers refrigerated Crescent rolls ((8 rolls per container))
1 (8-ounce) package cream cheese, (softened)
1 jar pizza sauce
1 bag shredded mozzarella cheese
1 package mini pepperonis
dried oregano, (about 1 teaspoon)

Steps:

  • Spray a mini muffin pan with cooking spray and preheat oven to 375 degrees.
  • Unroll crescent dough and separate into squares of 2 triangles stuck together. Take each square and press on the seam to seal it. Cut into 4 smaller squares. Between the 2 containers of crescent dough, you should get 32 pieces of dough (if I've done the math right). It's ok if they're a little misshapen.
  • Press dough squares down into mini muffin cups, shaping them to fit the bottom and up the sides.
  • Using 2 spoons, place a small amount of cream cheese (maybe 1/2 teaspoon, but totally up to personal preference) into bottom of each dough-filled muffin cup.
  • On top of cream cheese, spoon a little pizza sauce (maybe 1 teaspoon) into each cup.
  • Top pizza sauce with a little sprinkling of oregano and mozzarella cheese. Place 3 to 4 mini pepperonis on top of each popper.
  • Place in oven for 10 to 12 minutes, but check after 8 minutes because you definitely do not want to burn these guys.
  • Let cool in pan for a minute or two, just until cool enough to handle. If reusing the pan for another batch it is best to let the pan cool before placing dough into it.

  • Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.

4 to 4-1/2 cups all-purpose flour
1/3 cup sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon dried oregano
1/2 teaspoon salt
1 cup water
1 tablespoon shortening
1 large egg
3 cups shredded part-skim mozzarella cheese
1-1/3 cups minced pepperoni (about 5 ounces)
2 cups pizza sauce, warmed

Steps:

  • In a large bowl, combine 2 cups of flour, sugar, yeast, oregano and salt. In a saucepan, heat water and shortening to 120°-130°. Add to dry ingredients; beat until moistened. Add egg; beat on medium speed for 1 minute. Stir in cheese and pepperoni; mix well. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide into four pieces. Divide each piece into eight balls. 1 cup marinara sauce
½ cup shredded mozzarella cheese
1 egg, for egg wash

Steps:

  • Preheat oven to 400°F (200°C).
  • Cut the puff pastry into six rectangles and place on a nonstick baking tray.
  • On one rectangle, spread a tablespoon of marinara, avoiding the edges of the pastry. Top with pepperoni slices and cheese.
  • Place a rectangle of pastry on top and seal the edges with a fork. Repeat with remaining pastry rectangles.
  • Brush the pockets with egg wash.
  • Bake for 15-20 minutes or until the pastry is flaky and golden.

1 tablespoon dried oregano
1 teaspoon garlic salt
1/2 teaspoon crushed red pepper flakes
3 tablespoons olive or vegetable oil
3 cups popcorn
1/4 cup sliced pepperoni, cut into bite-size pieces
2 sundried tomatoes (not packed in oil), cut into bite-size pieces
Unsalted butter, melted, for drizzling
Nonstick cooking spray, for the baking sheet
One 6-ounce can tomato paste
2 tablespoons grated Parmesan

Steps:

  • Position an oven rack in the bottom of the oven, and preheat it to 200 degrees F.
  • Line a baking sheet with parchment and generously coat it with cooking spray. Spread the tomato paste into a thin layer on the parchment (an offset metal spatula works best). Bake until the paste deepens to brick red and is dull in color and not shiny in any spots, about 2 hours. (It will look and feel like fruit leather.) Let it cool completely. Tear the paste into small pieces and finely grind them in batches in a spice grinder.
  • Place all the ground tomato paste back into the spice grinder. Add the Parmesan, oregano, garlic salt and pepper flakes, and grind to a fine powder. Store in an airtight container for up to 5 days. The spice blend makes enough for about 6 batches of popcorn.
  • To make 1 batch of pepperoni pizza popcorn: Heat 1/2 tablespoon olive or vegetable oil in a large pot over medium heat. Add 1/2 cup kernels; when one pops, cover the pot, and cook, shaking the pot constantly, until the popping subsides to 1 pop every 20 seconds, about 5 minutes. Add the pepperoni, sundried tomatoes, some melted butter and 2 heaping tablespoons of the pizza spice and toss to coat.

1/2 cup finely chopped pepperoni, sauteed
1/4 cup grated parmesan cheese
1/2 teaspoon diamond crystal kosher salt

Steps:

  • Heat the oven to broil and arrange a rack in the middle. Line a baking sheet with aluminum foil and set aside.
  • Lay a jalapeño on your work surface so that it sits flat without rolling. Make two cuts forming a "T" by first slicing down the middle of the chile lengthwise from stem to tip, then making a second cut perpendicular to the first about 1/4 inch from the stem, slicing only halfway through the chile (be careful not to cut off the stem end completely). Carefully open the flaps to expose the interior of the chile, and, using a butter knife or small measuring spoon, scrape the inside to remove the seeds and ribs. Repeat with the remaining peppers; set aside.
  • Place the cream cheese, pepperoni, Parmesan, and salt in a medium bowl, season with freshly ground black pepper, and mix until smooth and evenly combined. Transfer the mixture to a quart-size resealable plastic bag, cut one bottom corner off to make a 3/4-inch-wide opening, and squeeze the mixture into the chiles until just filled (be careful not to overfill).
