SWEET POTATOES WITH SAUSAGE AND PEPPERS

Steps:
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.
- Heat oil in a large skillet over medium heat. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes. Remove sausage with slotted spoon and drain on paper towels.
- Pour off all but 1 tablespoon oil from the skillet. Heat oil over medium heat and add bell peppers, onion and garlic and cook until softened, about 7 minutes.
- Add to the skillet the potatoes, sausage, salsa and cumin. Stir and cook about 5 minutes to heat through and blend flavors. Season with salt and pepper.

PEPPERY SAUSAGES WITH SWEET POTATO MASH

- Heat oven to 220C/200C fan/gas 7. Put the potatoes in a pan of salted water and boil for about 20 mins until soft.
- Meanwhile, tip the sausages onto a small baking sheet and bake for 10 mins. While they are cooking, mix the pepper sauce with the lime juice, sugar, thyme, garlic and tomato purée, and stir with 1 tbsp water. When the sausages have had 10-15 mins, brush over the spicy mix and bake for 10 mins more.
- Drain the potatoes and mash with oil or butter, and nutmeg to taste, if you like. Serve with salad, or green beans or peas.

- Slice the sausages on the diagonal and cook in a grill pan over medium-high heat, until grill marks form, about 3 minutes on each side.
- Saute 1 quartered and sliced white onion in a medium pan in extra virgin olive oil until tender. Add a pinch of salt and pepper and 1/4 cup of sugar to the pan and coat the onions evenly. Add 2 tablespoons of butter to the pan and continually stir the onions until they are brown. Top sausages with onions and.serve with Sweet Potato Mash and Grilled Tomatoes.
- Salt Cut 2 medium sized sweet potatoes into small, 2-inch cubes and boil in salted water, in a large pot, until the cubes are fork tender, about 7 minutes. Once the sweet potatoes are fully cooked, drain the water from the pot and place into a medium sized bowl. Stir in 1/2 cup of milk and 2 tablespoons of butter. Add 1/4 teaspoon each of cumin, cinnamon, and ginger. For added heat, add 1 teaspoon of minced chipotle pepper. Mix together with a masher or wooden spoon until the ingredients are fully integrated, then set aside.
- Slice the sweet potato into 1/8-inch triangles. Fry the triangles in vegetable oil in a medium sized saute pan until crisp. Use the triangles as a garnish in the sweet potato mash.
- Place the tomatoes in a large pot of boiling water for approximately 2 minutes. Remove the tomatoes and immediately shock them in ice water. Once the tomatoes are cool, peel away the tomato skins. Cut the tomatoes in 1/2, and season, to taste, with salt and freshly ground black pepper. Place the tomato halves in a grill pan, and cook until each side is seared, roughly 3 minutes per side. Remove the tomato halves from the pan and set aside.

- Preheat oven to 190C/170C fan/Gas 5. Put the sausages on a nonstick baking tray. Cook for 20-22 minutes.
- Put the onion in a pan with 2 sprays Frylight. Cook on low, covered, for 12 mins, stirring, until soft and slightly golden.
- Put half the onion in a bowl with 4tbsp water and blitz with a stick blender. Return to the rest of the onion.
- Crumble in the stock cube, add the puree, vinegar, and 100ml water. Bring to the boil, stirring, and simmer for 5 minute.
- While the onion is cooking, add the potato to a pan of boiling water, cover and simmer for 20-25 mins, until tender.
- Add the broccoli to another pan of boiling water, bring to the boil, cover and simmer for 2 minutes Add the beans and simmer for 2 minutes Drain.
- Mash the potato with the fromage frais and season with black pepper. Serve with the sausages and veg.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.
